- Microwave potatoes as directed on package. (Do not mash.)
- Cook milk, mustard and garlic in saucepan 2 min. or until heated through, stirring frequently.
- Place potatoes in large bowl. Add milk mixture; mash until potatoes are desired consistency. Stir in pepper.

HERB ROASTED POUPON POTATOES

Steps:
- Preheat oven to 400°F. In a small bowl whisk together the mustard, oil, garlic and rosemary. Set aside. Wash, quarter then quarter again each potato.
- In a large oven roof skillet (like cast iron) over medium-high heat add butter and cook potatoes for 8-10 minutes until golden brown on edges. Season with salt and pepper then transfer to oven to roast for 30 minutes.
- Remove pan from oven and add mustard sauce to roasted potatoes. Stir to coat evenly and cook on medium-high heat for 5 minutes on stovetop. Serve with chopped parsley or more rosemary if desired.

MUSTARD-ROASTED POTATOES
Steps:
- Preheat the oven to 425 degrees.
- Cut the potatoes in halves or quarters, depending on their size, and place them on a sheet pan. Remove the ends of the onions, peel them, and cut them in half. Slice them crosswise in 1/4-inch-thick slices to make half-rounds. Toss the onions and potatoes together on the sheet pan. Add the olive oil, mustard, 2 teaspoons salt, and the pepper and toss them together. Bake for 50 minutes to 1 hour, until the potatoes are lightly browned on the outside and tender on the inside. Toss the potatoes from time to time with a metal spatula so they brown evenly.
- Serve hot sprinkled with chopped parsley and a little extra salt.
CREAMY AU GRATIN POTATOES
This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

- Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
- Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
- In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
- Bake 1 1/2 hours in the preheated oven.

HERB ROASTED POTATOES
Tasty potato dish that freezes exceptionally well. I do 10 lbs at a time and take out just what we need. Never thaw them before heating, tho, as they get soggy. Put still-frozen potatoes in a 350 0ven for 30 min +/- and they'll be almost as good as freshly done. Good for Sunday brunch. My adaptation of the recipe the Grey Poupon people had in their ad a few years ago.

HELEN'S SLOW COOKER POTATOES
Similar to scalloped potatoes, but...well, different. I searched your site and didn't find anything with my ingredients, although there were slow cooker dishes with potatoes in it. Hope you like it. I got this recipe from an elderly neighbor when my husband and I lived in Baltimore, MD. It's entirely her creation. I've taken this dish to family affairs, church potlucks, and picnics. I always have an empty Crock Pot® to bring home.
