GERMAN DUMPLINGS (SPAETZLE OR KNIFFLES) FOR SOUP OR SAUTE



German Dumplings (Spaetzle or Kniffles) for Soup or Saute image

When our church decided to host a "German Reformation Night" dinner, I went hunting for authentic German recipes. Here is one that fits the bill. There are two ways to make the dumplings (explained below). Serving ideas suggested below too. Gushundheit--!

2 eggs
1 1/2 teaspoons water
1/8 teaspoon salt
3/4 cup flour

Steps:

  • Mix these together until sticky.
  • Drop into bubbling soup or stew, broth or water. (see below for ideas).
  • Dumplings will rise to the surface as they cook; remove from liquid with a slotted spoon (if sautéing in another pan); set aside in a bowl (keep warm).
  • MAKE THE DUMPLINGS #1: This method results in very small, stringy-ish dumplings and is great for soups or stews. Spoon several tablespoons of batter into a colander, then with the back of the spoon--press the batter through the holes into the bubbling liquid.
  • METHOD #2: This method forms larger dumpling pieces (dime & quarter size) and is great for soups or stews, too -- but especially good if you want to saute the dumplings afterwards (more on that in a minute). Using a teaspoon and butter knife, scoop up a spoonful of batter, then use the knife to cut off little dibs and dabs, using the knife to also push the dibs into the hot liquid. If the knife or spoon gets messy, just dip into the hot liquid.
  • SERVING IDEAS: We love these in chicken-dumpling soup (use your regular chicken soup recipe -- skip the egg noodles and make these dumplings instead). OR scoop out the larger dumplings (Method #2), and saute in butter or olive oil along with kielbasa or other sausage and LOTS of onion ring slices. OR saute some fresh veggies, then add the dumplings -- heaven!
  • VARIATIONS: Add several pinches of your favorite herbs along with the flour to enhance the soup, stew or saute dish.
  • Chef's Note: Altho' this is kind of putzy, it is well worth the effort and SO different from regular pasta-noodles.

German Spaetzle are tender, eggy dumplings that make a great addition to a hearty meat main dish.Yield: 4 c of spaetzle

3 c unbleached all purpose flour
½ tsp salt
¼ tsp nutmeg
3 eggs
1/2 - 3/4 c water
3 quarts water
2 tsp salt
1 Tbsp olive oil ((optional))

Steps:

  • In a medium bowl, mix together flour, salt, and nutmeg.
  • Make a well in the middle of the flour mixture and add eggs. Scramble the eggs slightly with a fork, mixing them with the flour mixture. Add the water, a little at a time, mixing until a soft dough forms. (Your dough should be somewhere between a drop biscuit dough and a stiff muffin batter. It should be spoon-able, but not pour-able.)
  • Cover the dough loosely with a tea towel and set it aside to rest for 15 minutes.
  • While dough is resting, bring 3 quarts of water to a boil with 2 tsp salt. (You can add 1 Tbsp of oil to your water if you would like, to keep the cooked Spaetzle from sticking together. If you will be sautéing your Spaetzle after boiling, this is not necessary.)
  • Scoop your rested batter into your Spaetzle pressing tool. (Any metal kitchen gadget with holes roughly the diameter of a pencil will work well. Don't have anything? Grab a cutting board and a spatula and check out this recipe for making Spaetzle using the board cutting method.)
  • Press the Spaetzle dough through the press into the boiling water. Once the Spaetzle bobs to the top of the water, it is done. Remove it using a slotted spoon. (But, not the one you're using to press the Spaetzle dough!)
  • Place the boiled Spaetzle into a bowl and continue with the rest of the dough.
  • Serve immediately.

4 eggs, lightly beaten
1/3 cup 2% milk
2 teaspoons salt
8 cups water
1 tablespoon butter
Minced fresh parsley, optional

Steps:

  • In a large bowl, stir the flour, eggs, milk and salt until smooth (dough will be sticky). In a large saucepan over high heat, bring water to a boil. Pour dough into a colander or spaetzle maker coated with cooking spray; place over boiling water. , With a wooden spoon, press dough until small pieces drop into boiling water. Cook for 2 minutes or until dumplings are tender and float. Remove with a slotted spoon; toss with butter. If desired, sprinkle with parsley.

Quick and easy German spaetzle make it a snap to have a hearty meal on the table in record time. Add these tender little dumplings to your menu plans.

For the Spaetzle:
2 cups all-purpose flour
4 large eggs
1/2 to 2/3 cup milk
1 teaspoon fine salt, or to taste (plus more for the cooking water)
1 to 2 teaspoons butter, or more, for serving
1/4 teaspoon freshly ground black pepper, or to taste
2 tablespoons fresh chopped parsley, or other fresh herbs
For Sautéed Spaetzle (optional):
4 tablespoons unsalted butter

Steps:

  • Gather the ingredients.
  • Place a large pot of salted water over high heat and bring to a boil. Reduce the heat to maintain a gentle boil.
  • Meanwhile, prepare the spaetzle batter. In a medium bowl, combine the flour and salt; stir to blend.
  • In a small bowl, whisk 1/2 cup of milk with the eggs.
  • Add the milk and eggs to the flour mixture and beat with a wooden spoon or whisk until the batter is smooth and elastic. It will have a consistency similar to pancake batter. When you lift the spoon, it shouldn't flow; it should drip from it slowly. If too thick, add some milk, and if too thin, add more flour. Let the batter rest for 10 to 15 minutes.
  • Place your spaetzle maker or another slotted utensil over the simmering water; add some of the spaetzle batter, and press it through the holes and into the gently boiling water. The spaetzle cook quickly, so it's best to cook them in two or more batches depending on the method you use.
  • The spaetzle will take from 1 to 3 minutes to cook, depending on their size. The dumplings will float to the top when done.
  • Use a slotted spoon to remove the spaetzle to a bowl and toss with a teaspoon or two of butter. Repeat with the remaining batter.
  • At this point, you may sauté the cooked spaetzle (see below) or refrigerate until it's time to sauté and serve. If you're skipping the sauté step and are serving them immediately, taste and add more salt and butter, as needed, along with the freshly ground black pepper and herbs. Toss and serve hot. Sauté the Spaetzle
  • Melt 4 tablespoons of butter in a large skillet or sauté pan over medium heat until lightly browned.
  • Add the spaetzle to the pan and increase the heat to medium-high. Sauté the spaetzle, stirring frequently, for about 3 to 7 minutes, or browned as desired. Taste the sauteéd spaetzle and add salt, as needed, along with freshly ground black pepper and fresh herbs. Toss and serve hot.

Serve these German noodles in place of potatoes with roasts or ragouts. The simplest way to shape them is by pushing the batter through a metal spaetzle press (it resembles a potato ricer and can be bought at specialty kitchen shops) or through a fine colander.

1 cup sifted all-purpose flour
2 tablespoons sifted all-purpose flour
1/8 teaspoon freshly grated nutmeg
1/2 teaspoon salt
1 large egg
6 tablespoons milk
3 -4 gallons boiled salt water (for cooking spaetzle)
1/4 cup melted unsalted butter

Steps:

  • TO MIX IN A FOOD PROCESSOR: Place 1 cup plus 2 tablespoons flour, nutmeg and salt in a work bowl fitted with the metal chopping blade and whirl briskly to mix. Add egg and milk and beat hard (about 3 to 4 one-minute churnings of the motor) until batter is elastic and shows bubbles on the surface.
  • TO HAND MIX: Mix dry ingredients in a bowl; combine egg and milk and add all at once; beat hard until batter is bubbly and elastic.
  • Push the batter through a spaetzle press (or colander) into kettle of rapidly boiling salted water. Cook the spaetzle uncovered for 8 minutes, stirring occasionally. With a slotted spoon, lift the spaetzle to a large bowl of ice water and let stand until nearly ready to serve-but no longer than an hour or two.
  • Drain the spaetzle well in a colander, then warm 4 to 5 minutes in the melted butter in a large sauté pan over moderately low heat, stirring now and then. Serve at once. Serves 4.

16 ounces frozen meatballs (32 balls)
1 (14 ounce) can beef broth
1 (4 ounce) can mushroom stems and pieces, drained
1/2 cup chopped onion
8 ounces sour cream
2 tablespoons flour
1/2-1 teaspoon caraway seed
chopped parsley (to garnish)

Steps:

  • Cook spaetzle according to package directions. Drain.
  • Meanwhile, in a saucepan combine the meatballs, broth, mushroom pieces, and chopped onion. Bring to a boil, reduce heat and simmer, covered, 15 to 20 minutes.
  • In a small bowl, combine, stirring well, the sour cream, flour, and caraway seeds. Stir into meatballs mixture. Cook and stir until thickened and bubbly. Cook one minute longer.
  • Spoon meatballs over the spaetzle and garnish with chopped parsley.

A plateful of these lovely golden nuggets can be a meal in itself, with salad and wine. Otherwise, serve them with chicken, game, or meat. The purchase of a spaetzle mill will simply the procedure of make them, although you can certainly make do with a large-hole colander, or even a wooden board and a sharp knife

3 cups all-purpose flour
4 eggs
1 teaspoon salt
3 grindings black pepper
1 cup warm water
4 quarts salt water, approximately
1/4 cup butter

Steps:

  • In a large bowl, combine the flour with the eggs, salt, pepper, and warm water.
  • Beat hard with a wooden spoon to form a thick, smooth batter.
  • Continue beating for 5 minutes.
  • This should be done rather energetically, by scraping the dough toward you with a regular rhythm, so as to incorporate as much air as possible.
  • Let the dough rest, covered, for 15 minutes.
  • Bring the salted water to a boil.
  • If you are using a spaetzle mill, simply push the dough through it into the boiling salted water.
  • If you do not have a mill, balance a colander (the largest you own) on the rim of the pot in which the water is boiling.
  • Make sure that the water is at least 8 inches below the colander or the dough will simply congeal from the steam.
  • Use a large wooden spoon to press the dough through the holes in the colander into the water.
  • A third alternative is to add a little more flour to the dough (about 1/2 cup) to stiffen it.
  • Remove the dough to a floured board and with a sharp knife slice it into strips about 1/4 inch wide and 1/2 inch long.
  • Boil the spaetzle for 4 minutes.
  • Drain in a large colander, and rinse briefly under cold running water.
  • Drain.
  • *Melt the butter in an ovenproof skillet.
  • Saute the spaetzle for 3 to 4 minutes, then place the skillet in a 350°F.
  • oven and bake for 10 minutes.
  • Serves 6 to 8.
  • NOTES AND VARIATIONS:*You can make the spaetzle ahead up to this point.
  • Spread them out on a kitchen towel and cover them with a damp towel.
