1 cup cold milk
45 vanilla wafers
2 bananas, sliced
1/2 cup thawed COOL WHIP Whipped Topping

Steps:

  • Beat pudding mix and milk with whisk 2 min. (Pudding will be thick.)
  • Spoon into resealable plastic bag; press excess air from bag, then seal bag. Cut small piece from one bottom corner of bag; use to pipe pudding onto wafers.
  • Top with bananas and COOL WHIP.

1/2 cup old fashioned oats
cinnamon, to taste
1 -2 tablespoon chocolate chips

Steps:

  • Preheat oven to 350°F Line a baking sheet with foil (or a silpat!).
  • Mash banana in a bowl. Add cinnamon and oats, and stir until combined. Stir in chocolate chips.
  • Form small balls and place on baking sheet. Bake for 10-12 minutes, until golden brown.

2 cups finely crushed vanilla wafer crumbs
6 tablespoons melted unsalted butter, cooled
2 tablespoons sugar, plus 1/2 cup
1 (3 1/2 ounce) package instant banana pudding mix
1 1/2 cups whole milk
3 tablespoons Bourbon
2 (8 ounce) blocks cream cheese
1/2 cup sugar
2 cups Cool Whip, plus 2 cups for topping
1 cup whole vanilla wafer

Steps:

  • Spray two large silicone muffin tins with nonstick spray. In a large bowl, combine the vanilla wafer crumbs with the melted butter and 2 tablespoons sugar until evenly incorporated. Divide the mixture evenly into two large silicone muffin trays. Press down evenly to form a smooth even crust. Place the pans in the freezer.
  • In a medium bowl, whisk together the pudding mix, milk and bourbon until well combined. Place in the fridge and let chill until firm.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and sugar until light and fluffy, about 2 minutes. Add the chilled pudding and mix until just combined. Fold in 2 cups Cool Whip, being careful not to over-mix.
  • Divide evenly into the muffin pans over the crust and spread to make smooth. Place in the refrigerator and chill for at least 4 hours or overnight. Place in freezer for an hour before serving.
  • Remove the chilled cheesecakes from the pans and place on a plate or platter. Place 2 cups cool whip in a piping bag fitted with a medium star tip. Dollop each cheesecake with a bit of Cool Whip and spread out into an even layer. Place a whole vanilla wafer in the center of each cheesecake then pipe a decorative border around the edge of each cheesecake.

4 bananas, sliced into 1-inch rounds
8 (1 ounce) squares semisweet chocolate
1 tablespoon shortening
⅓ cup toffee baking bits

Steps:

  • Cover a baking sheet with waxed paper.
  • Spoon a thin layer of peanut butter on top of each banana slice. Insert a toothpick through the peanut butter layer into the banana. Place banana bites onto the prepared baking sheet; freeze for 30 minutes to overnight.
  • Melt chocolate and shortening in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Cover another baking sheet with waxed paper.
  • Remove 2 to 4 banana bites from the freezer at a time; coat each bite with chocolate mixture. Place coated banana bites on the second baking sheet; sprinkle each with toffee bits. Repeat until all the bites are coated. Return banana bites to freezer until set, at least 1 hour. Allow bites to sit in room temperature for about 15 minutes before serving.

¼ cup white sugar
6 tablespoons unsalted butter, melted
1 pinch salt
½ (3.4 ounce) package instant vanilla pudding mix
1 cup cold milk
¼ teaspoon vanilla extract
1 sliced fresh banana

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Set out 2 mini muffin pans that each make 12 tiny muffins.
  • Combine vanilla wafer crumbs, sugar, melted butter, and salt in a bowl. Stir with a fork until well blended.
  • Spoon 1 tablespoon crumb mixture into each mini muffin cup. Press mixture firmly onto the bottom and up the sides of each cup.
  • Bake in the preheated oven until crusts have set, about 10 minutes. Cool muffin pans on a wire rack until completely cool, about 30 minutes.

1/4 cup packed brown sugar
1-1/2 teaspoons ground cinnamon
BEIGNETS:
2 cups cake flour
3/4 cup sugar
2-1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1 teaspoon salt
1 large egg, room temperature
1 cup mashed ripe bananas (about 2 medium)
1/2 cup 2% milk
2 tablespoons canola oil
Oil for deep-fat frying

Steps:

  • In a small bowl, mix sugars and cinnamon until blended. In a large bowl, whisk the first 5 beignet ingredients. In another bowl, whisk egg, bananas, milk and 2 tablespoons oil until blended. Add to flour mixture; stir just until moistened., In an electric skillet or deep fryer, heat oil to 375°. Drop tablespoonfuls of batter, a few at a time, into hot oil. Fry about 45-60 seconds on each side or until golden brown. Drain on paper towels. Roll warm beignets in sugar mixture.

100g buckwheat flour, plus extra for dusting
100g rolled oats
70g salt and xylitol-free smooth peanut butter
1 small banana, mashed
3 tbsp ground flaxseed
3 tbsp coconut oil, melted

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a couple of baking trays with baking parchment. Stir together all of the ingredients in a mixing bowl until well combined. Add 4 tbsp water and stir until you have a dough.
  • Turn the dough out onto a lightly floured surface and roll out until about 5mm thick. Cut into shapes using a 2cm cookie cutter, then place the biscuits on the prepared trays. Roll out the scraps and cut into shapes until you've used up all the dough.
  • Bake for 18-20 mins, then leave to cool on the baking tray. When completely cold, store in an airtight container. Will keep for up to one week.
