- Preheat oven to 350 degrees F (175 degrees C). Grease a large baking dish with the butter.
- Mix brown sugar, vanilla sugar, cinnamon, and nutmeg in a small bowl. Layer about 1/3 of the apples in prepared baking dish; sprinkle with 1/3 of the sugar mixture. Repeat layers twice more.
- Bake in preheated oven for 30 minutes. Pour water over apples and continue baking until tender, about 15 minutes more.

HOT BAKED CINNAMON APPLES
These cinnamon apples taste like a cobbler or pie without the crust. I was looking for a recipe for Cinnamon apples and all I could find were recipes for baking the whole apple - not what I wanted. After much searching I finally came across this recipe - I unfortunately cannot remember the site. It can easily be reduced to 2 or 3 apples, just watch it as it cooks. We serve this over ice cream and it is delicious. It can also be used on pancakes, waffles, or all by itself.

- Preheat oven to 375°F.
- Place cut and peeled apples in a mixing bowl and gently mix all the ingredients together.
- Put apples in a non-stick pan; cover and place in the oven.
- Bake for 45 minutes, stirring at least once every 15 minutes.
- Once they are soft, cook for another few minutes to thicken the cinnamon sauce.
- I like to put everything into my baking dish and then mix it since there is less to clean up.

BAKED CINNAMON APPLES
A PRETTY DISH to have with any meal or for guests. Cinnamon, brown sugar and butter enhance these apples and make a good autumn harvest side dish. To give color use craisins instead of raisins. Kids enjoy eating apples this way.

- Remove core and seed from each apple. Cut top peeling off each apple. Poke a knife in the side of each apple several times. As the apples bake this keeps the apples from breaking apart and gives an air vent.
- Arrange apples in a baking dish and stuff each core with raisins.
- Mix brown sugar and cinnamon and spoon over raisins. Dot each with a teaspoon of butter.
- Cover with a foil "tent" and bake in a 375 degree oven for 35 to 40 minutes.
- Note: Before baking a teaspoon of maple syrup (breakfast type) could be added to each core and let ooze down.

HASSELBACK CINNAMON SUGAR BAKED APPLES
I grew up in the Pacific Northwest where it seemed like just about everyone had apple trees in their backyard. We had so many apples that we had to find different ways to use them up. This dish was always our go-to since it's an easy way to transform an apple into something fun and particularly tasty with a scoop of ice cream on the side. The fan-like slicing technique known as Hasselback famously creates lots of surface area perfect for trapping sweet cinnamon sugar that caramelizes deliciously during baking. You can easily double this recipe to serve 4; just use a medium baking dish and adjust the cooking time as needed.

- Place a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking dish with parchment paper.
- Place an apple half rounded-side up on a cutting board. Starting at the outermost edge, slice down most of the way (but not all the way) through each half at 1/8-inch intervals, creating fan-like slices all the way across the apple. You can place wooden chopsticks on each side of the apple to act as guardrails to make sure your knife doesn't cut all the way through.
- Arrange the sliced apple halves flat side-down in the prepared baking dish. Use a pastry brush to baste the bottoms, tops and between the slices of the apples with the melted butter. In a small bowl, combine the sugar and cinnamon and sprinkle all over the apples and into the slits. Bake on the center rack until the apples are tender and lightly browned, 20 to 25 minutes. - Spread almonds on baking tray, toast for 10 minutes till golden.
- Scatter the extra 1 tblsp of sugar over a baking tray and set aside.
