1 quart cherry tomatoes, halved
1/4 cup canola oil
3 tablespoons white vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 cup minced fresh parsley
1 to 2 teaspoons minced fresh basil
1 to 2 teaspoons minced fresh oregano

Steps:

  • Place tomatoes in a shallow bowl. In a small bowl, whisk oil, vinegar, salt and sugar until blended; stir in herbs. Pour over tomatoes; gently toss to coat. Refrigerate, covered, overnight.

40 cherry tomatoes, halved
1 cup pitted and sliced green olives
1 (6 ounce) can black olives, drained and sliced
2 green onions, minced
3 ounces pine nuts
½ cup olive oil
2 tablespoons red wine vinegar
1 tablespoon white sugar
1 teaspoon dried oregano
salt and pepper to taste

Steps:

  • In a big bowl, combine cherry tomatoes, green olives, back olives, and spring onion.
  • In a dry skillet, toast pine nuts over medium heat until golden brown, turning frequently. Stir into tomato mixture.
  • In a small bowl, mix together olive oil, red wine vinegar, sugar, and oregano. Season to taste with salt and pepper. Pour over salad, and gently stir to coat. Chill for 1 hour.

HOLIDAY MINCEMEAT CAKE

I made this cake one year for Christmas when I was short of time and wasn't able to make a pie. It was a big hit. It is a very moist cake best served with just a dusting of icing sugar for garnish.

3 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3/4 cup butter or 3/4 cup margarine, softened
4 teaspoons grated orange rind
1 1/2 teaspoons vanilla
1 cup granulated sugar
3 eggs
1 (750 ml) jar mincemeat
3/4 cup milk
1 cup chopped nuts
icing sugar, for dusting

Steps:

  • Stir the flour, baking powder, baking soda and salt together; set aside.
  • Cream the butter, orange rind and vanilla in a large bowl with an electric mixer until light.
  • Beat in the sugar.
  • Add the eggs, one at a time, beating well after each addition.
  • Blend in the mincemeat.
  • Add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients.
  • Stir in the nuts.
  • Turn the batter into either a greased 12-cup Bundt or tube pan or a greased 9" x 13" cake pan.
  • Preheat the oven to 350 degrees F.
  • If using a Bundt pan, bake for 55 to 60 minutes or until done.
  • If using a cake pan, bake for 45 to 50 minutes.
  • In either case, cool in the pan for 10 minutes.
  • Remove from the pan and cool completely.
  • Dust with icing sugar before serving.

2 1/2 pounds firm-ripe Bartlett or Anjou pears (about 5)
2 tablespoons fresh lemon juice
2/3 cup sugar
1 cup water
1/2 cup dried sour cherries (about 3 ounces)
1/3 cup golden raisins
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon salt
3/4 cup walnuts, toasted lightly and chopped fine
2 tablespoons brandy

Steps:

  • Peel, quarter, and core pears. Chop pears coarse and in a bowl toss with lemon juice.
  • In a dry 3 1/2- to 4-quart heavy saucepan cook 1/3 cup sugar over moderate heat, stirring with a fork, until melted and cook, without stirring, swirling pan, until a golden caramel. Remove pan from heat and carefully add water down side of pan (caramel will steam and harden). Return pan to heat and simmer mixture, stirring, until caramel is dissolved. Add pears, remaining 1/3 cup sugar, cherries, raisins, spices, and salt and simmer, stirring occasionally at beginning of cooking and frequently toward end to prevent sticking, until thickened, about 50 minutes.
  • Stir in walnuts and brandy and cook, stirring, 1 minute. Cool mincemeat. Mincemeat may be used immediately but will improve in flavor if kept, covered and chilled, at least 1 day and up to 1 week.

1 ¼ pounds round steak, cut into small pieces
1 cup apple cider
4 Granny Smith apples - peeled, cored and finely diced
1 ⅓ cups white sugar
2 ½ cups dried currants
2 ½ cups raisins
½ pound chopped candied mixed fruit peel
½ cup butter
1 (16 ounce) jar sour cherry preserves
1 teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
½ teaspoon salt
1 (16 ounce) can pitted sour cherries, drained with liquid reserved
1 recipe pastry for a 9 inch double crust pie
2 tablespoons heavy cream

Steps:

  • In a Dutch oven, combine beef and apple cider. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 20 minutes, or until meat is tender. Remove meat and coarsely chop, then return it to the pot.
  • Stir in chopped apples, sugar, currants, raisins, citrus peel, butter and cherry preserves. Add ginger, cloves, nutmeg, cinnamon and salt. Let simmer, uncovered, over low heat until mixture is very thick, about 90 minutes. Stir in cherries and remove from heat.
  • Refrigerate tightly covered for at least a week before using.
  • Preheat oven to 350 degrees F (175 degrees C). Put filling in unbaked pie shell and place pastry on top. Crimp edges and poke several holes in top pastry. Brush top with cream and sprinkle with sugar.
  • Bake in preheated oven for 40 minutes, or until golden brown.

an egg wash made by beating 1 large egg yolk with 1 teaspoon water

Steps:

  • On a lightly floured surface with a floured rolling pin roll out half of dough 1/8 inch thick (about a 12-inch round). Fit dough into a 9-inch (1-quart capacity) pie plate and trim edge, leaving a 3/4-inch overhang. Chill shell 30 minutes.
  • On lightly floured surface roll out remaining dough 1/8 inch thick (about a 10-inch round) and with a sharp large knife or pastry wheel cut into 1/2-inch-wide strips. Put a 9-inch cardboard round (see above) on a baking sheet and arrange 4 pastry strips 3/4 inch apart in middle of round. Working with 1 pastry strip at a time, weave remaining strips over and under pastry strips on round, beginning in middle and working out to sides, and letting excess hang over round. Freeze lattice top, covered loosely, on round on baking sheet until firm, about 30 minutes.
  • Preheat oven to 425° F.
  • Spoon mincemeat into shell, smoothing top. Lift lattice top together with round off baking sheet and slide pastry carefully onto pie. (If pastry sticks to baking sheet or round, pry loose carefully with a small knife.) Let lattice top soften until pliable and trim flush with rim of pie plate. Roll shell overhang up over edge of lattice top, crimping edge decoratively. Brush lattice top with egg wash and bake pie in middle of oven until pastry is golden and filling just begins to bubble around edge, about 25 minutes. Transfer pie to a rack and cool. Serve pie warm or at room temperature.

This recipe came from my high school cooking class. Over the years I have tweaked it and retweaked it so many times that I have changed it to a mincemeat cake with either pecans or walnuts. It tastes similar to fruitcake, but without the candied fruit. When the kids ask me to make a fruitcake, this is the one they are referring to. At different times I have added coconut, candied fruitcake fruit, and chopped dried fruit. It has a bit of a fruitcake flavor. If you add extra ingredients and it causes the batter to be too moist, more flour can be added. Up to 1/2 cup flour can be added without changing other ingredients. If you add more flour than that, add 1/2 teaspoon of baking powder.

We actually add small chunks of the cheese after the mix has cooled. So you have a clear gelatin with little white chunks in it. So good!

1 1/4 ounces unflavored gelatin
1/4 cup cold water
1 (6 ounce) box cherry gelatin
3 1/2 cups boiling water

1 (8 ounce) can crushed pineapple, drained
1 red apple, unpeeled, cored, finely chopped
1 cup pecans, chopped

Steps:

  • Lightly oil 8-cup mold or pan of choice.
  • Soften unflavored gelatine in cold water, then set aside.
  • Dissolve cherry flavored gelatin in boiling water.
  • Add unflavored gelatine mixture & stir until all is dissolved.
  • Chill until the gelatin is of the consistency of unbeaten egg white.
  • Stir in mincemeat, pineapple, apple & nuts.
  • Pour into prepared mold or pan, then chill until firm.
