1 cup apricot preserves
1 cup Catalina salad dressing ((or Russian dressing))
2 tablespoons Dijon mustard
2 ounces dried onion soup mix

Steps:

  • Cut chicken breasts in half or into serving-sized portions.
  • In a medium-sized bowl, combine apricot preserves, Catalina dressing, onion soup mix, and Dijon mustard. Mix well.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 pounds chicken tenderloins, cut in 1/2 across on an angle
Salt and pepper
1 large onion, chopped
2 tablespoons cider or white wine vinegar
12 dried pitted apricots, chopped
2 cups chicken stock
1 cup apricot all fruit spread or apricot preserves
3 tablespoons chopped flat-leaf parsley, for garnish

Steps:

  • Heat a large skillet with a lid over medium high heat. Add oil and chicken. Season with salt and pepper. Lightly brown the chicken a few minutes on each side, add onions. Cook 5 minutes. Add vinegar to the pan and let it evaporate. Add apricots and stock. When stock comes to a bubble, add preserves and stir to combine. Cover pan, reduce heat and simmer 10 to 15 minutes. Serve chicken with a sprinkle of chopped parsley.

4-5 chicken breasts, boneless and skinless
1 teaspoon salt
½ teaspoon pepper
3 Tablespoons vegetable oil
⅔ cup apricot preserves
1 Tablespoon fish sauce
1 Tablespoon honey
1 Tablespoon orange juice
1 teaspoon dried rosemary
Chopped parsley, optional garnish

Steps:

  • Preheat the oven to 375 degrees Fahrenheit and prepare a 9x13 inch baking dish by spraying it with cooking spray.
  • Using a mallet or rolling pin, flatten each chicken breast until it is 1 inch thick on all sides.
  • Salt and pepper the chicken breasts and then lay them out evenly in the prepared baking dish. Take care not to overlap them.
  • In a medium mixing bowl, whisk together the vegetable oil, apricot jam, fish sauce, honey, orange juice, and rosemary until combined.
  • Pour the apricot mixture over the chicken and bake in the oven for 30-35 minutes or until the chicken reads 165 degrees Fahrenheit on a meat thermometer and juices run clear. The bake time will vary depending on the size of the chicken breast.
  • Once fully cooked, take the chicken out of the oven and let it rest for 5 minutes.
  • Plate and serve with a chopped parsley garnish, optional.

400 ml apricot nectar
4 chicken breast fillets
1 (2 ounce) packet French onion soup mix
1/2 cup flour

Steps:

  • Preheat oven to around 180 degrees celsius.
  • Lightly coat fillets with flour.
  • Mix french onion soup mix with apricot nectar.
  • Pour into casserole dish.
  • Place chicken fillets into dish.
  • Turn them over to make sure they're coated with nectar/soup mix.

2 Chicken Breasts
1 Onion, chopped
1 Green Pepper, sliced
Grated rind of 1 orange
1 tablespoon of plain flour
250 ml Vegatable Stock
60 ml Fresh Orange Juice
200 ml Dry White Wine
100 g Organic Dried Apricots cut into quarters
50 g Walnuts (chopped)
pinch of salt, freshly ground pepper, freshly grated nutmeg

Steps:

  • Chop the chicken breasts into small chunks, fry until cooked then set aside.
  • Fry the onion for a few minutes, then add the sliced pepper for about 1 minute. Then add the orange rind and plain flour
  • In a small jug, mix the orange juice and stock. GRADUALLY stir in the juice/stock mixture to the onion mixture.
  • Add the apricots, chicken, walnuts and white wine. Then add salt, pepper and the grated nutmeg.
  • Bring to the boil and simmer for 15 minutes.
  • Can be served immediately or, preferebly, leave to cook and reheat later. If reheating, tranfer to a caserole and heat at 160C for 30-40 minutes. You can serve from the caserole at the table

1 medium onion, sliced
1 garlic clove, crushed
2 tablespoons flour
2 teaspoons curry powder
600 g skinless chicken thighs, filets, cut into 3 to 4 pieces
1 (40 g) French onion soup mix (dry)
1 (415 g) can apricot nectar
2 tablespoons chopped parsley

Steps:

  • Preheat oven to 190c.
  • Heat the oil in an oven-proof pan (with a lid) and cook onion and garlic over medium heat until onion is softened (about 5 minutes), Stir.
  • Mix the curry powder and flour together in a bag then add in the chicken and toss well.
  • Add the chicken to the pan and cook it until it changes colour. Add the dry soup mix and stir to coat all the chicken, then the nectar stirring really well. Bring to the boil and simmer until the mix thickens.
  • Put the lid on and place in the preheated oven. Cook for about 30 minutes or until the chicken is cooked through.
  • Remove from the oven, stir through the parsley, then serve over plenty of mash or rice (mash is my favourite).
  • *You can add in dried or canned apricots, but we prefer it without.
