This Thai basil pork recipe is easy and slightly spicy and made with ground pork, fish sauce, soy sauce, garlic, shallots, Thai chiles, and basil. A quick weeknight dinner that's cheaper and better than takeout.

2 tablespoons mild vegetable oil
6 cloves garlic (minced (2 tablespoons))
5 Asian shallots (or 1/2 small onion, cut into thin slices (1/3 cup))
1 1/2 pounds ground pork
6 red Thai chile peppers (seeded, if desired, and thinly sliced into rounds)
2 tablespoons oyster sauce
2 tablespoons fish sauce
1 teaspoon soy sauce
1 teaspoon brown sugar
1 1/2 cups packed fresh holy basil or Thai basil leaves*
Pinch of freshly ground black pepper ((optional))
Steamed white rice ((optional))

Steps:

  • Heat a large wok or skillet over medium-high heat for 1 minute. Carefully swirl in the oil and heat until it becomes runny and starts to shimmer but doesn't begin to smoke. Reduce the heat to medium. Add the garlic and shallots and cook, stirring, until the garlic is lightly golden and fragrant, 15 to 30 seconds.
  • Increase the heat to medium-high and stir in the pork, using the edge of your spoon or spatula to break up the clumps. Stir and cook until the meat has just lost its blush of pink, 1 to 2 minutes.
  • Reduce the heat to medium and toss in the chiles. Add the oyster sauce, fish sauce, soy sauce, and sugar and stir to coat the meat evenly. Stir in the basil and cook until the basil is wilted and the pork is cooked through, another 30 to 60 seconds.
  • Move to a serving dish and, if desired, sprinkle with a pinch of black pepper. Serve hot with freshly steamed rice.

2 teaspoons Thai black soy sauce ((or 1 teaspoon Chinese dark soy sauce))

Steps:

  • In a wok over medium heat, add the oil, garlic, and chilies. Cook for 1 minute. Crank up the heat to high, and add the pork belly. Stir-fry until caramelized and a little crisp, 2 minutes.
  • Add the sugar, fish sauce, oyster sauce, and soy sauces. Stir-fry for 1 minute, and add the basil. Stir-fry until the basil is wilted. Serve immediately.

2 tablespoons red Thai chile, pounded
2 garlic cloves
1 tablespoon oyster sauce

1/2 cup Thai basil, fresh chopped

Steps:

  • In a hot pan, add the oil and stir fry garlic and chili until fragrant.
  • Add pork and continue to stir fry on medium heat until almost ready.
  • Keep stir frying and add pork stock as needed.
  • Add oyster sauce, fish sauce, sugar.

1 -1 1/4 lb ground pork or 1 -1 1/4 lb ground chicken
1 -1 1/2 cup basil leaves
5 -6 garlic cloves (peeled)
3 -5 whole fresh red chilies (seeded)
2 tablespoons oyster sauce
3 tablespoons fish sauce
3 teaspoons brown sugar

Steps:

  • In a mortar pound garlic and chilies with a little salt into paste.
  • Heat 2-3 tbsps canola oil in frying pan and brown the paste.
  • Add in the pork, making sure you break it up.
  • When meat is cooked (very fast; don't overcook), add in oyster sauce, fish sauce and sugar.
  • Stir in basil leaves. Add more fish sauce and sugar if needed.

My best friend, Deb, bought me a class at a Thai cooking school for my birthday. This was my favourite recipe. The most important thing I learned was, when it comes to Thai cooking, don't use substitutes - you only get the real flavour if you take the trouble to buy the right ingredients. This should be cooked in a wok, but a frypan will do if you don't have one. Don't be worried by the chillies, this dish is mild - as long as you remove the seeds from the chillies.

500 g pork fillets, chopped into small, bite-sized pieces
2 tablespoons garlic, finely chopped
4 shallots, finely sliced (use golden or red shallots)
2 large red chilies, deseeded then finely chopped
2 large green chilies, deseeded then finely chopped
2 tablespoons oyster sauce
2 tablespoons fish sauce
1 tablespoon palm sugar
1 cup basil leaves, torn (use Thai basil if available, but sweet basil will be fine)
vegetable oil
white pepper

Steps:

  • Prepare all ingredients in advance.
  • Place wok or pan over a moderate heat and add 2 tablespoons oil.
  • Add garlic and stir fry gently until it is just starting to colour lightly.
  • Add the sliced shallots and stir fry for a few minutes until they are transparent.
  • Remove garlic and shallots to another dish and set aside until needed.
  • Add a little more oil to the pan and increase heat.
  • Stir fry pork, in batches, until it is coloured (it doesn't have to be cooked through).
  • When the last batch of pork is cooked, add the shallots and garlic and the remaining pork to the pan.
  • Add the chillies and stir fry for a minute or two.
  • Now add the oyster sauce, fish sauce and palm sugar.
  • Stir fry for about 5 minutes or so until pork is cooked and the sauce is slightly caramelised.
  • Add basil and stir fry until wilted.
  • Before serving, sprinkle lightly with white pepper.
  • Serve with steamed jasmine rice.

3/4 cup fresh Thai basil, lightly packed

Steps:

  • Combine broth, fish sauce, sugar and chili garlic sauce in a small bowl.
  • Place a wok over high heat until hot. Add oil, swirling to coat sides.
  • Add garlic and chilies, cook, stirring, until fragrant, about 10 seconds. Add pork and stir-fry until no longer pink, about 2 1/2 to 3 minutes.
  • Add basil and green onions. Stir-fry for 1 minute.
  • Add sauce and bring to a boil. Add cornstarch solution, stirring, until boils again and thickens.
  • Serve with rice or noodles.
