MOM'S SOFT RAISIN COOKIES

With four sons in service during World War II, my mother sent these favorite cookies as a taste from home to "her boys" in different parts of the world. These days, my 11 grandchildren are enjoying them as we did, along with my stories of long ago.- Pearl Cochenour, Williamsport, Ohio

Number Of Ingredients 13

1 cup water
2 cups raisins
1 cup shortening
1-3/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped walnuts

Steps:

  • Combine water and raisins in a small saucepan; bring to a boil. Cook for 3 minutes; remove from the heat and let cool (do not drain). , Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder, baking soda, salt and spices; gradually add to creamed mixture and mix well. Stir in nuts and raisins. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 12-14 minutes or until golden brown. Remove to wire racks to cool.

These cookies are very simple but delicious!! I didn't use cinnamon or nutmeg and although some people may have thought this recipe may be tasteless, I loved it! However, if you love flavor, then you may try the cinnamon and nutmeg although I would recommend this cookie without them as well! This recipe may be to huge so you may cut it in half or I even made 1/4 of it and still got 8 medium sized cookies. Enjoy!

2 cups raisins
1 cup water
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon (optional)
1/4 teaspoon nutmeg (optional)
1 cup margarine
2 cups brown sugar
3 eggs (beaten)
1 teaspoon baking soda
4 cups flour

Steps:

  • Preheat oven to 350°F.
  • Boil raisins in water for 5 minutes.
  • Cool then add baking soda. Let stand then add vanilla cinnamon and nutmeg.
  • Cream together margarine and sugar then add eggs, baking powder and flour.
  • Add raisin mixture to flour mixture and stir together well.
  • Drop by teaspoon onto cookie sheet and bake for 12 minutes.

  • Boil raisins, spices, shortening and water for 3 minutes.
  • Set aside.

This is my absolute favorite homemade cookie in the whole world! When I make a batch, I have to hide them, give part of them away, and basically lock them in the cabinet. They just don't last. I got so tired of not being able to eat the regular ones from the Elves in the magic tree, so I adapted a really good recipe. I hope you like them as much as I do.

1 cup self-rising flour
1/2 cup butter
2 tablespoons white Splenda granular
2 tablespoons milk
1 1/2 cups quick oats
1 egg
1/4 teaspoon cinnamon
1/3 cup Splenda brown sugar blend
1/2 teaspoon vanilla
1/2 cup dark raisin

Steps:

  • Preheat the oven to 325 degrees.
  • Mix the flour with the cinnamon.
  • Cream the butter and both the sugars until fluffy. Add the egg, milk, and vanilla. Gradually add the flour mixture.
  • Stir in oats and raisins.
  • Drop by teaspoonfuls if small cookies are desired, tablespoons if larger cookies are desired onto parchment paper (this stuff is reusable - one sheet will do the whole batch).
  • Bake until golden brown, 10-12 minutes. Cool on wire racks.

3/4 c orange juice
1/2 tsp grated orange rind (opt.)
7 Tbsp vegetable oil

1/2 c nuts (opt.)
1/2 c quick oats (opt.) substitute for nuts or just add with them

Steps:

  • 1. Combine ingredients. Drop by teaspoonfuls onto ungreased non stick cookie sheet. Bake 12 to 15 minutes at 375 degrees until lightly brown

1/4 c sugar
1 egg
1 tsp vanilla
1/2 c unsweetened applesauce
1/2 c whole wheat flour
1/2 c unbleached flour
2 tsp baking powder

1 tsp cinnamon
1/8 tsp cloves
1/2 c rolled oats
1/2 c raisins - dark or golden

Steps:

  • 1. Cream the oil and sugar together. Then add the egg and beat until light.
  • 2. Next blend in the vanilla and applesauce
  • 3. Stir the flours, baking powder, baking soda, cinnamon, cloves, oats, and raisins into the creamed mixture. Blend well.
  • 4. Drop cookies onto a lightly oiled baking sheet using a teaspoon. Bake for 10 minutes at 375 degrees. Let cool on a wire rack before serving.

3 cups sifted confectioners' sugar

  • Sift flour with soda, salt, cinnamon and cloves and set aside.
  • In large bowl, beat shortening, sugar, eggs and vanilla until light and fluffy.
  • At low speed, beat in flour until well mixed.
  • Stir in raisins and walnuts.
  • Refrigerate dough for 30 minutes.
  • Preheat oven to 375°.
  • Lightly grease cookie sheets.
  • Drop batter by rounded teaspoonfuls, 2 inches apart onto cookie sheets.

The story goes that I came home talking about some delicious cookies that "Aunt Neecie" had made, so my mom called her to get the recipe. It was HER Raisin Drop Cookies that I always said I didn't like.

2 cups raisins
1 cup water
4 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup shortening
1 3/4 cups sugar
2 eggs, slightly beaten
1 teaspoon vanilla
1/2 cup chopped nuts

Steps:

  • Place raisins and water into saucepan and bring to boil. Boil until raisins are plump, about 3 minutes. Cool (do not drain).
  • In mixing bowl, sift flour, baking powder, soda, salt, and spices together.
  • In another bowl, cream shortening and sugar together until light and fluffy. Add eggs and vanilla and mix well. Stir in the raisins and any remaining water.
  • Gradually add the flour mixture to the sugar & raisin mixture, blending thoroughly after each addition.
  • Stir in nuts.
  • Drop by tablespoon about 1" apart on ungreased baking sheets (USE A SILPAT! THEY ARE WONDERFUL!).
  • Bake at 375¯ for 12 - 15 minutes. Cool on cooling rack.
