WHISKEY PINEAPPLE CHICKEN
Everyone in my family loves this recipe and its sweet marinade with ginger, pineapple and a splash of whiskey. Want even more intense flavor? Let the chicken marinate for two full days. Wow! -Jodi Taffel, Altadena, California

Steps:
- Whisk together bourbon, pineapple juice, hoisin sauce, ginger, 1 tablespoon pepper, Worcestershire sauce, garlic and 1 teaspoon salt until blended. Place chicken in a shallow dish. Add half of marinade; turn to coat. Cover and refrigerate, overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain chicken, discarding the marinade. Grill chicken, covered, on a greased grill rack over medium-high direct heat until a thermometer reads 170°, 5-6 minutes on each side., Meanwhile, toss pepper and onion slices in oil and remaining salt and pepper. Grill, turning frequently, until soft, 5-7 minutes. In a small saucepan on the grill, cook reserved marinade over medium heat, stirring occasionally, until slightly thickened, about 10 minutes. Chop grilled pepper and onion. Sprinkle over chicken; serve with sauce.

BOURBON PINEAPPLE
Steps:
- Quarter a pineapple lengthwise; peel, core and thinly slice. Toss in a baking dish with a shot of bourbon, 1/4 cup brown sugar and a pinch of allspice; dot with 2 tablespoons butter. Bake at 350 degrees F, stirring twice, about 1 hour, 30 minutes. Serve with coconut sorbet.
GRILLED PINEAPPLE WITH BOURBON SAUCE
Pineapple grills up beautifully on the barbeque. Cook up a few spears and serve them with ice cream and a sweet bourbon sauce for a summertime dessert.

Steps:
- To prepare sauce, cut vanilla bean in half lengthwise and scrape beans from pod; discard pod. Combine beans, brown sugar, bourbon and orange juice in a small non-reactive saucepan. Bring to a boil over medium heat.
- Reduce heat and simmer, uncovered, stirring occasionally, until thickened, about 20 minutes. Remove from heat. Whisk in butter and lime peel, whisking until butter is melted. Cover and set aside.
- Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
- Cut pineapple in half lengthwise; reserve one half for another use. Cut other half of pineapple in half lengthwise. Cut out and discard core from pieces. Cut each piece lengthwise into 3 spears. There should be 6 spears. Brush all sides of spears with oil.
- Grill pineapple until warmed and grill-marked, about 1 - 2 minutes per side. Remove from heat. When cool enough to handle, cut each spear in half crosswise.
- To serve, place 3 pineapple pieces and ice cream into each of 4 bowls. Top each serving with sauce.

BOURBON HONEY GLAZED HAM

- Preheat oven to 350 degrees F.
- In a medium saucepan, heat bourbon, honey, molasses, and marmalade over low heat for 15 minutes or until reduced by half, stirring occasionally. (When measuring honey and molasses, spray measuring cup with nonstick cooking spray to keep measurements accurate.) Set aside.
- With a sharp knife, cut a diamond pattern on the fatty part of the ham. Stud whole cloves in each diamond, at points where lines cross. Spread half of the bourbon glaze over the ham and roast for 30 minutes, uncovered. Baste occasionally with remaining glaze and continue to roast for another 15 minutes. Let ham stand for 20 minutes before slicing.
SWEET-AND-HOT PINEAPPLE

- Cut a pineapple into small pieces (see Cook's Note). Microwave the grated zest of 3 limes on a paper towel until dry, about 1 minute. Mix the dried zest, 2 teaspoons salt, 1 teaspoon sugar and 1/4 teaspoon each ancho chile powder and cayenne pepper. Toss with the pineapple.

- In a bowl, combine the rest of the ingredients. Stir until sugar is dissolved.

BOURBON BROILED PINEAPPLE
Posted for ZWT III, this a Southwestern dessert from 1,000 Vegetarian Recipes. This is a super easy way to dress up fruit for a quick dessert, and it will work with almost any kind of fruit that is fleshy enough to broil. I particularly like it over melon like honeydew. I am not a big fan of desserts, but this one is actually really really good and so versatile.

Steps:
- Stir together the first three ingredients.
- Lay the pineapple slices out over a foil lined broiler pan.
- Brush with 1/2 of the sugar mix and broil for about 5 minutes on one side.
- Turn the slices over and brush with the rest of the mixture broil for another 5 minutes.
- These can be garnished with mango salsa and chopped cilantro for a really pretty presentation.

BOURBON, PINEAPPLE AND ORANGE GLAZED HOLIDAY HAM
One of my family's favorite holiday ham recipes --perfect for Easter or New Year's celebrations. The glaze is really wonderful-- half gets brushed onto the ham and baked, the remainder gets passed at the table. Enjoy!

Steps:
- Preheat oven to 325°F.
- Using a sharp knife, score the ham into a diamond pattern about 1/4-inch deep and 1-inch apart.
- Stud the ham with whole cloves in the center of each diamond.
- Place ham fat side up in a shallow roasting pan (for easy clean-up line pan with aluminum foil, or use a heavy-duty disposable aluminum pan).
- Bake ham for 2 1/2 hours.
- Meanwhile, stir together the brown sugar, bourbon, orange marmalade, crushed pineapple, and prepared mustard. Heat to boiling over medium-high heat, stirring until sugar has dissolved.
- Remove ham from the oven.
- Spoon half of the glaze/sauce over the ham.
- Decorate ham with pineapple rings, using a few toothpicks to hold ring in place. Place a cherry in the center of each ring, and attach it with a toothpick.
- Return ham to the oven and bake for another 20 to 30 minutes.
- Transfer ham to a platter and allow to rest for 10 minutes before carving (be sure to remove all toothpicks).
- Pass the remaining sauce at the table.
