MEXICAN PORK ROAST

Friends who live in Mexico shared this dish with me years ago. They cooked the roast in a clay pot in a slow oven, but I found the recipe works well in a slow cooker. The leftovers make excellent burritos and tacos. -Chuck Allen, Dana Point, California

2 tablespoons olive oil
2 medium onions, sliced
2 medium carrots, sliced
2 jalapeno peppers, seeded and chopped
3 garlic cloves, minced
1/2 cup water
1/2 cup chicken broth
1 teaspoon ground coriander
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1 boneless pork shoulder butt roast (3 pounds)

Steps:

  • In a large skillet, heat oil over medium-high heat. Cook the onions, carrots and jalapenos until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Transfer to a 5-qt. slow cooker; add water and broth. , In a small bowl, combine the coriander, salt, cumin, oregano and pepper; rub over roast. Cut roast in half; place in the slow cooker. Cover and cook on low until meat is tender, 8-9 hours. , Transfer roast and vegetables to a serving platter; keep warm. Strain cooking juices and skim fat. Pour into a small saucepan. Bring to a boil; cook until liquid is reduced to about 1 cup. Serve with roast and vegetables.

1 pork roast, fat removed
4 slices havarti cheese
1/2-1 green pepper
1/2-1 red pepper
1/2-1 yellow pepper
1/2 lb sliced mushrooms
1 small onion, sliced thinly
Tex-Mex seasoning
salt and pepper
1 1/2 cups water
1/3 cup flour, approximately

Steps:

  • preheat oven to 350 degrees.
  • cut pork roast in half unless you have the kind that is two peices wrapped with string.
  • place two peices of harvarti cheese on the flat side of each half.
  • cut all the peppers into slices lengthwise.
  • then make layer of mushrooms, red pepper, green pepper, and yellow pepper followed by the layer of thinly sliced onion.
  • add some salt and pepper to taste.
  • place the other half of the roast with the cheese side in on top of the layer of onion.
  • use string to secure the layers of roast together and all the veggies inside.
  • place roast in roasting pan and add water
  • sprinkle the water and roast with tex-mex seasoning.
  • cook for half the time and then turn over and sprinkle the other side with tex-mex seasoning as well.
  • some of the veggies will slide out from inside the roast.
  • once the roast is done remove and add flour mixture and make a sauce out of the leftover juices with veggies and serve over the slices of roast.

Butter-flavored cooking spray
1 small onion, chopped
6 boneless pork loin chops (5 ounces each)
1 cup salsa
1 can (4 ounces) chopped green chiles
1/2 teaspoon ground cumin
1/4 teaspoon pepper

Steps:

  • In a large skillet coated with butter-flavored cooking spray, saute onion until tender. Add pork chops; cook over medium heat until a thermometer reads 145°, 5-6 minutes on each side. , Combine the salsa, chiles, cumin and pepper; pour over pork. Bring to a boil. Reduce heat; cover and simmer until heated through.

1 (8 ounce) can tomato sauce
1 cup bottled barbecue sauce
1 medium onion, thinly sliced
2 (4 1/2 ounce) cans diced green chilies
1/4 cup chili powder
1 teaspoon cumin
1 teaspoon dried oregano
1/4 teaspoon ground cinnamon
1 (2 1/2 lb) well-trimmed boneless pork loin roast
1/2 cup chopped cilantro

Steps:

  • Mix sauce ingredients in a 3-quart or larger crock pot; add pork, then spoon sauce over pork to cover.
  • Cover cooker and cook on high 3 1/2 hours or on low 8 to 10 hours, until pork is tender; Remove pork to a cutting board and, using 2 forks, pull meat into shreds.
  • Pour sauce into serving bowl; stir in cilantro and shredded pork and serve.

LEFTOVER TEX-MEX PORK CASSEROLE

My family calls these kinds of dishes my "concoctions". We had a couple of thick-cut pork chops left over, so I decided to adapt a tex-mex chicken casserole I've made that the family loves. I added a little too much "juice" to the casserole and the tortilla chips were very soggy. Next time I'll try for a crispy taste. I have frozen red, green, yellow and orange bell peppers, already chopped, so I included a variety of them in this dish for color.

3 cups pork, 1/2 inch cubes
1 1/2 cups bell peppers, chopped 1/2 inch pieces
1/2 cup onion, coarsely chopped
2 garlic cloves, minced
2 tablespoons olive oil
1 tablespoon butter
1 (14 ounce) can whole tomatoes, drained (reserve)
1 cup chicken stock
2 teaspoons ground cumin
1 teaspoon dried basil
salt
pepper
1 cup mild cheddar cheese, coarsely grated
4 ounces Velveeta cheese, cut into 1/2 inch cubes
2 cups blue corn tortilla chips, slightly crushed

Steps:

  • Preheat oven to 375 degrees.
  • Coat a 9 x 13 glass casserole dish with non-stick spray. Evenly distribute crushed tortilla chips over bottom of the dish.
  • In a large skillet, heat oil and butter over medium until butter foams. Add bell peppers, onions and garlic. Saute' until soft.
  • Drain the canned tomatoes, reserving the juice. Crush them up some, just so not whole.
  • Add pork to skillet with vegies. Add crushed tomatoes, basil and cumin. Slowly add some of reserved tomato juice and chicken stock. This is where you need to do a lot of taste-testing. You need enough to moisten the ingredients but not too soupy, probably 3/4 cup total. Bring to a simmer for about 10 minutes.
  • Add salt and pepper to taste. I also added a pinch of sugar to tone down the acidic taste.
  • Pour over the chips. Top with Velvetta and cheddar cheese.
  • Bake at 375 for 15 - 20 minutes until cheese is melted and bubbly.

1 (3 -5 lb) pork roast
1 (1 1/4 ounce) package taco seasoning
1 cup water
1 (4 ounce) can green chilies, diced
12 flour tortillas

Steps:

  • Cook pork roast 3 hours at 325*. Cool. Shred meat, discarding any fat. Place shredded meat, taco seasoning, water and green chilies in a large saucepan and simmer over low heat for 2 hours.
  • When ready to serve, steam tortillas to soften. Place a generous portion of shredded pork mixture on each tortilla and fold over. May be served with refried beans, guacamole, shredded lettus, shredded cheese, sour cream, Pico de Gallo, picante sauce, or any other garnish of your choice.

1 tablespoon brown sugar
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon salt
1 tablespoon vegetable oil
4 pork loin chops with bone (about 1 1/2 lb/750 g in total)

Steps:

  • In a small bowl, mix the brown sugar, cumin, chili powder and salt. Add the oil and mix well. Rub the pork chops with the mixture. (You can do this step and keep them in the fridge until the next day).
  • Preheat the bbq to medium heat. Lightly oil the grill. Put the pork chops on the grill. Close the cover of the bbq. Cook 5 to 7 minutes or until that the pork is a little bit pink inside. (turn the pork chops at mid cooking).

  • The day before you are to make your tamales, cook your pork roast with onions, peppers, garlic, etc. Stick to Mexican-food seasonings such as chile powder, cumin, etc so the roast flavors won't compete with the flavor of your tamales. Then cool & shred the roast and store in the refrigerator. You'll want about 4 cups of shredded roast for your tamales.
  • Use rubber gloves to remove stems and seeds from the chile pods. Place chopped chiles, chopped onion and garlic cumin & salt in a saucepan with 2 cups of broth. Simmer, uncovered, for 20 minutes, then remove from heat to cool.
  • Mix 3 cups Masa corn flour, 1/4 cup roja chile sauce, 1.75 cups chicken broth & mix thoroughly with your hands to make a soft-moist dough. Set aside.
  • Spread about 2 Tablespoons masa dough over the smooth side of the corn husks - approximately 4" x 5" square and about 1/4 inch thick. Place one heaping tablespoon of the meat filling in a line down the center of the masa.
