I learned this recipe for pot stickers while living in Japan. They're great hot or cold, and may be eaten plain or with the dipping sauce. Any ground meat can be substituted for pork.

1 tablespoon sesame oil
2 cups chopped cabbage
¼ cup chopped onion
1 clove garlic, chopped
¼ cup chopped carrot
½ pound ground pork
1 egg
1 tablespoon vegetable oil
1 (10 ounce) package wonton wrappers
¼ cup water
¼ cup soy sauce
2 tablespoons rice vinegar

Steps:

  • Heat sesame oil in a large skillet over medium high heat. Mix in cabbage, onion, garlic and carrot. Cook and stir until cabbage is limp. Mix in ground pork and egg. Cook until pork is evenly brown and egg is no longer runny.
  • Preheat vegetable oil in a large skillet over medium high heat.
  • Place approximately 1 tablespoon of the cabbage and pork mixture in the center of each wrapper. Fold wrappers in half over filling, and seal edges with moistened fingers.
  • In the preheated vegetable oil, cook gyoza approximately 1 minute per side, until lightly browned. Place water into skillet and reduce heat. Cover and allow gyoza to steam until the water is gone.
  • In a small bowl, mix soy sauce and rice vinegar. Use the mixture as a dipping sauce for the finished wrappers.

Crispy pan-fried Vegan Gyoza (Jiaozi) are Japanese Vegetable Dumplings, also called Potstickers. They're made with simple Homemade Dumpling Wrappers that can be made gluten-free, then filled with healthy veggies, and steamed until tender. This recipe is pretty easy and includes an easy to follow step-by-step instruction + video.

2 ½ cups all-purpose flour (300g) (or sub 1 ½ cup fine white rice flour (200g) + ¾ cup tapioca starch (80g), if gluten-free*)
½ tsp salt
⅔ cup hot water (160ml)
cornstarch or all-purpose flour or rice flour (for dusting the work surface)
1-2 tbsp sesame oil
2 cloves garlic (minced)
1 tbsp ginger (minced)

7 oz mushrooms (200g) (finely chopped)

These are a delicious light lunch or a starter if you are making Asian food for guests.

Number Of Ingredients 10

140g Plain Flour
125ml Recently Boiled Water
140g Plain Flour
125ml Recently Boiled Water
1/2 Cabbage (Shredded)
100g Mushrooms (Chopped Small)
1 Carrot (Grated)
1tsp Grated Ginger
1tbs Sesame Seeds
2tbs Soy Sauce

Steps:

  • First, start by making your dough. In a bowl, combine the flour with water and mix using a fork. Once it comes together, dust your work surface with flour. Now knead the dough until well combined, adding flour so it isn't sticky. This should take around 6/7 minutes. Roll the dough into a ball and set aside in a bowl covered with cling film.
  • Now, chop and grate your vegetables. Add 1tsp oil into a pan and add the cabbage, carrot, mushrooms and ginger. Cook for 5 minutes on a low/medium heat. Once it looks cooked, add the soy sauce and sesame seeds ad stir. Now cook until the liquid has evaporated. Leave aside to cool
  • Back to the dough. Place on your floured work surface and roll into a long sausage shape. Now cut into 18 individual portions. Put some water in a small bowl next to the dough, you will need this soon.
  • Flour the surface well and add one piece of dough. Now roll out into a circle as thin as you can. Take the dough in your hand and spoon a small amount of the filling into the centre. Now for the water, wet the tip of a finger and dab it around one half of the edge. Then fold the other half over and pinch the edges together, you should end up with a semi circle shape. Place bottom down on the work surface to make a flat bottom, this will make a good base when frying.
  • Heat a frying pan on a medium heat, make sure you have a lid that fits the pan. Add 1tsp of oil to the frying pan and then place the gyoza in one at a time to the pan. Cook for 1-2 minutes until the base is nice and brown. Now, add some water to the frying pan and cover with the lid immediately. Steam for 3-4 minutes. Serve with some dipping sauce. I love sweet chilli sauce with these!

Shrimp gyoza (Japanese dumplings) is a potsticker with a shrimp and vegetable filling that is pan-fried and served with citrus soy sauce.

For the Filling:
1/4 pound Chinese Napa cabbage (or green cabbage, finely chopped)
2/3 pound medium shrimp (raw, shelled, and deveined)
2 teaspoons fresh ginger (grated)
1 tablespoon green onion (chopped)
2 teaspoon sake
1 teaspoon salt
1 teaspoon sesame oil
2 teaspoons katakuriko (corn or potato starch)
For Assembling:
20 to 24 gyoza wrappers
1 to 2 tablespoons canola oil
For Serving:
Ponzu sauce (or a 1:1 ratio of soy sauce to rice vinegar)
Garnish: Japanese karashi ( hot mustard)
Garnish: Shichimi togarashi (Japanese 7-spice chili powder)

Steps:

  • Gather the ingredients.
  • In a medium-sized pot with boiling water, cook the whole cabbage leaves for 2 to 3 minutes.
  • Drain well and let the cabbage cool off a little before squeezing out as much of the excess water as possible by pressing the cabbage leaves between your hands and pressing hard.
  • Thinly chop the cabbage and place it in a medium-sized bowl. Reserve.
  • Finely chop the clean shrimp into a paste-like texture.
  • Add the shrimp into the cabbage bowl.
  • Add the grated ginger and chopped green onion and mix all ingredients well.
  • Add sake, salt, sesame oil, and katakuriko and mix well. You can knead the mixture with your hands too.
  • Have at hand a small bowl with water. On a clean work surface, place a gyoza wrapper and add a small spoonful of filling, about 1 heaping teaspoon, in the middle of the wrapper.
  • Dip your finger in the water and moisten all around the wrapper edges.
  • Fold the wrapper in half to make a semicircle shape.
  • Press tightly on the edges to close the gyoza. There shouldn't be any gaps as the filling can ooze out when the gyoza hits the pan.
  • Repeat the process until all of the shrimp filling is used.
  • In a large skillet over high heat, add enough canola oil to coat the bottom, 1 to 2 tablespoons.
  • Place the prepared gyoza in the skillet and fry until the bottoms become brown and crisp, about 3 to 4 minutes. Do not overcrowd the pan; if necessary work in batches, adding more oil as needed. Once the bottoms are golden, turn down the heat to low.
  • Pour 1/4 cup of water in the skillet and cover. Steam the gyoza on low heat until the water is gone.
  • Serve the gyoza with ponzu sauce on the side, the optional karashi, or an optional spicy ponzu with a pinch of shichimi togarashi on top.
  • Enjoy!

Try our take on veggie gyoza. These dumplings can be cooked from frozen and easily adapted with your own fillings. You can also use shop-bought gyoza skins

250g plain flour
cornflour, for dusting
200g white cabbage
4 chestnut mushrooms
1 carrot
4 water chestnuts (optional)
thumb-sized piece of ginger, peeled and finely grated
2 garlic cloves, finely grated
3 spring onions, finely sliced
2 tbsp sunflower oil, plus extra for frying
1 tbsp soy sauce
1 tbsp saké, Shaohsing rice wine or dry sherry
6 tbsp soy sauce
2 tbsp rice wine vinegar
crispy chilli oil (optional)

Steps:

  • If you're making your own dough, tip the flour and 1 tsp salt into a bowl. Bring a kettle to the boil and measure 150ml boiling water. Slowly pour the water over the flour while mixing with a spoon to form a stiff dough. When the dough is cool enough to handle, tip onto a surface and knead for 10 mins until smooth. Wrap the dough and chill for at least 1 hr. Alternatively, you can use 25-30 shop-bought gyoza skins.
  • Meanwhile, coarsely grate the cabbage, mushrooms, carrot and water chestnuts, if using, then tip into a bowl. Add the ginger, garlic and spring onions. Heat the oil in a wok, then tip in all the veg and stir-fry over a high heat for 3 mins until softened. Drizzle over the soy sauce and sake, and cook for 2-3 mins. Season to taste. Tip back into the bowl to cool completely.
  • Divide the dough in two. Scatter a surface generously with cornflour and roll one ball of dough out until paper-thin. Use a 10cm cutter to cut out rounds of dough and pile them up (they won't stick because of the cornflour). Repeat with all the dough, re-rolling the trimmings until you have about 25 skins.
  • To assemble, sprinkle cornflour on a tray and have a bowl of cold water ready. Hold a skin in the palm of one hand and put a teaspoon of the filling in the centre. Dip your finger in the water and wipe around the inside edge of the skin. Bring the edges of the skin together, pinching pleats along one side. Space them out on a baking tray and freeze, then tip into a bag and put back in the freezer. Will keep for three months. Can be cooked from frozen.
  • Heat a drizzle of oil in a non-stick frying pan with a lid. Fry, flat-side down, for 2 mins until golden. Add 100ml water to the pan and cover. Cook over a medium heat for 3-5 mins until the water has evaporated and the gyoza is cooked through. Remove the lid and leave the gyoza to sizzle on the bottom for a minute. Mix the dipping sauce ingredients together, then serve with the gyoza.

Japanese gyoza are like Chinese dumplings and potstickers but use thinner skins and finely ground meat. Gyoza are a more delicate than the usual potsticker.

5 cups napa cabbage ((about 1 pound/450g, roughly chopped into large pieces))
8 ounces ground pork ((70% to 80% lean, 225g))
1 clove garlic ((smashed))
1 1/2 teaspoons fresh ginger ((minced))
1 scallion ((chopped))
2 tablespoons vegetable oil ((plus more for pan-frying))
1/2 teaspoon sesame oil
2 teaspoons soy sauce
3/4 teaspoon sugar
1/2 teaspoon salt
1/8 tsp white pepper
Store-bought gyoza wrappers
2 tablespoons soy sauce
1 teaspoon rice vinegar
1 tablespoon hot water
1 teaspoon sugar

Steps:

  • Begin by blanching the napa cabbage in boiling water for 30 seconds. Drain the cabbage in a colander and rinse with cold water. Squeeze any excess water from the cabbage with your hands.
  • To the food processor, add the blanched cabbage, ground pork, smashed garlic, ginger, scallion, 2 tablespoons vegetable oil, sesame oil, soy sauce, sugar, salt and pepper. Pulse the mixture in the food processor until the filling is well-combined.
  • Prepare sheet pans or cookie sheets lined with plastic wrap or parchment paper. To assemble the gyoza, place about 2 teaspoons of filling in the middle of each wrapper, and use your finger dipped in a small bowl of fresh water to moisten the outer edges of the wrapper. You could simply fold them in half, or you can pleat them as you see in the photos. Make sure they are well-sealed.
  • Heat a tablespoon of cooking oil in a nonstick or cast iron skillet over medium high heat. Place the gyoza in the pan and fry until the bottom of the gyoza become crispy and golden, about 2-3 minutes.
  • When the gyoza have fried, add 1 tablespoon of water to the hot pan and immediately cover the pan to steam the dumplings. Let the gyoza to steam until the water has evaporated (about 2 minutes), remove the cover, and continue cooking until the bottoms of the gyoza get crispy again.
  • Prepare your dipping sauce by combining all the sauce ingredients in a small bowl, and serve alongside the crispy gyoza!
