2 boneless skinless chicken breasts, cut into 1-inch cubes
1/2 cup finely chopped sweet red pepper
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon hot pepper sauce
1 tablespoon lime juice
Shredded lettuce

Steps:

  • Combine chicken, red pepper, chili powder, garlic powder, salt, and hot pepper sauce in a medium or large ZIPLOC Brand Zip 'n Steam Bag. Seal bag and shake to mix ingredients. Place ingredients into an even, single layer. Place bag in a microwave., Cook on high for 4 minutes (Medium bag) or 3-1/2 minutes (Large bag) or until chicken juices run clear. If needed, continue microwaving for 30-second intervals until chicken is done., Let stand 1 minute before handling. Gently squeeze bag to distribute seasonings. Carefully open bag. Spoon 1 tablespoon lime juice over chicken. Season with additional salt and hot pepper sauce if desired. Serve over a bed of lettuce.

1 medium onion, chopped
1/3 cup water
1/4 cup lemon juice
1 tablespoon canola oil
1/2 to 1 teaspoon salt
1/2 teaspoon each garlic powder, chili powder and paprika
1/2 teaspoon ground ginger
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
4-1/2 teaspoons cornstarch
4-1/2 teaspoons cold water
Hot cooked noodles
Chopped fresh parsley, optional

Steps:

  • In a greased 3-qt. slow cooker, combine the onion, water, lemon juice, oil and seasonings. Add chicken; turn to coat. Cover and cook on low for 4-5 hours or until a thermometer reads 170°. Remove chicken and keep warm., In a saucepan, combine the cornstarch and cold water until smooth. Gradually add the cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken over noodles. Sprinkle with parsley if desired.

Spicy Lemon Chicken Bites image

These tangy little chicken bites will make a great appetizer for your next summer get together.

1 lb ground chicken
½ cup breadcrumbs, dried
1 onion(s), small, peeled and finely minced
1 clove garlic, peeled, minced
1 tsp salt
1 tbsp parsley, fresh, finely-chopped
1 tsp oregano, dried
1 tsp basil, dried
1 tsp hot red chili pepper flakes
¼ tsp white pepper, ground
zest of one lemon
juice of 1/2 a lemon
canola oil, for brushing
1 cup plain yogurt, (preferably not fat free) drained
1 tbsp lemon zest
1 tbsp lemon juice, fresh
¼ cup mayonnaise
½ cup mint leaves, loosely packed, finely-chopped
½ cup dill, finely-chopped
chives, small bunch, finely-chopped
2 cloves garlic, minced
salt, to taste
pepper, to tast

Steps:

  • In a large bowl combine chicken, breadcrumbs, onion, garlic, salt, parsley, oregano, basil, pepper flakes, white pepper, lemon zest and lemon juice. Mix well. Cover and refrigerate while you prepare the yogurt sauce.
  • To make yogurt sauce, combine all sauce ingredients. Cover and refrigerate until needed. Sauce will keep in the fridge for three to four days.
  • To make chicken bites, wet hands and form chicken mixture into small 2 inch round patties, about ¼ inch thick. Place on a baking sheet lined with parchment paper. (This can be done the day before - cover and refrigerate until ready to cook).
  • Heat barbecue or grill (patties can also be broiled). Brush each chicken bite with a little oil and cook for 6-8 minutes or until internal temperature reaches 165°F (74°C), turning frequently.
  • Serve chicken bites with yogurt dipping sauce as an appetizer or stuff into mini pita pockets with tomato, cucumber and a little of the sauce. Chicken mixture can also be made into meatballs or burger sized patties.

1 1/2 pounds bone-in chicken breast with skin
1 tablespoon canola oil, plus more for grilling
1 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh thyme leaves
2 lemons, zested and juiced, juice reserved for Brown Rice and Mushroom Salad
1 cup chicken broth
Kosher salt
2 cups brown rice
1/2 red onion, chopped
2 stalks celery, chopped
1 carrot, shredded
1/2 (8-ounce) package sliced mushrooms, chopped
Reserved lemon juice from Spicy Grilled Lemon Chicken
1 tablespoon brown mustard
1 tablespoon canola oil
Freshly ground black pepper
1 tablespoon chopped fresh parsley leaves
1 teaspoon chopped fresh thyme leaves

Steps:

  • For the chicken: Remove the skin from the chicken breasts and take the breasts off the bone separating out the tenders. Cut the breasts in half lengthwise. Put the breasts between 2 pieces of plastic wrap and pound them thin with a rolling pin or small skillet.
  • Put the chicken breasts in a resealable plastic bag, pour the oil into the bag, and add the red pepper flakes, salt and pepper, parsley, thyme, and lemon zest. Mix it all together, seal the bag, put it in a bowl, and refrigerate for at least 2 hours or overnight. Refrigerate the tenders separately.
  • Preheat a grill or grill pan over medium heat.
  • Oil the grill to prevent the chicken from sticking. When you are ready to cook, remove the chicken from the refrigerator. Put the chicken breasts and tenders on the grill and cook until cooked through, 3 to 4 minutes per side (reserve the chicken tenders for the online Round 2 Recipe Grilled Chicken and Apple Wraps).
  • For the salad: In a saucepan with a lid, heat 2 cups water, chicken broth, and 1 teaspoon salt over medium-high heat. Stir in the rice and bring to a boil. Reduce the heat to low, cover, and simmer until the rice is tender, 40 to 45 minutes. Fluff the rice with a fork and spread it out onto a sheet pan to cool.
  • In a large bowl, combine the cooled rice, onions, celery, carrots, and mushrooms.
  • In a medium bowl, whisk together the lemon juice, brown mustard, canola oil, salt and pepper, to taste, parsley, and thyme. Whisk until well combined. Pour the dressing over the salad and gently toss everything together. (Reserve 2 cups for the Round 2 Recipe Stuffed Peppers.) Cover and refrigerate if not serving right away.
  • Serve the breasts while hot with the Brown Rice and Mushroom Salad.

These sweet tidbits are popular take-alongs to a potluck or tapas party. Because they are baked, not fried, they can even be made the day before to save time on party day. Steps #1-8 can be done in advance, then make the sauce and coat before your event, or make the entire recipe the day before and chill to serve cold. Nicely presented over a bed of shredded iceberg lettuce.

1 1/2 lbs boneless chicken thighs
chives, chopped for garnish (optional)
2 teaspoons salt
2 teaspoons sugar
2 eggs
2 tablespoons sesame oil
1 tablespoon cornstarch
2 cups panko breadcrumbs
2 tablespoons sesame seeds
1 cup lemon juice (approx. six medium lemons)
1 tablespoon lemon zest, grated
1 cup water
1 cup brown sugar
3 tablespoons cornstarch
4 drops yellow food coloring (optional)

Steps:

  • Cut chicken in bite size pieces.
  • Combine marinade ingredients.
  • Marinate chicken for at least fifteen minutes.
  • In the meantime, preheat oven to 400 degrees.
  • Also in the meantime, mix the panko and sesame seeds in a gallon ziploc bag and mix well.
  • Add the chicken and close bag. Shake vigorously to coat all pieces.
  • Arrange coated pieces on a baking sheet.
  • Bake 20 minutes.
  • In the meantime, combine together sauce ingredients in a medium saucepan. Stir constantly as it comes to a boil; as soon as it boils, remove from heat or reduce to low if serving warm.
  • After chicken pieces are baked, use a spatula to put batches in the saucepan and coat with sauce. Move coated pieces to your serving platter.
  • Sprinkle chives over the top for garnish (if desired) and serve with frilly toothpicks.

1 lb chicken tenders, strips
8 teaspoons hot sauce
3 cups plain pancake mix
1 1/4 cups water
salt

Steps:

  • Heat oil in a pan so that the chicken will be covered completely by oil.
  • Cut chicken up into little bite size pieces.
  • Place chicken in bowl and toss with 2 teaspoons of the hot sauce.
  • In one bowl, place 1 cup of the pancake mix, and in another bowl place the remaining mix, 6 teaspoons hot sauce, and water and mix into a batter.
  • Dip the chicken pieces first in the plain mix, the dredge in the batter.
  • Next drop into oil and cook until well browned.
  • Place on paper towel and sprinkle with salt. Enjoy!
