TERIYAKI GLAZED SALMON WITH PINEAPPLE SALSA

Steps:
- Combine the salmon, pineapple juice, soy sauce, garlic, and ginger in a gallon-size zip close bag. Let it marinate on the counter for 30-60 minutes, turning it over once or twice to make sure the salmon is fully covered in the marinade.
- While the salmon is marinating, combine the soy sauce, pineapple juice, brown sugar, ginger, and garlic in a small saucepan over medium-high heat. Bring to a boil and reduce to simmer for 5 minutes, until slightly thickened. Whisk together the cornstarch and water. Pour the cornstarch mixture into the saucepan and simmer an additional 2 minutes, until thick enough to coat a spoon. Remove the sauce from the heat.
- Preheat the oven to broil and arrange an oven rack about 6 inches from the top of the oven. Line a large baking sheet with foil and place the salmon on the baking sheet. Broil for 8-10 minutes, depending on the thickness of the salmon. Remove from the oven. Plate the salmon, drizzle with a tablespoon or so of teriyaki sauce, and top with pineapple salsa. Enjoy!

- Preheat the oven to 375°F.
- In a bowl, combine the blackening seasoning: the paprika, garlic granules, thyme, cayenne, and black pepper. Rub the seasoning onto all sides of the salmon.
- Coat a baking sheet with the coconut oil spray, then place the seasoned salmon on the sheet and bake it for 25 to 30 minutes, or until the salmon is firm but not dry.
- While the salmon is baking, prepare the salsa. Combine all the salsa ingredients in a bowl and let the flavors meld at room temperature until the salmon is ready. Top the cooked salmon with half the salsa, and reserve the other half in the fridge.

- Combine soy sauce, vermouth, ginger, garlic powder, and brown sugar in a bowl, mixing well. Split mixture in half.
- Place salmon in a dish and cover with half the sauce mixture. Marinate for 45 minutes, turning every 15 minutes.
- Chop pineapple into small bite size peices. Don't forget to remove the core! Finely dice onions and chop cilantro.
- Combine pineapple, onions, cilantro, peppers, and salt in a large bowl. Squeeze lime juice over and stir. Set off to the side.
- In a small saucepan combine rest of sauce mixture and reduce to half over medium heat. Set this aside.
- In a large skillet or griddle spray with a nonstick spray and heat to a medium high temperature. Add the salmon and cook for about 5 minutes a side.
- Remove salmon to plates and top with sauce and salsa.

SALMON WITH FRESH PINEAPPLE SALSA
I don't remember where I learned to make this, but I'm sure I must have changed the recipe somewhat. This is my favorite way to fix salmon. The salmon can be prepared in any way. Grilling it is also wonderful! The preparation time includes the time to chill the salsa.

- For salsa, in a medium bowl, combine pineapple, pepper, onion, 3 T lime juice, cilantro, honey, jalapenos, garlic salt, and hot sauce.
- Cover and refrigerate for 2 hours.
- Preheat oven to 450°.
- Place salmon, skin side down, on a piece of foil, sprinkle with lime juice, garlic salt, and cumin, then put the foil on a rimmed cookie sheet.
- Bake for 10 - 15 minutes, depending on the thickness of the salmon.
- Remove salmon from the skin (This is easy - the skin just sticks to the foil!) and serve topped with salsa.

- Start by making the marinade. In a small saucepan add 1 cup water, brown sugar, soy sauce, honey, garlic and ground ginger. Heat over medium heat, whisking until sugar dissolves, about 2-3 minutes.
- Make the arrowroot (or cornstarch) slurry on the side. In a small bowl add ¼ cup water and 2 tablespoons of arrowroot and mix until combined. Pour mixture into the saucepan and whisk until your desired thickness is reached. This should take about 4-6 minutes. Turn off heat and set aside to cool.
- Once marinade has cooled, set aside about ½ cup to brush over salmon after it’s cooked. Place the salmon pieces in a small dish or bowl and cover with remaining marinade. Let sit for a minimum of 30 minutes and up to 3-4 hours.
- When ready to cook, grease and preheat your grill to medium/high heat, about 450 degrees. Place the marinated salmon on the grill, close the lid and cook for about 6-8 minutes until salmon becomes firm to the touch and you can easily lift the salmon from the grates without sticking.

- For marinade, in a small bowl stir together pineapple juice, 2 tablespoons of the brown sugar, rice vinegar, and soy sauce. Place salmon in a large resealable plastic bag set in a shallow dish. Pour pineapple mixture over salmon; seal bag. Marinate in the refrigerator for 30 to 45 minutes, turning bag occasionally.
- For a charcoal grill, arrange medium-hot coals around edge of grill. Place the plank on the grill rack directly over the coals for 5 minutes or until plank smokes and crackles. Place plank on grill rack over heat for 5 minutes or until smoking and crackling. Place salmon on plank. Place plank over unlit side of grill and pineapple, onion, and jalapeno over heat; grill as above.)
- Slightly cool pineapple, red onion, and jalapeno. For salsa, chop pineapple and onion; transfer to a medium bowl. Remove stem and seeds from jalapeno; finely chop. Add to pineapple mixture and toss to coat. Serve salmon with pineapple salsa.
