SHRIMP AND ANGEL HAIR PASTA
Easy, healthy, and FAST. This is a great weeknight dinner adapted from Woman's Day magazine, although its elegant enough for a dinner party. Just make sure to do your prep work ahead of time, since this comes together quickly. Great served with peas/onions side dish.

Steps:
- Cook pasta according to package instructions and drain.
- While pasta cooks, heat one tablespoon of the olive oil in a large skillet over medium-high heat. Add the garlic, shrimp (if using uncooked shrimp), and 1/2 tsp each of salt and pepper. Saute two minutes or until shrimp are barely pink and/or garlic is soft.
- Add broth and crushed red pepper. Increase heat to high.
- Add cooked shrimp (if not using uncooked shrimp in step 2).
- Cook on high heat for 2-3 minutes (just one minute if you used uncooked shrimp earlier), until shrimp are warmed through.
- Stir in lemon peel and juice.
- Put the pasta in a serving bowl, add the remaining tablespoon olive oil and 1/2 teaspoon each salt and pepper. Toss to coat.
- Add the shrimp mixture, parsley, and cheese (gradually so as not to clump up the cheese). Toss to mix and serve immediately.

- Cook pasta in a large saucepan of boiling water according to package directions for al dente. Drain, reserving 1/2 cup cooking water. Set aside.
- Heat oil in a large nonstick skillet over medium heat. Add onion, garlic and lemon zest; cook, stirring often, until the onion softens, about 5 minutes. Add shrimp and crushed red pepper; cook, stirring and turning the shrimp often, until the shrimp are just slightly translucent in the center, about 3 minutes. Add wine; cook, stirring constantly, for 30 seconds. Add the drained pasta, the reserved 1/2 cup cooking water and butter. Increase heat to medium-high; cook, stirring with tongs, until the sauce is creamy, 1 to 2 minutes. Remove from heat; stir in parsley, lemon juice and salt. Divide among 4 bowls; sprinkle evenly with Parmesan. Garnish with additional parsley, if desired.

This is a wonderful little recipe that I found on sparkpeople. It was submitted by KERYRL. Quick, diet friendly and so so good! I have used the frozen, uncooked shrimp for this and it worked great but fresh are def. better! Serve with a nice salad and you have a sensational dinner.

- Boil pasta to al dente.
- In a non-stick skillet combine shrimp, oil, pepper and garlic.
- Cook until shrimp is pink. (Do NOT overcook the shrimp).
- During the last 2 minutes of cooking add the wine and let the alcohol cook out.

Steps:
- In a medium skillet over medium high heat, melt butter with the oil, then add the shrimp and garlic.
- Cook uncovered for about 5 minutes stirring occasionally until shrimp are done.
- Remove shrimp to a plate and cover to keep warm.
- Add remaining ingredients to skillet except for 1/4 c of Parmesan cheese and the pasta.
- Bring to a boil, reduce heat and simmer for about 15 minutes, stirring occasionally.
- Cook pasta and drain.
- Toss shrimp and pasta into the skillet with sauce and distribute everything evenly.
- Serve topped with the remaining Parmesan cheese.
FIERY ANGEL HAIR PASTA

- Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain, reserving 1 cup of the pasta water.
- Stir the oil, parsley, lemon juice and lemon peel in a large serving bowl. Add the cooked pasta and toss with enough reserved pasta water, 1/4 cup at a time, to moisten. Season the pasta with salt and red pepper flakes, to taste. Sprinkle grated lemon peel over pasta for extra flavor and texture. Sprinkle with the Parmesan and serve.
- Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
- Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.

GINA'S SHRIMP SCAMPI WITH ANGEL HAIR PASTA

- Add the pasta to a large pot of boiling salted water, over medium heat, and cook until al dente.
- Meanwhile, heat a large 12-inch skillet over medium-high heat. Add the olive oil. Once shimmering and hot, add the shrimp and saute until just cooked through, about 2 to 3 minutes. Remove to a plate and reserve. Add the garlic and red pepper flakes to the skillet, then saute for until the garlic is fragrant, about 1 minute. Add the lemon juice and white wine and raise the heat to high. Let the liquid reduce for 2 to 3 minutes. Whisk in the butter, add a ladleful of the pasta cooking water and return the shrimp. Remove from the heat.
- Drain the pasta in a colander, and add it to the skillet along with the chopped parsley and toss. Add the lemon zest and adjust the seasonings with salt and pepper, to taste. Transfer to a serving platter and serve immediately.

- Get your pasta water going. Start the scampi sauce when you drop your pasta into boiling water to cook.
- Heat a large skillet over medium high heat. Add extra-virgin olive oil and melt the butter into it. Add shallots and cook a minute or 2, stirring constantly. - In medium non-metallic bowl, combine shrimp with all remaining ingredients except pasta.
- Marinate at room temp for 30 minutes.
- Drain shrimp and reserve marinade.
- Place reserved marinade in lg skillet and bring to boil over med-high heat; cook until reduced to 1/2 cup.
- While marinade is reducing, bring 8 cups water to boil; prepare to do next two steps simultaneously (will want to wait until sauce is nearly reduced to put pasta into boiling water).
- Cook pasta until tender-firm, approx 3-4 minute.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook as pkg. directs, reserving about 1 cup of cooking water before draining.
- Meanwhile, heat 2 Tbsp. of the butter and the oil in a large nonstick skillet over medium-high heat. Add garlic and cook over medium-low heat 30 seconds or until fragrant. Add shrimp, lemon zest, salt and crushed red pepper; saute over medium heat 3 to 5 minutes until shrimp is just cooked through. Stir in lemon juice; remove from heat.
- Pour shrimp mixture over drained pasta; add remaining 1/2 Tbsp. butter, the parsley and about 1/2 cup of the cooking water (more if desired). Toss to mix and coat.

PESTO ANGEL HAIR PASTA WITH JUMBO SHRIMP

- In food processor finely chop/blend oil with basil leaves, pine nuts, garlic and a pinch of salt to a creamy consistency.
- Add pesto mix to cooked buttered pasta along with cheese and mix well. Add additional pasta water* or olive oil if necessary. Olive oil makes it richer. (Use a large deep saucepan for easier mixing)

SHRIMP ALFREDO AND ANGEL HAIR

- 1) Boil the shrimp (you can thaw it or boil it straight from the freezer) for about 5 minutes. Make sure you took off the tails.
- 2) In a frying put the olive oil and heat.
- 3) Then place the onion, garlic, Cajun seasoning and black pepper with the shrimp. This is where you will saute the ingredients together to give the shrimp a great flavor.
- 4) Heat up the Alfredo sauce in a separate pot with the garlic powder.
- 5) Then cook the pasta in another pot.
- 6) When everything is finished, mix the Alfredo sauce and the shrimp with everything from the frying pan together. Place the shrimp and sauce on top of the pasta and enjoy!

- In a saucepan over medium heat, melt butter, stir in flour and cook for a few minutes until golden.
- Add milk and cream, bring to a gentle simmer and continue to stir until thickened.
- Add pesto, parsley, garlic, parmesan, salt, pepper, worcestershire and tabasco, and stir until blended.
- Reduce heat and keep warm, stirring occasionally.
- Cook pasta quickly in a large pot of boiling water (3 to 4 minutes, or until al dente).

- Heat remaining olive oil in a 10 inch skillet over medium heat. Cook garlic, stirring constantly, until the garlic is tender, about 1 minute. Do not let the garlic burn. Add shrimp, and cook for 3 to 5 minutes. Remove shrimp from the skillet, and set aside.
- Stir tomatoes, wine, parsley, and basil into the skillet. Continue cooking, stirring occasionally, until liquid is reduced by half, 8 to 12 minutes. Add shrimp, and continue cooking until the shrimp are heated through, about 2 to 3 minutes. Serve the shrimp mixture over the pasta. Sprinkle with Parmesan cheese.
