Steps:
- Mash bread and milk into paste in large bowl using fork. Mix in ground turkey, salt and pepper, using hands. Heat oil in 12-inch skillet over medium-high heat, until shimmering. Add onions, chili powder, tomato paste, garlic, cumin, oregano and red pepper flakes and cook until vegetables are softened and lightly browned, 8 to 10 minutes. Stir in turkey mixture and cook, breaking up any large pieces with a wooden spoon, until no longer pink, about 3 minutes. Stir in tomato sauce, scraping up any browned bits; transfer to slow cooker. Stir diced tomatoes with juice, beans, 3 tablespoons tequila, soy sauce, honey, and chipotles into the slow cooker. Cover and cook until turkey is tender, 4 to 6 hours, on Low. Let chili settle for 5 minutes, then remove fat from surface using a large spoon. Stir in remaining tablespoon tequila, lime zest, and lime juice. Season with salt, pepper, tequila and lime juice to taste and serve. Optional: garnish with diced avocado and sour cream.

TEQUILA LIME SAUCE
Steps:
- Combine the tequila, lime juice, shallots, garlic, cilantro, salt and pepper in a saute pan over high heat and bring to a boil. Reduce by half. Stir in the cream and simmer for 3 minutes. Whisk in the butter and remove from the heat. Continue whisking until all of the butter is incorporated. Serve immediately.
- Remove the rellenos from the oven. Spoon 1/4 cup of the sauce on each plate and place the rellenos directly on top. Garnish with the tortilla strips and the cilantro sprigs. Sprinkle Essence on the rim.
- Combine all ingredients thoroughly.

- Heat the oil over high heat in a large heavy pot and add the turkey meat. Cook until lightly browned, about 5 minutes, chopping down and stirring with the side of a heavy kitchen spoon to break up any lumps.
- Add the onions, garlic, sweet pepper, celery, jalapeno pepper, oregano, bay leaves, chili powder and cumin. Stir to blend well. Cook for 5 minutes.

This marinade has a little kick to it. It's best if used to marinate overnight. I slow cook chicken in a crock pot in marinate for 8 hours and then add to red chili. I won a chili cook off using this recipe.

- Mix all the ingredients together.
- Let the mixture sit, preferably overnight, but at least for 2 to 3 hours.
- Shake the mixture well, then reserve 1/2 cup to use as a baste.
- Marinate white meats such as chicken or pork for up to 2 hours. Fish and shellfish should marinate for 45 minutes. Shake the food often while it marinates.
- When grilling marinated food, use reserved marinade as a baste during the second half of cooking.

TEQUILA WHITE CHICKEN CHILI
I made this for our Halloween party and everyone commented on how great the chicken in it was. The secret is marinating it in tequilla and grilling it. My teenaged son and his friend enjoyed it (another surprised look from the friend when he said "it was good." It makes a lot of marinade, so I used the rest for fajitas!

- Zest 1 of the limes and sprinkle the lime zest over the chicken breast.
- Squeeze all 3 limes, and pour the juice over the chicken breasts.
- Pour the tequila over the chicken and.
- Sprinkle red pepper flakes over the chicken and marinate for 3 hours.
- Grill the chicken breast for 5 minutes and pour remaining marinade over the chicken breast on the grill.
- Turn the chicken breast and grill the second side for 4 minutes.
- Remove the chicken breast from the grill and cut into small cubes.
- Heat olive oil in stock pot and add onion and saute for about 10 minutes until translucent.
- Add the garlic, green chilis, cumin, cayene pepper, and cloves and saute for 10 minutes.
- Add beans, chicken,and chicken stock, and bring to a boil.
- Reduce the heat and simmer for 30 minutes.
- Ladle into bowls and serve with cheese, chopped green onions, avocado, and sour cream.

- Heat oven to 325°F. Place turkey breast, skin side up, in shallow roasting pan.
- In mini food processor, place garlic and jalapeño. Cover; process until finely chopped. Add chili powder, salt, pepper, oil, 2 tablespoons of the tequila and 2 tablespoons of the lime juice. Cover; process, using on-and-off pulses, until smooth.
- Loosen turkey skin, using fingers or spoon; rub garlic mixture under and over turkey skin. Insert ovenproof meat thermometer so tip is in thickest part of breast and does not touch bone.
- Pour orange juice, broth and remaining 1/4 cup each tequila and lime juice into roasting pan.
- Roast uncovered 2 hours to 2 hours 30 minutes or until thermometer reads at least 165°F. Place turkey on warm platter; cover with foil. Let stand 15 minutes before carving. Spoon pan juices over turkey; garnish with lime wedges.

- Use pit BBQ or place a pan in the bottom of your BBQ to catch the drips.
- Remove backbone from turkey and crack the breast bone so that turkey will lay flat on the grill.
- Mix next 3 ingredients and marinate turkey several hours or overnight.
- Remove turkey from marinade, sprinkle with salt and pepper to taste.
- Place on grill- not directly on top of coals- breast side up.
- Cut whole lime in half, squeeze over turkey to baste every 20 minutes.
- Replace coals to keep temperature at 350-375.
- Turkey is done when thermometer reads 165.
- Tent with foil and let set for 15 minutes before carving.
