SHRIMP AND TASSO GRAVY OVER YELLOW GRITS

- For the grits: Bring the milk, salt, butter and 6 cups water to a boil over medium heat in a heavy-bottomed pot. Slowly pour in the grits, stirring constantly. Reduce the heat and continue to stir for several minutes to make sure the grits do not scorch. Continue to cook the grits for about 20 to 25 minutes, stirring frequently. Keep warm until ready to serve. If they become too thick, add warm water or milk to thin.
- For the tasso gravy: Cook the leeks in 1 tablespoon butter in a medium saucepan until soft. Add the chili powder, paprika, basil, oregano, black pepper, seasoning salt, thyme, garlic and seafood seasoning, stirring to release the flavors. Add the clam juice and tomato juice and simmer for 10 minutes. Add the half-and-half and simmer for 10 minutes. Make a roux with the flour and the 3 tablespoons melted butter in a small bowl. Slowly add it to the gravy mixture, stirring vigorously. Keep stirring until the mixture thickens. Remove from heat and add ham.
- For the shrimp: Saute the shrimp in the butter in a large saute pan until they start to turn pink. Add the tasso gravy and simmer for 1 to 2 minutes.
- To serve: Top each plate with some grits and spoon the shrimp and tasso gravy over the top. Serve immediately.
SHRIMP & GRITS CANAPES
We've decided to recreate that recipe into an appetizer. Our challenge this time was to keep it 12 ingredients or less. The sky's the limit so long as we keep it under 12 ingredients. Easy Peasy. Right? This is what we created.

- 1. In a small sauce pan with a tight fitting lid over medium-high heat, bring 2 cups of water or chicken stock and grits to a boil, stirring often.
- 2. Turn the heat down to medium, add parsley and scallions, place lid on pan and continue to simmer the grits until they are tender, about 20 minutes, stirring occasionally. Remove from heat and set aside to cool.
- 3. Meanwhile, preheat the oven to broil and while the oven is preheating, place a baking sheet inside to heat with the oven. In a small bowl, coat the shrimp in Cajun seasoning. Carefully remove the baking sheet from the oven and, in a single layer, add the shrimp. Place the pan back in the oven and broil the shrimp for 3-5 minutes or until their color changes and they start to curl. Remove from the pan and set aside.
- 4. Now turn the oven down to 400° F. With non-stick cooking spray, coat the mini muffin tin(s). Fill each tin about half way full with the grits mixture. Bake in the oven for about 15-20 minutes or until the edges are slightly brown. Remove from the oven and cool. After cooled, remove from tins.
- 5. In a food processor, grind tasso ham until finely chopped. Next add the cream cheese and blend into the ham creating a mousse.
- 6. To assemble, place a dollop of tasso ham mousse on top of each grit cake and top with one roasted shrimp. Garnish with a chive, optional.
- 7. Note: Tasso ham is just a smoked ham piece slathered in cajun seasonings. If Tasso ham is unavailable in your area, you can purchase a small piece of smoked ham and grind it with Cajun seasoning to create the spicy mousse.
GRITS WITH TASSO

Steps:
- Bring 4 cups water to a boil in a 4-quart heavy saucepan and stir in grits and salt. Return to a boil, stirring frequently.
- Reduce heat and simmer grits, uncovered, stirring occasionally, until very thick and most of water is absorbed, about 10 minutes.
- Reduce heat further and cook grits at a bare simmer until cooked through, about 1 hour 10 minutes, stirring frequently and adding remaining 1 1/2 cups water (1/4 cup at a time) whenever grits become very thick.
- Add tasso, butter, and salt and pepper to taste, stirring until butter is melted.
SAVORY SHRIMP AND GRITS CUPCAKES
How adorable are these? What a unique way to present shrimp and grits. The flavors are fab. You could use the ham mousse a spread alone it's that tasty. You can bet your guests will be amazed when you serve these "cupcakes" at your next dinner party.

- 1. Preheat oven to 400 degrees F.
- 2. Mix together flour, baking powder, baking soda, and salt.
- 3. Add grits, eggs, melted butter, cheese, scallions and milk until just combined. **The dough will be VERY sticky. This is normal.
- 4. Drop by spoonfuls into lightly greased (regular sized) muffin tins. I think these would be great as mini muffins as well but have not timed the baking for this change. Bake for about 15 minutes** or until golden brown. A toothpick inserted in the center will come out clean. **Oven times may vary
- 5. Grind tasso ham in a food processor until finely chopped.
- 6. Cream together the cream cheese and the ham mixture.
- 7. Put a dollop of tasso ham mousse on top of each cupcake and top with one grilled or roasted shrimp.
- 8. NOTES: We found that leftover grits or grits which had come to room temperature worked the best in the dough formation. We also like these muffins best served fresh from the oven.
SHRIMP AND TASSO GUMBO

- Simmer shrimp shells and water, uncovered, in an 8-quart pot until liquid is reduced to about 12 cups, 15 to 20 minutes, then pour through a sieve set over a large bowl and discard shells.
- Stir together oil and flour in a 10-inch heavy skillet (preferably cast-iron) with a flat metal or wooden spatula, then cook over moderately low heat (do not use a high-BTU burner), scraping back and forth constantly (not stirring) until roux is the color of milk chocolate, 30 to 45 minutes. (As roux cooks, it may be necessary to lower the heat to prevent scorching.) Add onions, celery, and bell pepper and cook, scraping back and forth occasionally, until onion is softened, about 8 minutes.
- Scrape roux mixture into cleaned 8-quart pot, then add shrimp stock and bring to a boil, stirring occasionally. Reduce heat, then add tasso, salt, and cayenne and simmer, uncovered, 30 minutes. Add okra and simmer until tender, 5 to 8 minutes. Stir in shrimp and simmer until just cooked through, 2 to 3 minutes. Stir in scallion greens and salt to taste.
SHRIMP AND GRITS IN TASSO GRAVY RECIPE - (4.4/5)

- Saute' chopped bacon or ham in a skillet over medium heat in 1 tablespoon oil until cooked, add shrimp in for the final 4 minutes, cooking them through. Remove bacon and shrimp with a slotted spoon to a colander lined with paper towels. Add vinegar and brown sugar to the pan drippings and cook about 1 minute until reduced by half. Add stock and cook over high heat until reduced again by half. Add salt and pepper to taste. Remove skillet from heat and add butter, stirring until melted. To serve, mound cooked grits on plates, top with shrimp and crumbled bacon or ham. Drizzle sauce over grits and garnish with chopped chives.
COPYCAT SHRIMP AND TASSO PASTA
This is a copycat recipe of Copeland's Shrimp and Tasso Pasta. It tastes identical to their dish. My family loves it. This is just one serving, so i wind up quadrupling the recipe. (Good for one person or for the whole family.)

Steps:
- Melt butter in a skillet.
- Add tasso and sauté to render fat.
- Add shrimp and cook until pink and curled, taking care not to burn the butter.
- Add Alfredo sauce and stir to incorporate. Add heavy cream and bring to a boil. Do not allow the sauce to reduce.
- Pour heated pasta in a serving bowl.
- Pour sauce over pasta.
- Top with green onion and cheese.
