Steps:
- Fill a 3 quart sauce pan approximately ½ full with salted water and bring to a boil.
- Drop trimmed green beans into the water and bring back up to a boil. Cook gently for 5-6 minutes or until tender.
- Drain the green beans and return to the pan, adding butter, chopped tarragon, garlic powder, salt and pepper. Stir to melt the butter and combine. Serve immediately.

- Mix juice, dressing and tarragon in shallow baking dish with whisk until well blended. Add fish; turn to evenly coat both sides of each fillet. Refrigerate 1 hour to marinate.
- Heat oven to 450ºF. Remove fish from marinade; pour marinade into small saucepan. Return fish to baking dish.
- Bake fish 15 min. or until fish flakes easily with fork. Meanwhile, bring water to boil in medium saucepan. Add rice, beans, salt and pepper; cover. Cook on low heat 5 min.; stir. Remove from heat; let stand 5 min.
- Meanwhile, bring marinade to boil; simmer on low heat 5 min. Add sour cream; cook until heated through, stirring occasionally with whisk. Serve over fish and green bean pilaf.

- For the rice, in saucepot over medium heat, melt butter, brown the pasta and pine nuts, add rice and stir a minute more
- Season the rice with salt and pepper, add stock, bring to a boil, cover, reduce heat to low, and cook 15 minutes
- Remove from heat, let stand 10 minutes, fluff with fork and serve
- For the beans, boil in salted water 3 to 4 minutes, place in ice water bath to shock, then drain and dry
- Heat a skillet over medium low heat with butter, melt, then add shallots, salt and white pepper and soften
- Add stock and cook at low boil until very tender
- Turn the heat off, add green beans and cover
- Reheat over medium flame when ready to serve
- For the chicken, heat about ¼ cup EVOO, 4 to 5 turns of the pan, in a large skillet over medium to medium-high heat
- Season the chicken with salt and pepper, then lightly brown on both sides, about 5 minutes, and remove to platter
- Add about 2 tablespoons EVOO, 2 turns of the pan, and the butter, melt and bubble, then add garlic and swirl a minute, grate in some lemon zest and nutmeg, season with salt and pepper, add a sprinkle of flour, and stir
- Add wine, stock, cream, and tarragon, thicken a bit, stir in mustard and slide chicken back in to cook through
- To serve, add lemon juice
- Serve chicken alongside the rice and green beans

- In a saucepan over high heat in 1 inch of water, heat green beans to boiling.
- Reduce heat to low, cover and simmer 5-10 minutes or until green beans are tender crisp; drain.
- In a bowl combine the mayonnaise, tarragon vinegar, salt, mustard and pepper; mix well.
- I like to put the green beans and sliced onions in a large zip-lock bag (less clean up) along with the tarragon dressing mixture, fumbling for dressing to coat green beans.
- If you don't have a large zip-lock bag you can place the green beans and sliced onions in a large dish and toss to coat with the tarragon dressing.
- Cover and refrigerate 2 to 3 hours hours for flavors to blend before serving.
- Garnish with freshly topped tarragon.
- Serve and Enjoy!

- Bring the water, butter, salt and green beans to a boil in a Dutch oven or large deep skillet. Cover and steam over medium-high heat until the vegetable is brightly colored and just tender, 5 to 10 minutes.
