1/2 pound good black olives, such as kalamata, pitted and diced
3 tablespoons capers, drained
8 anchovy fillets
1 garlic clove, minced
1/2 cup good olive oil
1 tablespoon freshly squeezed lemon juice
2 teaspoons Dijon mustard
1 teaspoon minced fresh thyme leaves
1 tablespoon chopped fresh parsley leaves
1 baguette, sliced and toasted

Steps:

  • Combine the olives, capers, anchovies and garlic in a food processor fitted with a steel blade, and pulse 3 times. Add the olive oil, lemon juice, mustard, thyme and parsley and process until chunky.
  • Serve on toasts.

1 ¾ cups whole, pitted kalamata olives
1 (2 ounce) can anchovy fillets, rinsed
2 tablespoons capers
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
3 tablespoons lemon juice
4 tablespoons olive oil

Steps:

  • Combine garlic, olives, anchovies, capers, thyme, rosemary and lemon juice in an electric blender. Slowly drip the olive oil into the blender while you are blending the ingredients together. Blend until a paste is formed.

Based on a delicious and savory recipe from Madge Rosenberg's wonderful cookbook, The Best Bread Machine Cookbook Ever - Ethnic Breads. She says, "Tapenade is a coarse puree of olives, anchovies, and garlic that can fill and flavor eggs, pasta, or beans or be spread on toast. With the bread machine, the tapenade is incorporated into the bread, which can be toasted and used as a base for hors d'oeuvres. Since Tapenade Bread is garlicky, top it very simply with mild goat or cottage cheese or with hard-cooked eggs or cold meat." The default measurements are for a small 1 pound loaf; I have placed measurements for a large 1 ½ pound loaf in parentheses. In addition to a bread machine, this recipe requires a food processor. I estimated a 4 hour bread cycle, although your machine might be quicker! (I also took the liberty of correcting the 1 ½ pound measurement for sugar from 3 tablespoons to 3 teaspoons.) Steps:

  • Make the tapenade by processing the olives, anchovy fillet(s), capers, garlic, olive oil, and pepper in a food processor.
  • Add all ingredients including the tapenade to your bread machine in the order recommended by its manufacturer, and select the bread cycle.

10 cloves garlic
2 lemons, juice of
1 (10 ounce) can black olives
1 cup chopped parsley
8 green onions, coarsely chopped
1 tablespoon chopped basil
1 cup walnuts
2 cups finely chopped grated parmesan cheese
3/4 cup olive oil
1 loaf baguette, sliced in thin rounds

Steps:

  • Press the garlic into the lemon juice or if you don't have a garlic press, mince and put it into the lemon juice, while you prepare the other items.
  • Put the rest of the ingredients into a food processor and process into a finely chopped paste.
  • Put in a bowl and mix in the garlic, lemon juice and olive oil well.
  • Serve with bread slices.

Bottled Italian Vinaigrette dressing
White bread, baquette, or Italian loaf
Garnish: chopped scallions

Steps:

  • Drain excess liquid off beans. Heat over medium low heat with a touch of butter. Cook until slightly softened. Add 2 to 3 tablespoons of vinaigrette, salt and pepper to taste. Pulse in food processor or mash in pot with a hand masher.
  • Slice bread, remove crust (if necessary), brush with olive oil. Sprinkle with salt and pepper and bake at 275 degrees until toasted or under broiler on both sides.
  • Spread 1 to 2 tablespoons bean tapenade and garnish with scallions.

Steps:

  • Mash the olives, anchovies, and capers with a mortar and pestle, marble by tradition. The rule of thumb is a little more olives than capers and anchovies, but adjust according to taste. Add very little salt and pepper. Drizzle in the oil until creamy.

1 1/2 cups firmly packed drained Niçoise olives (available at specialty foods shops and some supermarkets) or other brine-cured black olives, patted dry
4 flat anchovy fillets
1/4 cup drained chunk light tuna (preferably packed in oil)
3 tablespoons drained bottled capers
3 tablespoons extra-virgin olive oil

Steps:

  • Crush the olives lightly with the flat side of a large knife on a cutting board, discard the pits, and in a food processor purée the olives well. Add the anchovies, the tuna, the capers, and the oil and purée the mixture well. Serve the tapenade as a spread for toasted French bread slices or thin slices of chilled daikon radish as an hors d'oeuvre.

3 tablespoons capers
½ cup minced onion
1 clove garlic, minced
2 tablespoons chopped fresh parsley
¼ cup grated Parmesan cheese
2 tablespoons olive oil
2 tablespoons balsamic vinegar
½ teaspoon salt
½ teaspoon ground black pepper
¼ cup chopped red bell pepper

Steps:

  • Place the olives in a food processor or blender; pulse the olives until slightly chopped; remove to a bowl and set aside.
  • Combine the capers, onion, garlic, parsley, Parmesan cheese, olive oil, balsamic vinegar, salt, black pepper, and about half of the red bell pepper in the food processor or blender; blend until finely chopped. Add to the olives and mix. Sprinkle remaining red pepper over the mixture.

2 cups pimiento-stuffed green olives
½ cup pitted black olives
1 (6 ounce) jar marinated artichoke hearts, undrained
2 hot banana peppers, seeded and cut into pieces
1 red bell pepper, seeded and coarsely chopped
2 cloves garlic, minced
2 tablespoons capers, drained and chopped
½ teaspoon dried basil
1 tablespoon lemon juice
¼ cup olive oil

Steps:

  • In a food processor or blender, chop green olives, black olives, and artichoke hearts in batches until just spreadable; pour into a mixing bowl. Puree banana peppers and red bell pepper until just spreadable; mix into olive mixture.
  • Stir in garlic, capers, basil, lemon juice, and olive oil until well blended. Tapenade will keep in refrigerator for up to 1 week.

  • Remove from heat and allow to cool down in pan until lukewarm or room temperature. Add to bowl of a small food processor.
  • Pulse several times, stopping to scrape down the sides of the bowl, until the mixture becomes a coarse paste. Transfer to a container and either use immediately (if room temperature) or chill in fridge. Tapenade can be made up to a day in advance and kept in a covered container in the fridge.
  • Prepare Dough: In large container (with non-airtight lid), whisk together warm water, yeast, and salt. Slowly add in flours, mixing with wooden spoon. When dough becomes too difficult and thick to stir, mix together with hands until all the flour comes together and dough is uniform. The dough should be very wet and sticky. Do not knead. Cover lightly and allow to rise at room temperature for at least two hours. Place in refrigerator and allow to chill overnight.
