GRILLED CHICKEN DRUMSTICKS WITH SAVORY CARAMEL
Cooking the chicken legs over indirect heat gives them time to render fully and start to crisp so they won't become gluey when glazed.

Steps:
- Prepare a grill for high indirect heat (for a gas grill, leave one or two burners off; for a charcoal grill, bank coals on one side); oil grate. Bring garlic, lemongrass, sugar, vinegar, red pepper flakes, cumin, black pepper, and 1/2 cup water to a boil in a small saucepan, stirring occasionally, and cook until reduced to 1/2 cup, about 8 minutes. Let cool and stir in fish sauce. Transfer half of sauce to a small bowl and set aside for serving.
- Season chicken with salt. Place over indirect heat and cover grill with vent open (if you have one) and positioned over chicken. Grill, turning once or twice, until skin is browned and crisp and meat is nearly cooked through, 25-30 minutes. Uncover and move chicken to hotter part of grill. Continue to grill, turning often and basting with remaining sauce, until lacquered and lightly charred in places, 6-8 minutes longer. Serve with reserved sauce alongside.

I use this marinade on grilled chicken drumsticks. I served it alongside homemade tortillas and guacamole, as well as Spanish rice.

Steps:
- Mix yellow onion, white onion, and garlic together in a bowl.
- Season chicken drumsticks with cilantro, oregano, cumin, thyme, garlic powder, salt, and pepper. Place chicken into the bowl with onion mixture. Squeeze lemon juice over the chicken, slice the rinds, and place into the same bowl. Cover and let sit in a refrigerator, 20 to 24 hours.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Cook on the preheated grill until an instant-read thermometer inserted into a drumstick reads at least 180 degrees F (82 degrees C), 30 to 45 minutes.

- Place chicken drumsticks into a resealable bag; add olive oil to coat. Add ranch dressing mix, cayenne pepper, salt, and black pepper. Close the bag and mix until drumsticks are covered. Let marinate in the refrigerator, 30 minutes to 1 hour.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from the bag; discard marinade.
- Cook on the preheated grill until an instant-read thermometer inserted into a drumstick reads at least 165 degrees F (74 degrees C), 20 to 25 minutes. Remove from the grill and let sit for 5 to 10 minutes before serving.

SWEET AND STICKY GRILLED DRUMSTICKS

Steps:
- Bring wine, sugar, soy sauce, ginger, and garlic to a boil in a saucepan.
- Reduce heat, and simmer until mixture has thickened to the consistency of honey, 35 to 40 minutes.
- Let cool.
- Using a sharp knife, make three diagonal slashes through the skin and flesh on both sides of each drumstick (this will help the flavors permeate the meat).
- Preheat grill to medium-low. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 7 seconds.)
- Place drumsticks on grill, and brush with sauce.
- Close cover, and grill 4 minutes.
- Flip chicken, and brush with sauce.
- Continue to cook, flipping and brushing with sauce every 4 to 5 minutes, until cooked through, about 20 minutes total.
- Season with salt.

DELICIOUS EASY ASIAN GRILLED DRUMSTICKS
This is SO good! Plan ahead the chicken needs to marinate about 8 hours. This chicken is delicious both hot or cold! If you are doubling this recipe, and I suggest you do, this chicken is very good, prepare two separate marinades in two bowls and use two separate bags for marinating (10 drumsticks in each bag).

- In a bowl whisk together the first 8 ingredients.
- Add in green onions.
- Place the chicken drumsticks in a large resealable bag.
- Pour the marinade on top and seal bag; turn to coat evenly with marinade.
- Refrigerate for a minimum of 8 hours, turning occasionally.
- Set grill to medium heat.
- Remove the chicken and discard the marinade.
- Place the chicken on a baking sheet, and pat any excess marinade off with a paper towel.
- Rub the drumsticks with peanut oil on all sides.
