OREO BALLS
A five-ingredient treat for the chocolate sandwich cookie enthusiast...what's not to love? These truffles encase a soft cookie filling with a chocolatey shell. They're fun to decorate with cookie crumbs or sprinkles, depending on the occasion.

- Line a baking sheet with parchment paper. Pulse the cookies in a food processor to fine crumbs. Remove 2 tablespoons crumbs to a small bowl and reserve. Add the cream cheese and pulse until it just comes together. Transfer to a large bowl and knead a few times until completely combined.
- Roll into 24 balls, each about 2 heaping tablespoons. Transfer to the prepared baking sheet and refrigerate until chilled through, about 45 minutes.
- Put the semisweet chocolate in a medium heatproof bowl with 1 tablespoon oil. Put the white chocolate chips in another medium heatproof bowl with the remaining tablespoon oil. Melt the chocolate mixtures one at a time, stirring occasionally, over a double boiler until smooth.
- Drop one truffle at a time into the semisweet chocolate mixture, using two forks to evenly coat. Tap any excess chocolate off, then return to the baking sheet. Drizzle with the white chocolate mixture, then quickly sprinkle with the reserved cookie crumbs. Continue until all the truffles are coated and decorated. Return to the refrigerator to set, about 5 minutes. Serve chilled.

- Mix cream cheese and cookie crumbs until well blended. I like to crush the Oreos in a food processor and then add the cream cheese and process it together. It can also be done by hand though.
- Shape into 48 (1-inch) balls; place in single layer in shallow pan. Some readers have stuck toothpicks in the top before freezing for easier dipping later. Freeze for at least 20 minutes. They can be frozen for longer. Dip balls in melted coating (see note); I do this by using a fork and tapping the fork on the bowl of my candy coating to remove some of the extra coating. If you used the toothpick option dip balls and then gently remove the toothpick and fill in the hole with melted candy coating. Place in shallow waxed paper-lined pan, allowing excess coating to pool at bottom of each ball.
- Chill balls until coating is set.
- Decorate with remaining ingredients as shown in photo. You can use the candy coating to adhere the hat to the head. Place in the fridge immediately to set up the decorations.
- Refrigerate 1 hour or until firm. Keep refrigerated.

NO-BAKE OREO TRUFFLE SNOWMEN
These cookies-and-cream snowman truffles are almost too cute to eat -- almost. Coating them in melting wafers gives the snowmen a smooth, white finish that looks like what you'd get at a chocolate store, but is easy to achieve at home.

- Line a baking sheet with parchment paper.
- Process the cookies in a food processor to fine crumbs. Transfer to a medium bowl and add the cream cheese. Stir and work with a wooden spoon until smooth and completely combined.
- Roll about two-thirds of the mixture into 16 balls (about 1 tablespoon each) and put on the prepared baking sheet. Roll the remaining mixture into 16 smaller balls (about 1 teaspoon each). Freeze until just beginning to firm up, about 15 minutes.
- Press a small truffle onto each large truffle to make snowmen, then press a lollipop stick through the top of each snowman so that it sits up with the stick coming out of the head (it's ok if the truffles crack during this step; just form them back together with your fingers). Put the baking sheet in the freezer while you heat the melting wafers.
- Microwave the melting wafers and 1 teaspoon coconut oil in a microwave-safe bowl on 50 percent power in 30-second intervals, stirring between each, until melted. (Alternatively, melt in a double boiler.) Add another teaspoon of coconut oil if the mixture is too thick.
- Holding a snowman by the stick, dip it into the white coating mixture to coat completely, letting as much excess drip off as possible. Return to the baking sheet. While the coating is still wet, press an orange candy onto the head for a nose. Press 2 mini candy-coated chocolates onto the sides of the head for earmuffs. Repeat with the remaining snowmen. Refrigerate until the coating is set, about 5 minutes.
- Wrap a sour belt strip around the neck of each snowman, using a dot of the coating mixture as glue to secure it.
- Combine the chocolate chips, 1 teaspoon coconut oil and 1/2 teaspoon black food coloring in a small microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until melted. Transfer to a piping bag or a resealable plastic bag and snip off the corner. Pipe on the eyes and a band connecting the earmuffs over the top of each head. Pipe 3 buttons down the front of each snowman's body. Refrigerate until completely set, about 10 minutes.

- Start by making your Oreo truffles. Line a pan with wax paper and set aside. Place your Oreos into a sandwich bag and crush with a rolling pin. You'll want very small piece in order to facilitate the rolling of the truffles. Place your crushed Oreos in a bowl and add cream cheese. Mix and then shape into 1.5 inch spheres. Place gently on lined pan and refrigerate for about one hour. Once the truffles are chilled, remove from refrigerator and melt candy melts. To do so, place candy in a microwave-safe bowl and add coconut oil. Microwave in 30-second intervals until completely melted, mixing in-between each interval. Dip each truffle in the melted candy and coat evenly. Place back onto lined pan and poke a hole at the top with a toothpick. Refrigerate for 30 min. While the truffles chill, it's time to shape and decorate the fondant pieces. Roll 8-10 fondant spheres, about 1 inch in size. Roll another 8-10 fondant spheres, about ½ an inch in size. On the one inch fondant spheres, draw three buttons with your black marker. On the smaller spheres, draw 2 eyes. Add a triangular fondant piece in the middle, with your orange fondant. This will serve as the snowman's carrot nose. Remove truffles from the refrigerator. Assemble by inserting a toothpick through your 1 inch fondant sphere and then inserting it into the Oreo truffle. MELTING SNOWMAN OREO BALLS

- Line a cookie sheet with parchment paper.
- Place the 18 Oreo cookies in the bowl of a food processor and pulse until finely ground.
- Add the cream cheese and pulse until the mixture is well combined and smooth.
- Using a small ice cream scooper, scoop some dough into your hands and roll into a ball, place onto cookie sheet. Repeat steps until all dough is used.
- Place the cookie balls in the freezer until well chilled, at least 1 hour.
- Place 24 Oreo cookies onto a cookie sheet covered with parchment paper.
- Using a microwave or double boiler, melt the white chocolate melting wafers. If you are microwaving the white chocolate, melt at 20-second intervals, stirring in between until the chocolate is melted and smooth.
- Gradually stir the white chocolate until completely smooth.
- Spoon about 1 ½ C of melted white chocolate into 1 of the piping bags.
- Place the truffle onto the top of the oreo.
- Remove the oreo truffles from the refrigerator.
- Cut the tip off the disposable piping bag and pipe a melted snow pile onto the top of the cookie
- Place the toothpick into the middle of the oreo truffle so that it's easy to dip the truffle into the white chocolate.
- Dip the oreo truffle into the remaining melted white chocolate.
- lace the truffle onto the top of the oreo.
- Carefully push a mini Reese cup onto the top of the oreo truffle.
- Place two of the black sprinkles on the middle center for the eyes.
- For the buttons, place two more black sprinkles on the top side of the white chocolate on the oreo.
- Melt the orange candy melts and scoop into the last piping bag.(use the same method as for the white chocolate melts
- Cut the tip off and pipe a small cone for the nose. Allow to dry completely before enjoying it!
- Allow the cookies to dry completely. Then enjoy!
