SWEET CHILI-GLAZED SALMON, SUGAR SNAPS AND RICE
Here it is: a recipe that requires absolutely no chopping and makes an entire, really tasty, well-balanced meal in just four incredibly quick steps. We're not overselling this, either. All you do is start the rice on the sheet pan, add the salmon brushed with a glaze you whisk together, and later add the sugar snaps.

Steps:
- Preheat the oven to 425 degrees F. Coat a sheet pan with cooking spray.
- Combine the rice, 2 1/2 cups water and 1/4 teaspoon of the salt on the sheet pan. Bake for 20 minutes.
- Meanwhile, whisk the sugar, lime juice, fish sauce, chili-garlic sauce and cornstarch in a small bowl to make the glaze. Combine the sugar snaps with the oil and 1/4 teaspoon of the salt in a separate bowl.
- Season the salmon with the remaining 1/4 teaspoon salt. After the rice has cooked for 20 minutes, place the salmon, skin side down, on the sheet pan (directly on top of the rice) and brush it with about one-third of the chili glaze. Roast for 5 minutes, again brush the salmon with about one-third of the glaze and add the sugar snaps to the pan. Roast another 5 minutes and brush with the remaining glaze. Roast until the salmon is just translucent in the center and the sugar snaps are crisp-tender, about 5 minutes more.
SWEET MUSTARD-GLAZED SALMON FOR THE GRILL
Wild-caught salmon is a huge perk of living here in the Pacific Northwest, and this is one of my favorite ways of preparing it. The sweetness of the brown sugar mixed with two kinds of Dijon mustard compliment the salmon beautifully. I have used both light and/or dark brown sugars and only one kind of Dijon mustard with great success. I've also baked this in the oven for 20 minutes at 375*, but grilling adds a lot of flavor to the salmon.

Steps:
- Heat oven to 425°F.
- Line a rimmed baking sheet with aluminum foil and spray with cooking spray.
- Spread sweet potatoes and broccoli onto prepared pan and drizzle with 2 tablespoons of olive oil, or more as needed to fully coat the vegetables. Toss the vegetables in the oil and season with salt and pepper, to taste.
- Roast for 10-15 minutes, or until potatoes are almost fork-tender.
- While potatoes and broccoli are roasting, prepare the glaze for the salmon. In a small bowl, whisk together maple syrup, mustard, ¼ teaspoon salt, and ¼ teaspoon pepper.
- Remove vegetables from oven and turn oven setting to BROIL on "high." Spread broccoli and potatoes to outer edges of sheet pan to make room in the center for the fish.
- Place salmon in center of tray, leaving at least ½-inch of space in between each fillet so that they cook evenly. Brush glaze on top of each piece of salmon.
- Broil for 7-10 minutes, or until salmon flakes easily with a fork and top is browned and crispy. Potatoes and broccoli should be roasted and tender as well. The total broiling time will depend on the size and thickness of your fish.

- In a shallow baking dish, combine sweet chili sauce, orange marmalade, and soy sauce. Whisk to combine and add minced garlic and green onions. Reserve 1/4 cup of the marinade. Sprinkle the salmon with salt and pepper and place facing down with the skin side up in the dish and allow to marinate for at least one hour.
- Preheat the broiler and make sure the oven rack is 5-6 inches down and line a baking sheet with aluminum foil. Spray with cooking spray. Take the salmon out of the pan and shake off excess marinade. You don't want the marinade to pool up on the foil. Place the salmon fillets skin side down on top of the aluminum foil and broil for 6-10 minutes until browned and opaque in the center.

- Arrange salmon skin side down on a large piece of foil set on a sheet pan (make sure you have enough foil to completely wrap the salmon up). Fold the edges of the foil up slightly to keep the sauce from running out.
- Shake together the maple syrup and soy sauce, then drizzle all over the salmon. Seal the foil so the sauce + salmon are enclosed. You can marinate the fish at this point for 30 min- 2hours, or put it directly into the oven.
- Bake for 15-20 minutes, checking fish with an instant read thermometer. For well done, cook to 145°F. For medium, cook to 125°F. If you have individual fillets, they may be done quicker, so be sure to check them earlier.
