POTATO CABBAGE SOUP WITH HAM
I found this in a magazine and fell in love with it. It is a great thing to have for leftover ham, quick to fix, and very tasty.

Steps:
- Peel potatoes and cut them into 1/4" dice. Cut carrots into 1/4" dice. Coarsely chop scallions. Cut ham into 1/4" dice. Shred cabbage.
- In a medium saucepan, melt butter over medium heat until hot but not smoking. Add potatoes, carrots and scallions and saute until scallions are wilted, about 5 minutes.
- Stir in flour and cook, stirring, for 1 minute.
- Add cabbage, water, broth, dill and pepper, and bring the mixture to a boil over medium-high heat. Reduce heat to medium-low, cover and simmer 20 minutes, stirring occasionally.
- Just before serving, gently mash vegetables with a potato masher to thicken liquid if desired. Stir in the ham. .
- (Notes: I don't mash the potatos because I prefer potato soup that way, and it is already pretty thick for me. I also have used chicken bullion and water to make the broth called for, and it has worked fine for me.).

DOT'S HAM, CABBAGE, AND POTATOES
This was a recipe my Mom had and we ate it every St. Patrick's Day. An alternative recipe for St. Patrick's Day for those who don't care for corned beef and cabbage. Cooked together in one pot and boy is it juicy! My mom is Irish and hated the traditional corned beef, potatoes, and cabbage version. She got the basis for this recipe from her Italian Mother in Law. Add a nice warm crusty roll, butter, and a pint of Guinness or Pinot Noir and you got yourself a hearty meal to celebrate the Irish!

SPICED HONEY MUSTARD COTTAGE HAM WITH PURPLE CABBAGE
After both cooking processes, the cottage ham comes out very tender and juicy, and the honey mustard glaze adds an incredible contrast of flavors. Purple cabbage adds a nice pop of color and is a classic side to pair with pork. Garnish with fresh flat-leaf parsley leaves and serve with roasted or boiled potatoes and dinner rolls. Leftovers are great for ham sandwiches later in the week!

Steps:
- Place cottage ham in a large Dutch oven. Add cider, onions, thyme, garlic, bay leaves, cinnamon sticks, peppercorns, cloves, and enough water to cover cottage ham entirely. Cover, and place on high heat; bring to a boil, about 10 minutes. Once boiling, reduce heat, and cook on a low simmer for 1 hour and 30 minutes.
- While ham is simmering, preheat the oven to 350 degrees F (175 degrees C). Cut cabbage into quarters, remove core, and cut into 1-inch slices. Place cabbage slices in a large bowl. Add olive oil, salt, and pepper; toss to coat.
- Stir together honey mustard, stone-ground mustard, and brown sugar in a medium bowl. Once cottage ham has simmered, transfer ham to a roasting pan. Brush honey mustard mixture over entire cottage ham.
- Bake in preheated oven until glaze has melted and a thermometer inserted in thickest portion registers 145 degrees F (63 degrees C), 20 to 30 minutes.
- While ham is baking, reserve 1 1/2 cups of the cooking liquid in Dutch oven; discard solids and remaining liquid. Place Dutch oven over medium-high; add sliced cabbage, and stir to combine. Cover, and cook until cabbage is tender, about 15 minutes. Arrange cabbage on a platter.
- Remove cottage ham from oven, and let rest for 10 minutes. Carve slices and serve on top of cabbage.

Steps:
- Brown ham lightly in heavy pan or dutch oven.
- Coarsely shred cabbage with knife. Add to ham with potato cubes, seasonings and vinegar.
- Cover tightly. Cook over low heat one to one and 1/2 hours. Stir lightly after 1/2 hour of cooking.
- You need a container with a tight fitting lid, otherwise it may burn. You may add more ham than the recipe calls for, and I add the higher amount of vinegar.
