Grilled salmon served with a delicious tamarind and honey glaze, makes for a quick and delicious weeknight dinner

6 medium Salmon fillets (skinless and boneless)
Coriander (to garnish)
2 tablespoons tamarind paste
4 tablespoons honey
1 teaspoon lemon juice (optional - leave it out if you prefer less tartness)
1 teaspoon grated ginger
1 teaspoon chilli flakes
1 teaspoon Olive oil or any Vegetable oil of your preference
Salt (to season)

Steps:

  • Clean the salmon fillets and pat them with a kitchen towel to dry. Keep aside.
  • While you are prepping the ingredients for the glaze, preheat a grill-pan on the stovetop.
  • In a bowl, combine all the ingredients mentioned under 'glaze.'
  • Brush some of the glaze onto both side of the salmon fillets. Use no more than 1/3 of the glaze.
  • Transfer the fillets to the heated grill-pan and grill on one side for 3 minutes, until browned, then flip it over gently and grill the other side for 2 minutes.
  • As the fish is grilling, in a small saucepan, warm up the rest of the glaze on medium heat. Let it heat for 3-4 minutes. Take it off the heat and let it cool.
  • To serve, spoon the glaze over the salmon fillets and serve over rice or rice noodles.

1 tomatoes, chopped

  • puree all sauce ingredients in a blender.
  • preheat broiler.
  • line a broiler pan with aluminum foil.
  • brush fillets with olive oil, them brush with tamarind sauce.
  • season with salt& pepper.
  • broil salmon for 6-8 minutes, adding more sauce halfway through.
  • serve extra sauce alongside.

3 canned chipotle chiles in adobo
1 clove garlic, crushed
1/2 cup tamarind concentrate
1/2 cup packed dark brown sugar
Kosher salt, plus more as needed
2 tablespoons sherry vinegar
1 tablespoon extra-virgin olive oil, plus more for grilling
4 six-ounce center-cut boneless salmon filets

Steps:

  • 1. Chop chipotles and garlic in a food processor. Add tamarind, brown sugar, and salt and puree. Add vinegar, 2 tablespoons water, and oil, and puree until smooth. Pour about 1/4 cup of glaze into a small bowl. Reserve remaining glaze for serving.
  • 2. Preheat a grill to medium.
  • 3. Brush salmon filets with oil and season with 1 tablespoon salt, to taste. Place fillets, top-side (rounded side) down, on grill. Cook until distinct grill marks appear, about 4 minutes. Turn fish over, lightly brush with glaze, and cook, brushing occasionally with more glaze, until firm but slightly pink, about 6 to 8 minutes. Transfer to a cutting board and brush with more glaze. Serve warm or at room temperature, and pass additional glaze, if desired.

This is the easiest, most flavorful honey-baked salmon that the whole family will be able to enjoy. It comes together in 30 minutes and only requires eight ingredients. Oh, and that honey-lime drizzle at the end is to die for - no one will judge you for slurping it down! Baking the salmon at a high heat not only quickens the cooking time, but also helps to crisp up the honey glaze and spice mixture that coats the fish.

Nonstick cooking spray, optional
Four 6-ounce portions skin-on salmon fillets
1/4 cup honey
Zest and juice of 1 lime
1 tablespoon light brown sugar
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1 clove garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
  • Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
  • Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
  • Drizzle the reserved honey-lime mixture over top of the salmon just before serving.

720 g salmon steaks
6 tablespoons ketjap manis
4 tablespoons vegetable oil
1 teaspoon ginger, finely grated
1 garlic clove, chopped
1 shallot, chopped
1 teaspoon lime juice
1 tablespoon lime zest
1 tablespoon sambal oelek
75 ml ketjap manis
2 tablespoons white vinegar
1 tablespoon brown sugar
2 cloves
1 cinnamon stick
2 tablespoons tamarind juice
2 tablespoons fresh lime juice
2 teaspoons palm sugar
2 teaspoons fish sauce or 2 teaspoons light soy sauce
1 teaspoon peanut oil
1/2 pineapple, diced
1/2 cucumber, deseeded and julienned
1 red chile, deseeded and julienned
2 tablespoons slice shallots
2 tablespoons crushed peanuts
1/2 avocado, diced
1/4 cup chopped basil leaves
1/4 cup chopped mint leaf

Steps:

  • Combine marinade ingredients in bowl and add salmon leave to marinate in fridge for at least 4 hours.
  • Bring glaze ingredients to boil in pan and simmer 1 minute. Cool. Strain.
  • Combine all dressing ingredients in bowl.
  • Preheat oven to 200 Degrees Celsius.
  • Sear slamon steaks in pan (which can go in oven) with 1 tbs vegetable oil on presentation side.
  • Turn steaks over and pour over marinade.
  • Place pan in oven and bake for 5 to 20 minutes depending on taste.
  • Combine salad ingredients and toss with dressing.
  • Divide salad onto individual serving plates.
  • Top with salmon and drizzle glaze around.

1 tbsp tamarind paste
1 large lime , juiced
1 tbsp soft light brown sugar
½ tsp salt
1 tsp hot chilli powder
2 tsp ground turmeric
2 garlic cloves , grated to a purée
2cm piece ginger , peeled and grated to a purée
4 salmon fillets , 170-200g each
2 tbsp groundnut oil or ghee
2 dried Kashmiri chillies
rice , lime wedges and chutney, to serve

Steps:

  • Preheat oven to 200C/180C fan/gas 6. Mix the tamarind paste with the lime, sugar, salt, chilli powder, turmeric, garlic and ginger. Add enough water - you won't need much - to make sufficient marinade to coat the four pieces of fish. Turn the salmon over in the marinade, making sure it gets well coated, cover and put in the fridge for 1 hr (or 30 mins is fine if you're in a rush).
  • Heat the oil in a large frying pan and add the chillies. Fry over a medium heat for 30-40 secs, then add the salmon fillets. Brown the fillets on each side (including the skin), then transfer them to a roasting tin. Spoon some of the chilli oil from the pan over them. Bake in the oven for 12 mins, or until the fish is cooked right through to the centre (check with the tip of a knife). Serve with rice, lime wedges and an Indian chutney.

Steps:

  • Preheat oven to 350°F.
  • Combine rum, tamarind, jalapeno, brown sugar, BBQ sauce, and sriracha in a small bowl; set aside.
  • Heat skillet with olive oil over medium-low, then add ginger and garlic; sautee 1-2 minutes.
  • Add rum mixture to skillet and simmer (medium-low) for 15 minutes.
  • Mix cornstarch and water until smooth, add to sauce, and simmer 5 more minutes.
  • Place salmon filets in lightly greased baking dish.
  • Rub salmon lightly with olive oil, sprinkle with salt and pepper.
  • Pour sauce over salmon.
  • Bake 20-25 or until salmon flakes with a fork.
