WOLFGANG PUCK'S PIZZA DOUGH

Wolfgang Puck's Pizza Dough image

Wolfgang Puck is known for a lot of great food, but his pizzas stand out as favorites. Here's how to make his signature pizza dough recipe at home.

Provided by John Mitzewich

Categories     Entree     Dinner     Lunch     Appetizer     Snack

Time 1h27m

Number Of Ingredients 7

1 package dry active yeast
1 teaspoon honey
1 cup warm water (105 to 115 F, divided)
3 cups all-purpose flour (plus extra for shaping the dough)
1 teaspoon kosher salt
1 tablespoon extra-virgin olive oil (plus more for seasoning)
Optional Toppings: tomato sauce , cheese, vegetables, cooked or cured meats

Steps:

  • Gather the ingredients.
  • In a small bowl, dissolve the yeast and honey in 1/4 cup of the warm water.
  • Combine the flour and the salt in a food processor fitted with a steel blade. Alternatively, combine in a standing mixer fitted with a dough hook.
  • Add the oil, yeast mixture, and the remaining 3/4 cup of water and mix until the dough comes cleanly away from the sides and forms a ball.
  • Turn the dough out onto a clean work surface and knead by hand for 2 or 3 minutes. The dough should be smooth and firm.
  • Cover the dough with a clean, damp towel and let it rise in a warm spot for about 30 minutes. When ready, the dough will stretch as it is lightly pulled.
  • Divide the dough into 4 balls, about 6 ounces each. Place a pizza stone on the middle rack of the oven and preheat the oven to 500 F.
  • Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times.
  • On a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let it rest for 15 to 20 minutes. Repeat with the remaining balls. At this point, the dough balls can be wrapped in plastic and refrigerated for up to 2 days.
  • To prepare each pizza, dip the ball of dough into flour and shake off the excess. Place the dough on a clean, lightly floured surface and start to stretch the dough. Press down on the center, spreading the dough into an 8-inch circle with an outer border a little thicker than the middle.
  • Lightly brush the inner circle of the dough with oil.
  • Arrange toppings of your choice over the oil. Using a lightly floured baker's peel or a rimless flat baking tray, slide the pizza onto the hot baking stone and bake until the pizza crust is nicely browned, 10 to 12 minutes.
  • Transfer the pizza to a firm surface and cut it into slices with a pizza cutter or very sharp knife. Repeat with the remaining pizza dough. Serve immediately.

WOLFGANG PUCK'S PIZZA DOUGH

Wolfgang Puck's Pizza Dough image

This pizza dough recipe is the basis for Wolfgang Puck's vegetarian pizza with wild mushrooms and pesto, and is from his cookbook "Wolfgang Puck's Pizza, Pasta & More!"

Provided by Martha Stewart

Yield Makes four 8-inch pizzas

Number Of Ingredients 6

One 1/4-ounce active dry yeast
1 teaspoon honey
1 cup warm water, 105 degrees to 115 degrees
3 cups all-purpose flour
1 teaspoon coarse salt
1 tablespoon extra-virgin olive oil

Steps:

  • In a small bowl, dissolve yeast and honey in 1/4 cup warm water; set aside. In the bowl of an electric mixer fitted with a dough hook, combine flour and salt. Add oil, yeast mixture, and remaining 3/4 cup warm water; mix on low speed until dough pulls away from the sides of the bowl and clusters around the dough hook, about 5 minutes.
  • Turn dough out onto a clean work surface, and knead by hand until dough is smooth and firm, 2 to 3 minutes. Transfer dough to a large bowl, and cover with a clean, damp kitchen towel. Place bowl in a warm spot, and let rise for 30 minutes.
  • Divide dough into four balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball; repeat 4 or 5 times. On a clean, unfloured surface, roll the ball under the palm of your hand until dough is smooth and firm, about 1 minute. Repeat with remaining balls; cover with a damp towel, and let rest for 15 to 20 minutes. Prepare as needed and arrange desired toppings.

Yield 12 servings, 3 10-inch pizzas

Number Of Ingredients 36

Pizza Dough, recipe follows
2 cups grated mozzarella
2 cups grated Fontina
6 ounces button mushrooms, sliced
3 tablespoons olive oil
Salt and pepper
1/2 pound steamed clams (Manila or Littleneck)
1 tomato
8 thin slices prosciutto, cut into julienne
1 1/2 cups Tomato Sauce, recipe follows
2 tablespoons basil, chiffonade
1 tablespoon grated Parmesan
1 package active dry or fresh yeast
1 teaspoon honey
1 cup warm water, 105 to 115 degrees
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoons extra-virgin olive oil, plus additional for brushing
2 tablespoons olive oil
1 small onion, minced
3 cloves garlic, minced
1 tablespoon tomato paste
2 pounds Roma tomatoes, peeled, seeded, and diced
1 cup homemade Chicken Stock or store-bought, heated, recipe follows
3 ounces butter, cut into small pieces
1/4 cup basil, chiffonade
Salt and freshly ground black pepper
5 to 6 pounds chicken bones, including necks and feet, coarsely chopped
1 medium carrot, peeled, trimmed, and cut into 1-inch slices
1 medium onion, peeled, trimmed, and quartered
1 small celery stalk, trimmed, and cut into 1-inch slices
1 small leek, cleaned, trimmed, and cut into 1-inch slices
1 sprig fresh thyme
3 sprigs fresh parsley with stems
1 bay leaf
1/2 teaspoon whole white peppercorns

Steps:

  • Prepare the dough 1 hour prior to making pizza. Divide the dough into 4 (6-ounce) balls. Allow to rise until ready to shape.
  • Preheat oven with pizza stone to 500 degrees F.
  • Prepare the toppings. In a bowl, combine the mozzarella and Fontina. In a small saute pan, over high heat, saute the mushrooms in the olive oil until done. Season with salt and pepper. Transfer to a plate and allow to cool. Reserve. Remove the meat from the steamed clams and reserve. Discard the shells. Slice the tomato into at least 6 thin round slices. Reserve.
  • To assemble the pizzas: Place a ball of dough on floured board and stretch to about 10 or 12 inches. Repeat with 2 additional balls. Divide last dough ball into 6 pieces, and roll each one into 10-inch strips. Divide tomato sauce evenly on dough circles leaving a small rim. Divide the cheese on top of each pizza. Carefully place 2 strips of dough over each pizza so that you have 4 quarters which represent the 4 seasons.
  • Garnish each quarter: 1 with tomato, 1 with clams, 1 with mushrooms, and 1 with prosciutto julienne.
  • Slide pizza onto hot pizza stone. Bake for 7 to 8 minutes or until the crust is golden brown.
  • Remove from the oven and transfer to a serving plate. Sprinkle basil over tomato section and grated Parmesan over the mushroom section. Serve immediately.
  • In a small bowl, dissolve the yeast and honey in 1/4-cup warm water.
  • In a mixer fitted with a dough hook, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and mix on low speed until the dough comes cleanly away from the sides of the bowl and clusters around the dough hook, about 5 minutes. (The pizza dough can also be made in a food processor fitted with the steel blade. Pulse once or twice, add the remaining ingredients, and process until the dough begins to form a ball.)
  • Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a warm spot for about 30 minutes. (When ready, the dough will stretch as it is lightly pulled).
  • Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 15 to 20 minutes. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
  • Yield: 4 (8-inch) pizzas
  • In a medium saucepan, heat the olive oil. Over medium heat, saute the onions until soft, about 5 minutes. Add the garlic and cook 1 minute longer. Add the tomato paste, tomatoes and cook for 3 minutes. Add the chicken stock and simmer for 20 minutes or until sauce thickens.
  • Strain into a clean saucepan. Whisk in butter, piece by piece. Add basil. Taste and adjust seasoning with salt and pepper. Use as needed.
  • Yield: 2 1/2 cups
  • Place the chicken bones in a 6 or 7-quart pot, pour cold water over to cover, and bring to a rolling boil. Skim off the foam and fat that collects on the top.
  • Add the remaining ingredients, lower the heat to a simmer, and simmer uncovered for 2 to 3 hours, skimming as necessary. Strain through a fine-mesh strainer into a clean bowl and cool. Refrigerate, covered, for up to 3 days, discarding the hardened layer of fat before using or freezing.
  • Yield: about 2 quarts

WOLFGANG PUCK'S PIZZAS WITH SMOKED SALMON AND CAVIAR

Wolfgang Puck's Pizzas With Smoked Salmon and Caviar image

Although New York has long had pizza bragging rights, the modern American version of pizza with toppings that went beyond basil and mozzarella began in Wolfgang Puck's kitchen at Spago in Beverly Hills in the 1980s and started a California pizza trend that spread far and wide.

Provided by Molly O'Neill

Categories     dinner, pizza and calzones, appetizer, main course

Time 30m

Yield 4 servings

Number Of Ingredients 7

1 tablespoon minced chives
1 recipe pizza dough (see recipe)
4 tablespoons extra-virgin olive oil
6 tablespoons sour cream or creme fraiche
3 to 4 ounces smoked salmon, cut into paper-thin slices
4 heaping tablespoons domestic golden caviar
1 teaspoon black caviar

Steps:

  • Preheat the oven to 500 degrees and put a pizza stone inside. Knead 2 teaspoons of the minced chives into the pizza dough. Roll or stretch the dough into four 8-inch circles. Place the pizzas on a lightly floured wooden peel or board. (Work in batches.) Brush the centers of the circles with olive oil to within 1 inch of the edges.
  • Slide the pizzas onto the stone and bake 8 to 10 minutes, or until golden brown. Transfer to serving plates and spread with the sour cream or creme frache. Arrange the salmon slices over the top. FAMOUS CALIFORNIA PIZZA DOUGH

Famous California Pizza Dough image

One product of my online interview with Wolfgang Puck was being given his pizza dough recipe to publish. I don't think this recipe is any kind of secret, and I'm sure it's been published many times, but I had never personally tried it, so I decided to do this recipe check out this iconic dough for myself.

Provided by Chef John

Time 1h35m

Yield 16

Number Of Ingredients 7

1 (.25 ounce) package active dry yeast
1 teaspoon honey
1 cup Water, municipal
1 teaspoon kosher salt
5 tablespoons extra-virgin olive oil, divided
2 ¾ cups all-purpose flour, or more as needed
¼ cup cornmeal, or as needed

Steps:

  • Combine yeast, honey, and 1/4 cup warm water in a large bowl with a whisk. Let stand to dissolve, about 10 minutes.
  • Add salt, 1 tablespoon olive oil, remaining 3/4 cup warm water, and 1 cup flour to the mixture and stir until a batter forms. Add another 1 cup flour; stir to combine. Add 1/2 cup more flour and combine.
  • Turn dough out onto a surface dusted with 1/4 cup flour. Knead until a smooth, fairly firm, slightly sticky dough is achieved, adding more flour as needed.
  • Transfer dough to a lightly oiled bowl and cover with a damp towel. Let sit in a warm place until doubled in size, 30 to 40 minutes.
  • Turn dough out onto a lightly floured cutting board and pat down with your hand. Divide dough into 4 equal pieces. Stretch and fold each piece down and under, tucking as you go, to form pizza dough rounds.
  • Cover with a towel and let sit in a warm place until doubled in size, 20 to 30 minutes.
  • Preheat the oven to 450 degrees F (230 degrees C). Dust a baking sheet with cornmeal.
  • Transfer dough rounds to a lightly floured board and press each piece out to desired thickness, starting in the center, until 8 to 10 inches wide. Form a crust shape around the outer edges with your fingertips.
  • Transfer one round of pizza dough to the prepared baking sheet and brush with 1 tablespoon olive oil. Top with any sauce and toppings you like.
  • Bake in the lower rack of the preheated oven for 5 minutes. Move to the center of the oven and continue to bake until golden, about 10 minutes more. Repeat to bake remaining pizzas.
