1/4 cup vegetable or canola oil
4 large red onions, halved, peeled, and cut into thin (1/4-inch) slices
Kosher salt and freshly ground black pepper
2 cups dry red wine
1/2 cup honey
1/2 cup red wine vinegar
Juice and a few grates of zest from 1 lemon, optional

Steps:

  • In a medium saute pan, heat the oil until it begins to smoke lightly. Add the onions and season with salt and pepper, to taste. Cook until the onions give up their liquid, 3 to 5 minutes, and then add the red wine. Lower the heat and cook the onions until the wine reduces almost completely. Leave on low heat while you prepare the gastrique.
  • In a separate small pan, heat the honey until it begins to bubble and froth. Cook until the honey turns a light caramel color, an additional 2 to 3 minutes. Add the red wine vinegar, simmer for a few minutes on low heat, and then shut off the heat. Pour the honey mixture over the onions and continue cooking them over low heat until all of the juice is absorbed and the onions are a jam-like consistency, 10 to 15 minutes. If you desire, add lemon juice and zest at this point. Taste for seasoning and transfer to a bowl to cool until ready to serve.

The flavours develop the longer you keep it, so make ahead to get the sweetest mellow taste. This jam (or "confiture" if you want to be posh) keeps well in sealed sterilised jars and also makes a great gift at Christmas time. The recipe came from the December 2003 edition of the Sainsburys Magazine, but you don't need to wait for Christmas to make this!

120 ml sunflower oil (or groundnut oil)
700 g red onions, very finely sliced
175 g caster sugar
150 ml sherry wine vinegar
2 tablespoons grenadine, cordial
250 ml red wine
1 teaspoon salt
1 teaspoon fresh ground black pepper

Steps:

  • Heat the oil in a wide shallow pan, then add the onions, sugar and salt and pepper: cook very gently for 30 minutes, stirring occasionally until most of the liquid has evaporated.
  • Add the sherry vinegar, grenadine and red wine: continue to cook, uncovered, at a gentle simmer for a further 30 minutes, stirring regularly until it reaches the consistency of jam.
  • Allow to cool before decanting and sealing in sterilised jars.

3 medium-large red onions, diced (about 2 pounds)

1 cup red wine
1/4 cup honey
1/4 cup red wine vinegar

Steps:

  • Heat the oil in a large skillet over medium heat. Add the onions and a generous pinch of salt and pepper. Cover and cook, stirring occasionally, until the onions are soft, 10 to 15 minutes.
  • Increase the heat to high, add the red wine and simmer until most of the wine is absorbed into the onions. Add the honey and vinegar and simmer gently, lowering the heat as needed and stirring occasionally, until the onions are soft, sticky and jam-like, about, about 15 minutes.

3 tablespoons olive oil
1 large red onion, sliced
3 tablespoons brown sugar
1/4 cup red wine vinegar
3 tablespoons water
1/2 pound Taleggio, cut into 8 slices
1/4 pound Gorgonzola, cut into 4 slices
4 tablespoons butter, softened
1 loaf crusty rustic Italian bread, sliced

Steps:

  • Heat the olive oil in a large skillet over medium-low heat. Add the onions and cook until soft and translucent about 10 to 15 minutes. Add the sugar, red wine vinegar and 3 tablespoons water and cook until the liquid is reduced completely and the onions are caramelized, about 10 minutes. Set aside.
  • Butter the outside of each slice of bread and arrange, butter side down, on a sheet pan. Put 1 piece of Taleggio onto a slice of the buttered bread, then a piece of Gorgonzola. Top with a heaping tablespoon of the onion jam, and another slice of the Taleggio. Cover it another slice of bread. Repeat with remaining ingredients.
  • Heat a large skillet over medium-low heat. Put the sandwiches into the skillet and cook until the bread is toasted and golden and cheese is melted, about 4 minutes per side. Slice each sandwich in half and serve.

1 stick (8 tablespoons) plus 1 tablespoon unsalted butter, softened
1/2 yellow onion, thinly sliced
1 clove garlic, chopped
1/2 teaspoon ground coriander
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground allspice
Kosher salt
8 ounces chicken livers, trimmed
1/4 cup heavy cream
1 tablespoon brandy
1 tablespoon olive oil
1 medium red onion, thinly sliced
1 teaspoon fresh thyme leaves
Kosher salt
1/2 cup dry red wine
3 tablespoons red wine vinegar
3 tablespoons sugar
Toasted baguette slices, for serving

Steps:

  • For the chicken liver pâté: Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the yellow onions and garlic and cook until softened, 5 minutes. Stir in the coriander, pepper, allspice and some salt.
  • Increase the heat to medium high and add the chicken livers. Cook, stirring occasionally, until golden brown on the outside but still pink inside, about 3 minutes. Add the heavy cream. Transfer the mixture to a food processor and puree until smooth.
  • With the motor running, add the remaining 7 tablespoons butter in three batches and process until fully incorporated. Add the brandy and pulse to incorporate. Season with salt.
  • Transfer the pâté to a bowl, cover, and refrigerate until firm, at least 3 hours and up to overnight.
  • For the red onion jam: Heat the olive oil in a medium skillet over medium heat. Add the red onions, thyme and 1/4 teaspoon salt. Cook, stirring occasionally, until softened, about 8 minutes.
  • Add the wine and simmer, stirring occasionally, until most of the wine has evaporated, about 10 minutes. Add the vinegar and sugar and cook, stirring often, until the onions are very tender and the liquid is syrupy, 3 to 4 more minutes.
  • Cool the jam to room temperature, and then refrigerate until ready to serve. Serve warm or room temperature
  • To serve, spread baguette slices with pâté and top with red onion jam.

2 tablespoons olive oil
2 red onions, thinly sliced
1/2 cup sugar
1/4 cup red-wine vinegar
1/2 cup dry red wine, preferably Syrah or Zinfandel

Steps:

  • Place oil in a medium saucepan over medium-low heat. Add onions, and cook until they begin to soften and become translucent, 8 to 10 minutes. Add sugar and continue cooking for 1 minute. Carefully add vinegar and wine. Increase the heat and bring to a boil, and immediately reduce to a simmer. Cook until liquid has evaporated and onions are caramelized, about 3 minutes. Keep warm until ready to serve.

6 onions, medium, sliced thinly
1 pinch sea salt
1 tablespoon balsamic vinegar
1/4 cup port wine
1 sprig fresh thyme
1/2 cup muscovado sugar
1 teaspoon mustard seeds
1/2 teaspoon red pepper flakes
1/4 cup tomatoes, finely chopped

Steps:

  • Heat oil in heavy frying pan, then add onions & saute untils slightly brown.
  • Season with salt, then reduce heat & continue to cook, stirring constantly, until caramelized & tender.
  • Add rest of ingredients EXCEPT the tomato, & cook on low heat for 30 minutes, stirring occasionally.
  • Add tomato & cook 15 more minutes.
  • Remove from heat & let cool.
  • Store in a jar in the refrigerator for up to 2 weeks.

RED ONION MARMALADE

Soft, sticky onion marmalade - great with pâtés and terrrines or a ploughman's lunch

2kg red onions or regular onions
4 garlic cloves
140g butter
4 tbsp olive oil
140g golden caster sugar
1 tbsp fresh thyme leaf
pinch of chilli flakes (optional)
75cl bottle red wine
350ml sherry vinegar or red wine vinegar
200ml port

Steps:

  • Halve and thinly slice the onions, then thinly slice the garlic. Melt the butter with the oil in a large, heavy-based saucepan over a high heat. Tip in the onions and garlic and give them a good stir so they are glossed with butter. Sprinkle over the sugar, thyme leaves, chilli flakes if using and some salt and pepper. Give everything another really good stir and reduce the heat slightly. Cook uncovered for 40-50 minutes, stirring occasionally. The onions are ready when all their juices have evaporated, they're really soft and sticky and smell of sugar caramelising. They should be so soft that they break when pressed against the side of the pan with a wooden spoon. Slow cooking is the secret of really soft and sticky onions, so don't rush this part.
  • Pour in the wine, vinegar and port and simmer everything, still uncovered, over a high heat for 25-30 minutes, stirring every so often until the onions are a deep mahogany colour and the liquid has reduced by about two-thirds. It's done when drawing a spoon across the bottom of the pan clears a path that fills rapidly with syrupy juice. Leave the onions to cool in the pan, then scoop into sterilised jars and seal. Can be eaten straight away, but keeps in the fridge for up to 3 months.

3 cups prepared red onions (buy about 1 lb. red onions)
1-1/2 cups apple juice
1/2 cup HEINZ Red Wine Vinegar
1-1/2 tsp. rubbed sage
1/2 tsp. pepper
1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
4 cups granulated sugar, measured into separate bowl
3/4 cup firmly packed light brown sugar

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling
  • Peel, quarter and thinly slice onions. Measure 3 cups prepared onions into 6- or 8-qt. saucepot. Add apple juice, vinegar, sage and pepper; stir until well blended.
  • Stir pectin into onion mixture in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Add granulated and brown sugars; mix well. Return to full rolling boil and boil 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

My DH loves condiments - particularly ones he can use on his sandwiches. I bought a jar of Onion Jam at a market, he almost licked the jar clean. I have been busy re-creating the original and this recipe is amazing. If you enjoy cold cuts (ham, roast beef, silverside etc) this might be for you.

3 tablespoons oil (vegetable)
10 medium sized onions (just under 2 kilos)
1 1/4 cups brown sugar
2 tablespoons mustard seeds
1/4 cup balsamic vinegar
1/3 cup sweet chili sauce
2 tablespoons apple cider vinegar

Steps:

  • Peel and thinly slice your onions (I use a Mandolin for this).
  • In a large heavy based pot, heat the oil and add the onions, stir frequently over a medium heat until caramalised (15-20 minutes).
  • Add the mustard seeds and fry for an additional 2 minutes.
  • Add the brown sugar and cook for another 2 minutes (it needs to be well dissolved).
  • Add the remaining ingredients and reduce to a low simmer and cook for another 5 minutes.
  • Carefully pour the hot onion jam into prepared jars ( hot sterilized jars if you want to keep them on your shelf - will keep for 6 months) or a clean jar if you want to pop it into your fridge and use it within 2-4 hours (or once chilled). Keeps in the fridge for 4 weeks. Once a jar is opened, this jam must be refridgerated.

1 orange
3 cups granulated sugar
1 1/2 cups thinly sliced red onions
3/4 cup red wine vinegar
1/2 teaspoon salt
1 (85 ml) envelope liquid pectin

Steps:

  • With vegetable peeler, peel rind from orange in long strips.
  • Scrape off white pith from rind; slice rind lengthwise into paper-thin strips. Set aside.
  • In large saucepan, bring orange strips, sugar, onion, vinegar and salt to boil; boil for 1 minute. Stir in liquid pectin, mixing well. Remove from heat.
  • Using tongs, divide onion and orange rind among three 1-cup (250 mL) hot canning jars. Pour in liquid, leaving 1/4-inch (5 mm) headspace. Cover with prepared lids; screw on bands fingertip tight.
  • Boil in boiling water canner for 10 minutes. Let jars stand on rack until cool.
  • Check that lids curve downward; refrigerate any that do not and use within 3 weeks. Store in cool dark place for up to 1 year.
  • Variation:.
  • Pepper and Red Onion Marmalade: Add 1/2 tsp (2 mL) coarsely ground black pepper or hot red pepper flakes.
