Pastry for single-crust pie ((9 inches))
2/3 cup sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
4 medium apples ((like Gala, Fiji, Braeburn, Empire peeled and diced into 1/4 inch pieces - around 4 cups))
1/2 cup all-purpose flour
1/3 cup packed brown sugar
1/2 cup old-fashioned rolled oats
1 teaspoon ground cinnamon
1/4 cup salted butter (softened (see Note))
1/2 cup caramel topping

Steps:

  • Preheat oven to 350 degrees.
  • Roll pastry to fit a 12 inch pizza pan; fold under edges to give the pizza a bit of a raised crust. Combine sugar, flour and cinnamon in a medium bowl. Add peeled, diced apples and toss. Arrange the apples in a single layer over the pie crust to completely cover it. I didn't use all of my apples because I had really big apples.
  • For the topping: Combine the flour, brown sugar, oats, cinnamon, and butter in a bowl. Mix well. I like to use my clean hands to get in there and mush it together until it's the texture of wet sand. Sprinkle topping evenly over the apples.
  • Bake at 350 degrees for 35-40 minutes or until apples are tender. Remove from oven and immediately drizzle with caramel topping. Cut into pizza slices and serve warm with ice cream. Makes 12 servings.

1 package (8 oz) cream cheese, softened
2 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
2 medium apples, peeled and thinly sliced (about 2 cups)
2 tablespoons granulated sugar
3 tablespoons caramel topping

Steps:

  • Heat oven to 375°F. Spray large cookie sheet with cooking spray.
  • Unroll crescent dough onto cookie sheet to 14x10-inch rectangle. Bake 5 to 7 minutes or until crust is very light golden brown.
  • In medium bowl, beat cream cheese, brown sugar and 1/4 teaspoon of the cinnamon until blended. Carefully spread cream cheese mixture on partially baked crust to within 1/2 inch of edges.
  • In small bowl, toss apple slices with granulated sugar and remaining 1/4 teaspoon cinnamon. Arrange apple slices over cream cheese mixture in 3 long rows. Bake 10 to 15 minutes longer or until crust is golden brown and apples are tender. Drizzle caramel topping over pizza. Serve warm.

1 homemade pie crust recipe or store-bought dough (we are rolling it out to resemble a pizza crust.)
1/2 cup caramel sauce (homemade or store-bought.)
Apple topping:
1 lb apples, peeled and sliced into 1/2 inch portions (about 4 apples.)
1/8 cup brown sugar
2 tbsp. all-purpose flour
1 tsp. cinnamon
Crisp topping:
3/4 cup all-purpose flour
1/4 cup brown sugar
1/4 cup old-fashioned oats
1 tsp. cinnamon
1/4 cup + 2 tbsp. butter, room temperature
2 tbsp. caramel sauce

Steps:

  • *Store-bought ingredients will definitely make this dessert quicker and easier, but check out my recipes below for homemade caramel and pie dough!
  • Preheat oven to 350F.
  • Toss apples with brown sugar, flour, and cinnamon. Take the pie crust and roll in out until it fits nicely onto you pizza pan (I believe my pan is 14 inch but you can make it thin or thick crust.) Fold the edges back a bit to form a crust. Pour apples onto crust and spread evenly into a single layer.
  • Combine the flour, sugar, oats, cinnamon, caramel sauce, and 1/4 cup of butter with a fork or pastry blender. If the mixture is too dry, add butter 1 tbsp. at a time (I kept mine a bit dry so the topping did not melt everywhere!) Sprinkle over apples and spread out nicely.
  • Top with 1/4-1/2 cup caramel sauce and place into oven. Bake for 35-40 minutes, or until crust is nice and golden.
  • Allow to cool slightly before cutting! Serve warm or cool.

  • In a large mixing bowl, beat together the cream cheese, 1/4 cup brown sugar, 1/4 cup granulated sugar, 1 tsp vanilla, 1 tsp cinnamon and egg yolk. In a separate bowl, toss the chopped apples with the 3 Tbsp of gluten-free flour, to coat. Stir the apples into the cream cheese mixture. Pour apple/cream cheese mixture on top of the oatmeal cookie dough, leaving about 1-inch uncovered around the edge of the cookie. Set aside.
  • For the crisp topping, mix 1/3 cup gluten-free flour, 1/2 cup oats, 1/2 tsp cinnamon, pinch of nutmeg and 1/3 cup brown sugar in a medium size mixing bowl. Using a pastry blender, or two knives, cut the cold butter into the mixture, until the butter pieces are about the size of a pea. Sprinkle the crisp topping on top of the apple/cream cheese layer.
