CHOCOLATE CHIP COOKIES WITH SALT
I made these cookies for my son's class at school as part of France's annual week of taste, or semaine du gout. The idea was to show how sweet and salty flavors complement each other.

Steps:
- Preheat the oven to 375°. Line two baking sheets with parchment paper.
- Sift together onto a piece of waxed paper the flour, the soda, and one half teaspoon of the salt.
- In a large bowl, whisk together the butter and the sugar until it is light and pale yellow. Whisk in the eggs one at a time until thoroughly blended. Whisk in the vanilla, then stir in the flour just until it is blended.
- Stir in the chocolate chips or pieces and mix until they are evenly distributed throughout the dough.
- Drop the dough by tablespoons full onto the prepared baking sheets. Sprinkle each with a generous pinch of sea salt. Bake in the center of the oven until the cookies are golden, about 12 minutes. Remove from the oven and let sit on the baking sheets for about 4 minutes to allow the cookies, which are fragile, to firm up, then slide them onto a cooling rack.
SUSAN'S CHOCOLATE CHIP COOKIES
My "adopted mother" gave me this recipe and I can honestly say they are the richest chocolate chip cookies and my absolute favourites.

- Preheat the oven to 350-370°F.
- Cream the butter and sugars together.
- Beat in the eggs and the vanilla.
- Mix together the dry ingredients in a separate bowl, before slowly folding them in with the wet ingredients.
- Add the chocolate chips, stirring until just mixed.
- Place on a baking sheet and bake for 8-10 minutes or until golden brown.

THE BEST CHOCOLATE CHIP COOKIES
A few tweaks to the classic Nestlé® Toll House® recipe make these the best chocolate chip cookies ever.

Steps:
- In the bowl of an electric mixer fitted with the paddle attachment or beaters, beat the butter and both sugars on medium speed (or high speed if using a hand mixer) for 3 minutes, or until light and fluffy, scraping down the sides and bottom of the bowl as necessary. Add the vanilla and eggs and beat for 2 minutes more. Scrape down the bowl. Add the salt and baking soda and beat briefly until evenly combined. Add the flour and mix on low speed until the dough is uniform. Mix in the chocolate chips.
- Cover the bowl with plastic wrap or scrape the dough into an airtight container and let rest in the refrigerator until firm, a few hours or overnight. (Alternatively, if you don't want to wait, form the dough into balls on the baking sheets as instructed below, and chill in the fridge until firm, about 30 minutes.)
- Preheat the oven to 350°F and set a rack in the middle position. Line a 13 x 18-inch baking sheet with parchment paper.
- Drop the dough in firmly packed 1.5-tablespoon balls onto the prepared baking sheet, spacing them about 2 inches apart. (I use a #40/1.5-T cookie scoop with a wire trigger.) For thick cookies, it's important to really pack the dough in the scooper or with your hands. Bake for 11 to 13 minutes, until golden around the edges but still soft and pale in the center. Let cool for a few minutes on the baking sheet, then transfer to a wire rack to cool completely. Repeat with the remaining cookie dough, refrigerating the dough between batches. The cookies will keep in an airtight container at room temperature for up to 3 days.
- Note: I highly recommend King Arthur All-Purpose Flour for this recipe - it's higher in protein and gluten than other brands and helps the cookies hold their shape.
- Freezer-Friendly Instructions: The cookie dough can be frozen for up to 3 months. To freeze, roll the dough into balls, let set on a baking sheet in the freezer for about 1 hour, then place in a sealable bag and press out as much air as possible. Bake as needed directly from the freezer. (Allow 1 to 2 minutes longer in the oven.) The baked cookies can also be frozen for up to 3 months. Let the cookies cool completely and store in an airtight container separating layers with parchment paper or aluminum foil. Before serving, remove the cookies from the container and let them come to room temperature.

CHOCOLATE CHUNK PECAN COOKIES
Steps:
- Preheat the oven to 375 degrees. Place the butter in the bowl of an electric mixer and beat until creamy. Add the sugars and beat until light and fluffy. Add the egg and vanilla and beat well to combine. Sift together the dry ingredients and add to the batter, mixing well. Remove bowl from mixer (be sure to scrape the beater) and stir in the nuts and chocolate chunks by hand. Drop by teaspoons onto greased cookie sheets and bake 8 to 10 minutes until lightly browned. Cool 5 minutes on sheets then remove cookies with a spatula to racks to cool.

- 1. Cream together margarine, sugars, and eggs. Add 1 1/2 cup flour, pudding mix ,salt and baking soda and stir well. Then add last 3/4 cup flour, stir until combined.
- 2. Bake at 375 degrees for 5-7 minutes. Cool on baking sheet 2 minutes; remove to wire rack to cool completely.
- 3. Make sure not to over bake. They will become crispy.
