BEAN AND MEAT LOAF
When I make meat loaf, I usually just mix together whatever I have on hand. One time I added leftover kidney beans I had in the fridge, and my family loved the meat loaf's soft texture. Now it's our favorite. -Patricia Zwerk of Tucson, Arizona

- In a large bowl, combine the eggs, 1 cup ketchup, beans, bread crumbs, onion, celery, Worcestershire sauce, lemon-pepper and seasoned salt; crumble beef over mixture and mix well. , Shape into two loaves. Place in a 13x9-in. baking dish coated with cooking spray., In a bowl, combine water and remaining ketchup; pour over meat loaves. Bake, uncovered, at 325° for 70 minutes or until meat is no longer pink and a thermometer reads 160°.

BLACK BEAN VEGETARIAN MEAT LOAF
This was a creation based on trying my first black bean vegetarian burger and deciding I had to learn how to make one, then I decided to go for a vegetarian meatloaf instead! Based on a 4 ounce serving, this recipe could be used to make twelve 4 ounce burgers instead of a meatloaf.

- Preheat oven to 350 degrees F (175 degrees C). Generously coat the inside of an 8x13-inch baking dish with cooking spray.
- Mash black beans in a large bowl. Mix crackers, Cheddar cheese, bell peppers, corn, onion, jalapeno pepper, egg white, taco seasoning, and Ranch seasoning into black beans until evenly mixed. Spoon mixture into the prepared baking dish; form into a loaf.
- Bake in the preheated oven until cooked through, 45 to 60 minutes.

MEATLOAF WITH GREEN BEANS
Dressed up with a little cheese, this classic meatloaf is an easy everyday choice. A combination of ground meat and a different cheese would also taste great -- try pork and beef with Gruyere or Monterey Jack cheese.

- Preheat oven to 375. In a medium bowl, combine breadcrumbs, milk, ketchup, cheese, scallion, carrot, 1/2 teaspoon salt, and teaspoon pepper. Add beef and gently combine. Transfer mixture to a rimmed baking sheet and form into a 2 1/2-by-4-inch loaf. Bake until cooked through, about 30 minutes.
- Meanwhile, in a small skillet, heat oil over medium. Add green beans and 1 tablespoon water. Season with salt and pepper. Cover and cook until water is absorbed, about 3 minutes. Uncover and cook, stirring occasionally, until beans are crisp-tender, about 3 minutes. Serve alongside meatloaf.

- Preheat 350. Spray loaf pan.
- Blender - blend until smooth eggs, beans, herb blend, pepper and tamari.
- In mixing bowl, combine blended wet ingredients with remaining ingredients except 1/2 cup of the tomato sauce. Mix and press into loaf pan. Top with 1/2 cup tomato sauce.
- Bake uncovered 1 to 1 1/4 hours.

MEXICAN MEATLOAF
This jelly-roll approach to making meatloaf is really easy and tasty, especially when filled with your favorite cheese and sauces. This Mexican variety includes refried beans and tortillas to make it somewhat of a meatloaf burrito!

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix thoroughly the ground beef and taco seasoning; set aside. In a medium saucepan, heat the refried beans over medium low heat until they are completely heated through.
- Place the ground beef mixture on a large piece of foil. Press the mixture into an approximately 1 inch thick square shape. Spread the refried beans evenly over the top of the flattened beef. Layer the flour tortillas on top of the refried beans, trimming the edges to fit the square. Layer tortillas with salsa and Cheddar cheese, staying 1/2 to 1 inch away from edges of the square.
- Gently roll the layered beef into a Swiss roll shape, pressing and compacting the loaf as you go. Pinch and seal the edges. Wrap in the foil and seal.
- Bake in preheated oven 40 to 45 minutes, or until no longer pink in the center. Cut loaf in half to test for doneness, if necessary.

REALLY GOOD VEGETARIAN MEATLOAF (REALLY!)
High in fiber and protein, low in fat, easy and really yummy! I've always thought meatloaf looks and smells so delicious and savory so, as a vegetarian, I decided to make a no-meat version! This is basically our favorite meatloaf recipe but with cooked mashed lentils instead of ground meat. The result is a very tasty dinner!

Steps:
- Add salt to water and boil in a saucepan.
- Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
- Remove from fire.
- Drain and partially mash lentils.
- Scrape into mixing bowl and allow to cool slightly.
- Stir in onion, oats and cheese until mixed.
- Add egg, tomato sauce, garlic, basil, parsley, seasoning salt and pepper.
- Mix well.
- Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased.
- Smooth top with back of spoon.
- Bake at 350 degrees for 30- 45 minutes until top of loaf is dry, firm and golden brown.
- Cool in pan on rack for about 10 minutes.
- Run a sharp knife around edges of pan then turn out loaf onto serving platter.
