It's a quick, easy meal that is very filling. Some people will also top it with regular taco toppings, i.e. lettuce, tomatoes, black olives, etc. It also is great as leftovers for lunches! Serve with taco sauce.

1 (8 ounce) package refrigerated crescent rolls
1 pound ground beef
1 (1 ounce) package taco seasoning mix
1 (16 ounce) container sour cream
8 ounces shredded Mexican-style cheese blend
1 (14 ounce) bag tortilla chips, crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lay crescent dough flat on the bottom of a square cake pan and bake according to package directions.
  • Meanwhile, brown the ground beef in a large skillet over medium high heat. Add the taco seasoning and stir together well. When dough is done, remove from oven and place meat mixture on top, then layer with sour cream and cheese, and then top off with the crushed nacho chips.
  • Return to oven and bake at 350 degrees F (175 degrees C) for 10 minutes, or until cheese has melted.

1-1/2 pounds ground beef
1 envelope taco seasoning
1/2 cup water
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup crushed corn chips, divided
1 unbaked pastry shell (9 inches)
1 cup sour cream
1 cup shredded cheddar cheese
Shredded lettuce and sliced avocado, optional

Steps:

  • In a large skillet, cook beef until no longer pink; drain. Stir in the taco seasoning, water and olives. Simmer, uncovered, for 5 minutes, stirring frequently., Sprinkle half of the corn chips into pastry shell. Top with meat mixture, sour cream and cheese. Cover with remaining corn chips., Bake at 375° for 20-25 minutes or until crust is golden brown. Cut into wedges. Top with lettuce and avocado if desired.

1 lb ground beef
1 (1 1/4 ounce) package taco bell taco seasoning mix
1/2 cup water
4 flour tortillas, cut into quarters
1 cup salsa
1 cup shredded monterey jack and cheddar cheese blend
2 cups lettuce
1/4 cup sliced green onion
1/4 cup sour cream

Steps:

  • Preheat oven to 375 degrees.
  • Brown ground beef and drain.
  • Stir seasoning mix and water into the ground beef.
  • Remove half of the meat mixture; set aside. In a small baking dish place the other half of the meat mixture on bottom then place eight tortilla quarters on top of meat mixture. Top with reserved meat mixture and remaining eight tortilla quarters. Top with salsa and cheese.
  • Place in oven for 15 minutes. Top with lettuce, green onions and sour cream just before serving.

This has always been my favorite taco pie. I lost the recipe and naturally searched for it on zaar, but to my surprise, there were no taco pie recipes using a pie crust. I finally found the recipe, so here it is.

1/2 lb lean ground beef
1 deep dish pie shell
3 tablespoons taco seasoning (homemade, or I use Penzeys)
1 (15 ounce) can refried beans
1 (8 ounce) jar salsa (your favorite)
8 ounces shredded cheese (Cheddar, Mexican blend, whatever)
2 cups crushed tortilla chips (approx.; flavor doesn't matter)
lettuce (optional)
diced tomato (optional)
sliced black olives (optional)
sour cream (optional)
sliced jalapeno (optional)

Steps:

  • Bake the pie crust according to package directions.
  • Preheat oven to 350.
  • Brown ground beef and drain.
  • Add taco seasoning, following package directions.
  • Mix the beans and the salsa in a bowl.
  • Spread the bean mixture in the bottom of the baked pie crust.
  • Add half the ground beef.
  • Top with half the tortilla chips.
  • Top with half the cheese.
  • Repeat ingredient layering to make a second layer.
  • Bake at 350 for approximately 20 minutes, or until the cheese is melted to your liking.
  • Cool for 10 minutes to allow pie to set.
  • Slice and top with whatever optional toppings you would like.

8 corn tortillas, halved
1 small onion, chopped
2 cloves garlic, minced
Pinch of cayenne pepper
3/4 pound ground pork
Kosher salt
1 15-ounce can crushed tomatoes
2 4.25-ounce cans chopped green chiles
1 cup frozen corn
1/2 cup chopped fresh cilantro
1 cup shredded mozzarella (preferably reduced sodium)

Steps:

  • Preheat the oven to 400 degrees F. Heat the vegetable oil in a large skillet over medium-high heat. Add the tortillas and cook, flipping a few times, until golden, about 3 minutes. Remove with tongs and transfer to a paper towel-lined plate to drain. Add the onion to the skillet and cook, stirring, until soft, about 3 minutes. Add the garlic and cayenne and cook 30 seconds. Add the pork and 1/4 teaspoon salt and cook, breaking up the meat, until browned, about 4 minutes. Stir in the tomatoes, chiles and corn. Bring to a simmer and cook until slightly thickened, about 3 minutes. Season with salt. Remove from the heat and stir in the cilantro. Arrange half of the tortillas in the bottom of a 9-to-10-inch pie plate. Top with half of the meat mixture, then half of the cheese. Repeat with the remaining tortillas, meat and cheese. Cover loosely with foil and bake until the cheese melts, about 10 minutes.

1 (1.25-ounce) package Taco Seasoning Mix
1/3 cup water
1 tablespoon oil
1 (1-pound) package frozen green, red and yellow peppers and onions*
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 (11-ounce) can whole kernel corn, drained
1/2 cup salsa
1 (15-ounce) package refrigerated pie crusts, softened as directed on package
8 ounces (2 cups) shredded cheese recommended: Colby/Monterey blend or Mexican blend
Sour cream
Taco Sauce

Steps:

  • Preheat the oven to 400 degrees F.
  • Brown ground beef in large skillet over medium-high heat for 8 to 10 minutes or until thoroughly cooked, stirring frequently. Drain. Add taco seasoning mix and water; mix until ground beef is well coated.
  • Meanwhile, heat oil in large saucepan over medium high heat until hot. Add peppers and onions; cook 4 to 5 minutes or until tender, stirring occasionally. Remove from heat and drain excess liquid. Add garlic and onion powders, salt, pepper, corn, and salsa, stir well and set aside.
  • Prepare pie crusts as directed on package for 2-crust pie using 9-inch glass or metal pie pan.
  • Combine salsa and corn mixture with ground beef; mix well. Sprinkle 1/2 cup of cheese evenly in bottom of crust-lined pan. Spread 1/2 of beef mixture evenly in pan over cheese, pat down. Sprinkle 3/4 cup cheese in pan and spread evenly with remaining beef mixture, pat down, top with remaining 3/4 cup cheese. Top with second crust and flute; slit in several places.
  • Bake for 30 minutes or until crust is golden brown. Cover edge of crust with strips of foil or a pie crust shield after 15 minutes of baking. Let stand 5 minutes before serving. Store in refrigerator.
  • Garnish with a dollop of sour cream and a drizzle of taco sauce. Also recommended: guacamole, salsa, and diced green chiles.

1/2 cup sliced green onion
1/4 cup chopped onion
1 (1 1/4 ounce) package taco seasoning mix
1 1/2 cups shredded jalapeno jack cheese
canned diced green chiles, small can
1/2 cup Bisquick
1/2 cup yellow cornmeal
3 eggs
1 1/4 cups milk
4 -5 drops hot pepper sauce

Steps:

  • Preheat oven to 400.
  • In skillet, brown ground beef and onions. Drain grease. Stir in taco seasoning mix.
  • Spread into greased 8 inch square pan or 10 inch quiche pan. Sprinkle with cheese and green chiles.
  • Whisk together remaining ingredients until smooth. Mixture will be thin. Pour over beef. Bake 25 minutes or until knife inserted in the center comes out clean. Let stand 5-10 minutes.

1 green bell pepper, seeded and chopped

1 (1 1/4 ounce) package taco seasoning mix (or use Kittencal's Taco Seasoning Mix)
1 (4 ounce) can green chilies (drained or undrained, or to taste)
1 (14 ounce) can pinto beans, undrained (or use black beans)
water (only if needed)
salt and black pepper (to taste)
1 (8 ounce) package refrigerated crescent dinner rolls
2 cups crushed tortilla chips, divided (can use a little more)
1 cup sour cream
1 1/2 cups grated cheddar cheese

Steps:

  • In a large skillet brown the ground beef with onion, garlic, bell pepper and jalapeño pepper until meat is no longer pink; drain fat.
  • Add in taco seasoning mix, undrained beans and green chilies; mix to combine and simmer for about 25-30 minutes, stirring occasionally (adding in only a small amount of water if the mixture is too thick (do not add too much water or the mixture will become thin).
  • Season with salt and pepper to taste; remove from heat.
  • Separate the crescent roll dough into 8 triangles.
  • Place the triangles in an ungreased 10-inch deep dish pie plate, pressing perforations to form a pie crust (if you are using a square baking dish leave the crescents in square rectangles and fit into pan).
  • Sprinkle 1 cup crushed tortilla chips over the crescent crust.
  • Spoon the filling over the crust and corn chips.
  • Spread the sour cream over the meat mixture.
  • Sprinkle the cheddar cheese over the sour cream, then top with remaining 1 cups crushed tortilla chips.
  • Bake at 375 degrees F (bottom oven rack) for about 20-25 minutes.

Yum. Easy to make. It was too hot(spicy) for my daughter so next time I make it, I'll use plain Velvetta and DH can spice up his portion with Tabasco. This is a recipe from my church's recipe book, submitted by Cynthia Y-K. I thought, after the game was over(go figure), that this would've been a good dish to make for Super Bowl Sunday.

1 (8 ounce) can Pillsbury Refrigerated Crescent Dinner Rolls

1/2 lb Velveeta Mexican cheese

Steps:

  • Brown meat.
  • Stir in tomato sauce and taco mix.
  • Simmer for 5 minutes.

1 (300 g) package Yve's veggie ground round, Mexican flavour
1 small onion, finely chopped
1 pepper (I use orange or red)
1 (30 ounce) can black beans
1/2 cup cheddar cheese (shredded)
1/4 cup salsa
1 green onion, finely chopped

Steps:

  • In a small bowl, mash up black beans until they are a thick paste.
  • In a frying pan, sauté the onion and pepper. Once cooked, add the veggie ground round and heat (do not overcook!)
  • In a round casserole dish place one tortilla shell on the bottom. Spread the black bean paste over the shell then add some of the "meat" mixture. Top with cheese and another tortilla. Continue layer until bean and meat mixture is used up.
  • On the top tortilla add the salsa and spread around. Sprinkle with cheese and green onion.
  • Bake at 375 degrees for 15-20 minutes, or until cheese is melted.
  • Serve with salsa and sour cream.
