Damaris Phillips, star of Southern at Heart, shows us how to make this breakfast classic. "I first had homemade English muffins at a hotel in Cincinnati. They were so heavenly, I had to figure out how to re-create them at home."

Number Of Ingredients 11

4 1/2 cups bread flour, plus more for kneading
3 tablespoons sugar
1 1/4-ounce packet instant yeast (2 1/4 teaspoons)
2 teaspoons salt
1 large egg
1 3/4 cups whole milk
2 1/2 tablespoons coconut oil, plus more for the bowl and dough
2 1/2 tablespoons coconut oil, plus more for the bowl and dough
Coarse cornmeal, for sprinkling
Nonstick cooking spray
Butter and jam, for serving (optional)

Steps:

  • Make the dough.
  • Whisk the flour, sugar, yeast and salt in the bowl of a stand mixer. Add the egg but don't stir it in yet.
  • Heat the milk and coconut oil in a saucepan until a thermometer reads 110 degrees F. (If the milk is too hot when you add it to the flour mixture, it will kill the yeast.)
  • Pour the milk mixture into the flour mixture. Avoid pouring it directly on the egg-you don't want the hot milk to cook it.
  • Using the dough hook, mix on medium speed until the dough comes together and starts to pull away from the sides of the bowl, 3 to 4 minutes. Scrape down the sides with a rubber spatula, if needed. The dough will look a little irregular in texture.
  • Knead the dough.
  • Turn out the dough onto a lightly floured surface and knead until smooth, soft and elastic, 3 to 4 minutes. Shape into a ball and place in a large bowl lightly oiled with coconut oil; rub the top of the dough with a little more coconut oil. Cover with plastic wrap and let rise in a warm place until doubled in size, 1 to 2 hours.
  • Form the muffins.
  • Sprinkle 2 baking sheets with cornmeal and set aside. After the dough rises, punch it down and divide into 16 equal pieces. Roll each piece into a ball, then flatten into a 3-inch disk. Place the disks on the baking sheets.
  • Cook the muffins.
  • Heat a 12-inch cast-iron skillet over medium heat. Coat the skillet with cooking spray and liberally sprinkle with cornmeal. Working in batches, cook the muffins until they are deep golden brown, 5 to 9 minutes per side. If they start to rise in a domed fashion, flatten them with a spatula. Let the English muffins cool completely, then split open, toast and serve with butter and jam.

2 cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
¾ cup milk
⅓ cup vegetable oil
1 egg
2 tablespoons any flavor fruit jam
¼ cup chopped walnuts

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, sugar, baking powder and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  • Fill cups 2/3 full. Place 1/2 teaspoon any flavor jam on each muffin before baking; press into batter. If desired, sprinkle with finely chopped nuts.
  • Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

EGG, HAM AND ENGLISH MUFFIN CASSEROLE

Nonstick cooking spray
4 English muffins, split and toasted
6 ounces sliced Black Forest ham, roughly chopped
4 scallions, white and green parts, trimmed and roughly chopped
1 cup shredded extra-sharp Cheddar
3 cups milk
1 tablespoon Dijon mustard
6 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • Lightly mist a round 2-quart baking dish with cooking spray. Halve each piece of English muffin and arrange it cut-side down in the baking dish in an overlapping shingled pattern. Tuck the ham between the layers. Sprinkle the scallions and 1/2 cup of the Cheddar over top.
  • Whisk the milk, mustard and eggs until combined in a large bowl; season with salt and pepper. Pour the egg mixture into the baking dish, cover with plastic wrap and refrigerate for at least 5 hours or overnight.
  • Preheat the oven to 350 degrees F.
  • Discard the plastic wrap and sprinkle the remaining 1/2 cup cheese over the casserole. Place the dish on a rimmed baking sheet and bake until the eggs are set and the edges are lightly browned, about 1 hour. Let stand 10 minutes before slicing and serving.

½ teaspoon salt
½ cup white sugar
1 egg, beaten
¾ cup milk
¼ cup vegetable oil
1 cup any flavor fruit jam

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • In a large bowl, stir together the flour, baking powder, salt and sugar. Make a well in the center. In a small bowl beat egg, milk and oil together. Pour all at once into the well in the flour mixture. Mix quickly and lightly until moistened, do not beat. The batter will be lumpy. Gently stir in jam.
  • Pour the batter into the prepared pan and bake at 400 degrees F (205 degrees C) for 25 minutes or until golden.

  • Pre-heat oven at 200 C or 400 F.
  • Mix together the flour, baking powder, caster sugar, butter, milk and egg.
  • Spoon mixture into muffin/cupcake cases half way.
  • Then add a teaspoon of jam into the centre of muffin/cupcake cases.
  • Pour rest of mixture over the jam so that it is now in the middle of the muffin/cupcake cases (sandwiched).
  • Bake in centre of oven for 15 mins (I used fan assisted oven so times may vary).
