2 cups shredded Monterey Jack cheese
2 cups shredded cheddar cheese
1 can (16 ounces) refried beans
1 cup sour cream
1 package (8 ounces) cream cheese, softened
2 tablespoons taco seasoning
Tortilla chips

Steps:

  • In a bowl, combine cheeses; set aside 2 cups for topping. Add beans, sour cream, cream cheese and taco seasoning to the remaining cheese. Transfer to a greased 2-qt. baking dish; sprinkle with reserved cheese. Bake, uncovered, at 350° for 20-30 minutes or until bubbly around the edges. Serve warm with tortilla chips.

1 (15-ounce) can black beans, drained and rinsed
3/4 cup shredded cheddar cheese
3/4 cup shredded mozzarella cheese

Steps:

  • Preheat oven to broil. Lightly oil an 8×8 or 2 quart baking dish or coat with nonstick spray. In a large saucepan of 2 cups water, cook rice according to package instructions. Stir in salsa, lime juice and cilantro Spread rice mixture into the prepared baking dish. Top with beans and cheeses. Place into oven and bake until bubbly and cheeses have melted, about 5 minutes. Serve immediately, garnished with cilantro, if desired.

  • Stir together all ingredients in a mixing bowl until well combined.
  • Stovetop: Transfer the mixed ingredients to a medium saucepan and bring over med-low heat. Cook, stirring occasionally, for about 5 minutes or until heated through.Microwave: Transfer the mixed ingredients into a microwave safe bowl and heat on high, stopping occasionally to stir, for about 5 minutes or until heated through.Oven: Transfer the mixed ingredients to a 9-inch pie plate or 8x8 baking dish and bake at 350 degrees for 20-25 minute suntil heated through.

1 can pinto beans, rinsed and drained
1 can black beans, rinsed and drained
1 can diced tomatoes, drained
1 small can sliced black olives
1 cup chunky salsa
1 small can green chilies
3 cups grated cheddar-monterey jack blend, divided
1/2 tsp ground cumin
1/8 tsp cayenne pepper (optional)
salt & pepper

Steps:

  • Preheat oven to 375°. In large bowl, mix prepared rice, pinto beans, black beans, tomatoes, olives, salsa, green chilies, 2 cups cheese, cumin, cayenne, salt, and pepper. Pour into 9″ round or square cake pan or deep dish pie plate. Bake for 20 minutes or until heated through. Sprinkle on remaining 1 cup cheese and return to oven until cheese is melted. Serve with tortilla or corn chips, flour tortillas, sour cream, salsa, guacamole, avocado slices. Can add ground beef or chicken.

8 ounces monterey jack cheese (can sub pepper jack)
8 ounces cream cheese
1 cup milk
1/3 cup chopped jalapeno

Steps:

  • Combine cheeses and milk over medium low heat and stir until smooth and creamy.
  • Add beans and jalepenos and stir until uniform consistency.
  • Pour into a bowl and serve with tortilla chips.
  • If you use the pepper jack cheese, you may not need to add any additional jalapenos.
  • This makes enough for any picnic or BBQ, if you want to cut the recipe, just keep the cheeses and milk in equal thirds, and add beans to taste.

1 cup uncooked brown rice
1 can (16 ounces) kidney beans, rinsed and drained
1 large onion, chopped
1 tablespoon canola oil
1 can (14-1/2 ounces) diced tomatoes and green chilies, undrained
2 teaspoons chili powder
1/4 teaspoon salt
1-1/4 cups shredded reduced-fat cheddar cheese, divided

Steps:

  • Cook rice according to package directions. Transfer to a large bowl; add the beans. In a nonstick skillet, saute onion in oil for 4-5 minutes. Stir in the tomatoes, chili powder and salt. Bring to a boil; remove from the heat., In a 2-qt. baking dish coated with cooking spray, layer a third of the rice mixture, cheese and tomato mixture. Repeat layers. 1 (10 ounce) can diced tomatoes with green chile peppers, drained
1 (10.5 ounce) can condensed Cheddar cheese soup
½ cup shredded Colby-Jack cheese
1 tablespoon taco seasoning mix
1 pinch cayenne pepper, or to taste

Steps:

  • Combine beans and tomatoes with chile peppers in a medium saucepan over medium-low heat. Cook, stirring occasionally, until warm, about 5 minutes. Mash most of the beans with the back of a spoon while stirring.

1 onion (finely chopped)
2 (400 g) cannellini beans (drained, rinsed)
1 cup parmesan cheese (grated)
1 tablespoon parmesan cheese (grated extra for topping)
1/2 cup mayonnaise (whole-egg)
2 teaspoons Worcestershire sauce
Tabasco sauce (few drops or to taste)
2 tablespoons breadcrumbs (fresh)

Steps:
