2 swordfish steaks, from sustainable sources
olive oil
2 cloves of garlic
20 ripe cherry tomatoes
1 lemon
45 g capers
a few sprigs of fresh flat-leaf parsley

Steps:

  • Season the swordfish and drizzle with oil, then pan-fry or grill for 5 minutes over a high heat on each side, or until cooked. Transfer to plates.
  • Peel and finely slice the garlic, then segment the lemon.
  • Heat 1 tablespoon of oil in a frying pan over a high heat, add the garlic and tomatoes and sauté for 5 minutes, or until lightly golden.
  • Add the lemon and capers and cook for 2 minutes.
  • Finely chop and add the parsley leaves, season with black pepper, stir, then pour over the fish and serve.

Swordfish With Lemon and Fennel image

This dish is truly clever weeknight cooking - sophisticated, fast, unfussy and wholly delicious. Swordfish is cut into chunks, which cook faster than steaks, and then is sautéed in olive oil, butter or, for the best results, a combination of the two. The fat protects the fish from the heat of the pan, preventing the fish from drying out. It also provides lots of flavor, as do fennel seeds, garlic, lemon zest and red pepper flakes, which are added to the pan after the fish has cooked for a few minutes. Fennel fronds are a nice garnish, offering their light anise flavor and feathery texture, though you could use chopped fresh basil, parsley or cilantro instead. Cumin or coriander seeds can stand for the fennel seeds, or you can leave them out altogether and double the chile.

1 1/2 pounds swordfish steaks, about 1-inch thick
Kosher salt and freshly ground black pepper
1/2 teaspoon fennel seeds
1 1/2 tablespoons olive oil
1 tablespoon butter
2 garlic cloves, minced
Finely grated zest of 1/2 lemon
1/4 teaspoon crushed red chile flakes, more to taste
1 tablespoon fresh lemon juice
2 teaspoons chopped fresh fennel fronds
Lemon wedges, for serving

Steps:

  • Using a sharp knife, cut the skin off the swordfish, then cut the fish into 1-inch cubes. Season fish cubes generously with salt and pepper.
  • Using a mortar and pestle or the flat side of a heavy knife, lightly crush the fennel seeds to release their flavor.
  • In a skillet large enough to hold all the fish cubes in one layer, heat the olive oil and butter over medium heat until the butter melts. Add the fish to the pan and let cook, turning the fish and basting with the oil and butter, for 3 minutes. Stir in the garlic, fennel seeds, lemon zest and chile flakes and continue to cook, stirring gently so as not to break up the fish cubes, until the fish is just cooked through, about 2 minutes longer. Gently stir in the lemon juice. Taste and add more salt and chile flakes if desired. Garnish with fennel fronds and lemon wedges.

Yes, you can cook fish in a slow cooker, but it's a little different than making a pot roast or brisket. Instead, you build a complex sauce through long, even cooking. Then slip the fish into the sauce for the last 30 minutes or so, until it's just cooked through. Meaty swordfish is perfect here, but in the summer, we also make this with fresh halibut steaks; just be sure your steaks are at least 1 inch thick so they cook in the same amount of time.

1 small fennel bulb (about 10 oz.), trimmed, cored, and chopped; fronds reserved for garnish
1 large shallot, chopped
2 Tbs. tomato paste

1 tsp. minced garlic
Kosher salt and freshly ground black pepper
1/4 cup heavy cream
1-1/2 lb. 1-1/4-inch-thick swordfish steaks, blood line removed

Steps:

  • Mix the tomatoes, fennel, shallot, tomato paste, rosemary, fennel seeds, garlic, 1/2 tsp. salt, and 1/2 tsp. pepper in a 5- to 6-quart slow cooker until the tomato paste dissolves. Cover and cook for 2 hours on high or 4 hours on low. (The sauce can stay on the keep-warm setting for up to 6 hours.)
  • Season the fish generously with salt and pepper. Turn the slow cooker to high (if it was on low or keep-warm) and stir in the cream. Nestle the fish steaks in the sauce, cutting them to fit, if necessary. Cover and cook until the fish is cooked through (use a paring knife to cut into the fish to check), about 30 minutes. Use a spatula to divide the fish into four servings, then serve in bowls with the sauce, garnished with fennel fronds.

1 medium onion, halved and thinly sliced
1 fennel bulb, halved and thinly sliced
3 tablespoons olive oil
1 garlic clove, minced
1 can (28 ounces) whole tomatoes, drained

1/2 teaspoon kosher salt

1.5 pounds swordfish steaks
2 large plum tomatoes
2 Tbsp capers
1/4 cup fresh parsley
1/4 cup extra virgin olive oil
1/4 cup light or regular olive oil
6 cloves garlic
1/4 tsp kosher salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes
3/4 cup chopped olives

Steps:

  • Mince the garlic. Rough chop the olives. Chop the parsley.
  • Halve the tomatoes and scoop out the seeds. Chop the tomatoes.
  • Saute the garlic on medium to medium low heat in 1/4 cup of extra virgin olive oil for 1-2 minutes.
  • Add the olives and saute for 1 minute. Add the tomatoes and saute for 1 minute more.
  • Turn off the heat and add the parsley, capers, and optional crushed red pepper. Place the olive and caper sauce in a bowl.
  • Wipe down the pan and heat the regular olive oil on medium.
  • Pat the swordfish steaks dry with a paper towel and season with the salt and pepper.
  • Place the steaks in the hot pan and cook for 3 minutes per side.
  • Remove the steaks and plate. Spoon the olive and caper sauce all over the swordfish. Serve the remaining sauce on the side for anyone who would like extra. Enjoy!

1 swordfish steak (about 1 pound)
2 lemon quarters

Steps:

  • Quarter fennel and cut awaytough base. Slice quarters thin.
  • Using a small saute pan, nonstick if possible, heat one tablespoon olive oil and add the fennel, garlic and ginger. Season with salt and pepper and cook, stirring frequently, over moderate heat until the fennel is tender (about 10 minutes). Remove to a heated plate and keep warm.

Place the tomatoes into a perforated pan and set over the wood chips, then top with a lid. Place over medium heat, and smoke the tomatoes for 30 to 45 minutes. Meanwhile, combine the fennel, shallots and garlic in a pot and simmer until translucent. Pour in the wine to deglaze, and then stir in the cream, stock and smoked tomatoes. Mash the tomatoes into the sauce using a whisk or the back of a stirring spoon. Simmer over medium heat until the liquid is reduced by two-thirds. Puree until smooth, strain and season with salt and sugar. Reserve for plating.
