BRENDA'S BEST BLUEBERRY YOGURT POUND CAKE
A very moist and dense pound cake. Always gets rave reviews!! Perfect for quieting the afternoon tummy-grumblies with a coffe or tea.

Steps:
- In a large bowl, cream butter until fluffy; beat in sugar until light and fluffy (about 5-8 minutes).
- Beat in eggs, one at a time.
- In a second bowl sift together flour, baking soda and salt.
- In a third bowl mix together yogurt, orange juice and rind.
- Alternately add dry and wet mixture to the creamed mixture, making 3 additions of dry and 2 of wet.
- Stir in blueberries.
- Pour batter into well greased and floured 9" or 10" tube or Bundt pan.
- Tap pan lightly to release air bubbles and smooth top.
- Bake at 350F for 60-70 minutes or until knife comes out clean.
- Let cool for 15 minutes in pan, the remove and cool on rack.
- Before serving, sieve icing sugar over top.

Steps:
- Sift flour and salt (if using); set aside.
- Combine orange slice candy, pitted dates, pecans and coconut; set aside.
- Beat butter until light. While beating, gradually add sugar. Beat eggs, then add to butter and sugar.
- Combine baking soda and buttermilk.
- Add milk alternating with flour mixture. Blend well after each addition.
- Add candy mixture, mixing well.
- Turn into a 10-inch tube pan that has been greased and floured. Bake for 1 hour and 45 minutes at 300 degrees.
- Remove from oven; combine orange juice and sugar and mix well.
- TOPPING Combine orange juice and sugar. Mix well. Pour over cake.

Steps:
- 1. Combine butter, sugar, buttermilk, eggs, soda in large mixing bowl. Add flour slowly blending in well.
- 2. Add dates, pecans, orange slices, and coconut.
- 3. Bake 2 hours in tube pan at 250. When you take it out of the oven, while hot pour glaze over it.
- 4. Glaze: in saucepan combine orange juice, rind, and confectioner's sugar and bring to boil. Pouring it on hot cake. Serve hot or cold. Store any leftovers in the refrigerator.
