Great for breakfast, lunch, or dinner! Feel free to experiment with this original recipe by me. Yummy sauteed meat, potatoes, veggies, with eggs. Ingredient measures are approximate. I had to guess how much I used as I put things in as I went. Love an ingredient, ADD MORE! Don't like one much, ADD LESS! Very versatile recipe.

3 eggs
3 tablespoons milk
2 tablespoons butter
2 potatoes, cubed
½ cup cubed fully cooked ham
¼ cup chopped onion
1 ½ teaspoons minced garlic
¼ cup water, or as needed
salt and ground black pepper to taste
¼ cup shredded Cheddar cheese

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Beat eggs and milk in a bowl.
  • Melt butter in a large, oven-safe skillet over medium heat; cook and stir potatoes, ham, onion, and garlic in melted butter until potatoes are tender, about 15 minutes. Add water if vegetables become dry. Season with salt and pepper.
  • Pour egg mixture over vegetable mixture. Cook, without stirring, until eggs are slightly browned on the bottom.
  • Broil in the preheated oven until eggs are nearly set, about 5 minutes. Sprinkle Cheddar cheese over eggs and continue broiling until frittata is completely set and cheese is melted, about 5 minutes more.

These little frittatas are so quick and easy, and my husband and kids just gobble them up. Make them in a 24 cup mini-muffin tin. I first had these at a neighborhood breakfast, and my neighbor added fresh onions and veggies, but this is great for making on nights when there isn't much in the fridge! Honey ham is good in these, as well. They can be served hot or cold and are great as reheated leftovers.

6 slices Swiss cheese, finely chopped
6 slices deli ham, finely chopped
8 eggs
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Prepare 24-cup mini-muffin pan with cooking spray.
  • Toss cheese and ham together in a bowl; distribute evenly between the 24 prepared muffin cups.
  • Beat eggs, onion powder, garlic powder, and pepper together with a whisk in a bowl; pour in equal amounts over ham and cheese in muffin cups.
  • Bake in preheated oven until tops turn light golden brown, about 12 minutes. Remove frittatas form cups with a spoon.

8 large eggs
1/4 cup chopped fresh chives
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons (1/4 stick) butter
1 1/2 cups chopped bell peppers (mix of red, yellow, and green)
4 ounces Black Forest ham, cut into 1/2-inch dice
1 cup grated Swiss cheese

Steps:

  • Whisk eggs, chives, salt, and pepper in medium bowl to blend. Melt butter in large broilerproof skillet over medium heat. Add peppers and ham; sauté until peppers are tender, about 5 minutes.
  • Preheat broiler. Pour egg mixture over peppers and ham in skillet. Cook over medium heat until bottom and edges are set, stirring occasionally, about 3 minutes. Using spatula, carefully lift edges to allow uncooked egg to flow underneath. Reduce heat to medium-low. Lift edges 2 or 3 more times, allowing uncooked egg to flow underneath, until top is almost set, about 2 minutes. Sprinkle cheese over frittata. Transfer skillet to broiler. Broil until cheese is bubbling and eggs are set, about 1 minute. Let frittata stand at least 1 minute and up to 1 hour. Rewarm in microwave oven, if desired, or serve at room temperature.

8 frozen buttermilk biscuits (from 16-oz bag, I don't see why you couldn't use refrigerated biscuits)
4 teaspoons italian seasoning
4 eggs
1/4 cup diced cooked ham
2/3 cup shredded Italian cheese blend
2 tablespoons roasted red peppers, drained and chopped (from a jar)
1/4 cup diced seeded plum tomato (Roma)
2 tablespoons thinly sliced fresh basil leaves

Steps:

  • Heat oven to 375°F Spray cookie sheet with cooking spray. Place biscuits on cookie sheet, and sprinkle each biscuit with 1/2 teaspoon Italian seasoning; bake as directed on bag.
  • In small bowl, beat eggs; beat in remaining ingredients. Heat 10-inch nonstick skillet over medium heat; lightly grease if necessary. Pour egg mixture into skillet; cook, lifting sides to allow raw egg mixture to flow underneath, until eggs are completely set.
  • Cut into 8 wedges; fold each in half and place on hot biscuits to make sandwiches.
