Steps:

  • Take a pot to add three tbsp of ghee and heat it
  • Add three small cardamon and cook to 2 minutes in ghee
  • Add one cup of suji (semolina) and cook for 3 minutes
  • Add two cup of sugar and again mix it
  • Add one cup of water and mix it
  • Add half tbsp of saffron and half tbsp of Zarda color and mix it
  • Cover and cook of 5 minutes on the low flame of the stove
  • In the end, add raisin and mix together
  • Dish out the plate and garnished with almonds and saffron
  • Serves with puri and also eat like dessert

Suji Halwa is a delicious Indian pudding made with semolina, ghee, cardamoms and nuts. It is made for most festive occasions and goes well as an after meal dessert.

1 cup suji ((fine rava / semolina))
1 cup sugar ( (prefer organic))
½ cup ghee ((can reduce to 6 tbsps))
2½ cup water ((or milk))
½ teaspoon green cardamom powder ((elaichi powder))
15 cashew nuts ((adjust as needed))
15 raisins ((adjust as needed))

Steps:

  • Pour 2½ cups water to a pot & begin to heat it.
  • Meanwhile on another burner heat ghee in a pot. When the ghee turns hot, add cashews and fry until light golden.
  • Then add the raisins and fry until they swell. Remove to a plate.
  • Now add rava to the ghee and begin to fry on a medium heat stirring constantly.
  • Fry until the rava turns golden. If you prefer deep roasted suji halwa, then continue to fry for few more minutes.
  • Bring the water to a rolling boil.
  • Pour the hot water to the hot rava pan stirring constantly. Be careful as it splatters.
  • Keep the flame to medium and keep stirring until all the water is absorbed. Sheera is thick at this stage.
  • Cover and cook on a low flame for 1 to 2 mins.
  • Next add the sugar and cardamom powder. Mix well to dissolve the sugar. It dissolves & makes the entire sheera gooey.
  • Within a minute the gooey sheera turns thick again. Keep stirring until it begins to leave the pan.
  • When it cools down fluff up with the spatula. Transfer to serving bowls and garnish with cashews and raisins.
  • You can also press it down in a small bowl and invert on serving plates.

4 tablespoons ghee
2 tablespoons flaked almonds
2 tablespoons raw, shelled pistachios, cut into slivers lengthwise
½ cup sooji (Indian semolina)
⅓ cup sugar
¼ teaspoon ground cardamom

Steps:

  • Put the ghee in a medium nonstick frying pan and set over medium-low heat. When hot, add the almonds and pistachios, and stir just until the almonds turn golden. Using a slotted spoon, quickly transfer the nuts to a plate.
  • Put the sooji into the ghee remaining in the pan and fry over low heat for 6-7 minutes, stirring now and then, until it is golden. Add the sugar and mix well. Add 1½ cups water, the ground cardamom, and the reserved nuts, and bring to a simmer over medium-low heat. Stir and cook over very low heat for 2-3 minutes, then turn off the heat and stir for another minute. Serve hot.
  • If you prefer, you could put the halva into a 7x7-inch cake pan or similarly shaped dish. Press down lightly and flatten the surface, then cut into 1½-inch squares. When it has cooled to room temperature, place plastic wrap directly on the surface of the cake to stop a skin forming. Serve immediately or later, as you would any cake.

6 green cardamom pods
175g golden caster sugar
125g ghee
125g semolina, chapati flour or wholewheat flour
25g raisins, soaked in hot water
25g almonds, sliced with their skin on

Steps:

  • Split the cardamom pods with a sharp knife and remove the seeds. Grind the seeds to a powder with 1 tsp of the sugar using a pestle and mortar. Keep the empty pods for the syrup.
  • Heat the remaining sugar in a pan over a medium heat with 600ml water until dissolved. Add the empty cardamom pods and simmer, uncovered, for 5 mins. Turn off the heat, cover the pan and set aside.
  • Heat the ghee in a wok or karahi over a medium heat, then add the semolina or flour. Reduce the heat to low and cook, stirring all the time, until it releases a toasted aroma and turns a biscuity golden colour, about 10 mins.
  • Take the pan off the heat. Discard the empty cardamom pods from the warm syrup and pour it over the semolina in a thin, steady stream, stirring all the time. Take care - it will sputter. Return the pan to a medium heat and cook, stirring constantly, until the semolina thickens. It should have the consistency of creamy mashed potato. Stir in the ground cardamom, drained raisins and most of the sliced almonds. Serve piping hot with the remaining almonds scattered over.

3/4 cup pure ghee (BUTTER OIL)
3/4 cup sugar
2 1/2 cups water
1 pinch saffron
almonds, slivers to garnish
cashew nuts, slivers to garnish

Steps:

  • Mix sugar and water and bring to the boil to make a syrup of one-thread consistency.
  • Add saffron and keep aside.
  • Heat pan and add ghee, wait for a few seconds till it is warm.
  • Now add semolina.
  • Stir till pinky brown on medium heat only.
  • Then add syrup and keep stirring till ghee separates.
  • Decorate with nuts.

1 cup semolina (sooji)
3/4 cup sugar
3 cups water
2 tablespoons raisins (kish mish)
1/4 teaspoon cardamom seed (choti elaichi)
12 tablespoons ghee

Steps:

  • In a pan add water and sugar. Boil it for ten to 15 mins high or till the water dries up into half.
  • Turn off the heat & add the raisons (kish mish) in it. This would be yr sheera.
  • In a separate pan warm up the ghee on medium high and add cardamom seeds and semolina (sooji) in it. Keep on stirring it till the semolina turns a bit darker or golder brown. Note u can not leave the semolina unattended now since it can stick in the pan & burn up easily.
  • Stir fry it for 10 minutes.
  • Now add the sugar water & cook it for 5 mins on high.
  • Once the water dries up & the semolina puffs a little bit cover the pan & let it simmer for another 5 minutes.
  • Take out in a serving dish. Sprinkle some chopped dry fruits.
  • This sweet dish is best served hot.
