SALTED LEMON-GINGER SPRITZER

Salted Lemon-Ginger Spritzer image

A little sweet, lightly sour and a touch briny: This spritz is inspired by the salty lemonade found in Vietnam as a way to beat the heat. Without ice and ginger beer, this mix keeps well in the fridge, so consider making a large batch to help get you through the summer. If adding ginger kombucha, bear in mind that, though most brands are not legally considered alcoholic by the Alcohol and Tobacco Tax and Trade Bureau, they do contain trace amounts (up to 0.5 percent). If you're strictly abstaining, opt for something like non-alcoholic ginger beer or ginger ale.

Provided by Alison Roman

Categories     non-alcoholic drinks

Yield 1 drink

Number Of Ingredients 6

1/4 lemon, seeds removed, coarsely chopped (skin, peel and all)
Small pinch of kosher salt or fine sea salt
1 tablespoon fresh lemon juice
1 teaspoon freshly grated ginger (optional)
Ginger beer or ginger kombucha, to taste
Lemon wedge or slice of fresh ginger, for garnish

Steps:

  • Place the lemon and salt in a large wine glass and using the back of a spoon, lightly muddle to break up and release some of the oils and juices. Add lemon juice and ginger (if using) and top with lots of ice and ginger beer. Garnish with lemon wedge or fresh ginger.

SWEET OR SALTY LEMONADE

Sweet or Salty Lemonade image

Sweetened, this is a classic all-American beverage for a hot summer's day. But add salt and it becomes a savory treat, much like the limeades served in the Middle East, India or Thailand. With or without salt, this recipe delivers. The proportions of water to juice, sugar and salt are completely a matter of taste, so adjust the recipe as you like. It works equally well with limes as it does with lemons.

Provided by Mark Bittman

Categories     easy, non-alcoholic drinks

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 3

1 cup sugar
1 cup freshly squeezed lime or lemon juice, pulp and rinds reserved (from about a dozen limes or lemons)
2 teaspoons salt, or to taste (optional)

Steps:

  • In a small saucepan combine sugar with 1 cup water, and place over medium heat; cook, stirring, until sugar dissolves.
  • In another pan bring 6 cups water to a boil; remove from heat, and add rinds and pulp. Cover, let steep for 10 minutes and then strain.
  • Combine strained liquid in a pitcher with lime or lemon juice and salt, if using. Refrigerate until ready to serve. (Fruit mixture and sugar syrup can be refrigerated separately for a couple of days, until needed.) Add syrup to taste, and serve over ice.

A study in the British Journal of Anaesthesia suggested that ginger is helpful in controlling nausea in a variety of situations, including stomach distress induced by chemotherapy. The American Cancer Society notes that, in addition to helping with nausea and motion sickness, ginger might slow tumor growth.
