A simple Lemon Ginger Spritzer recipe made with ginger, fresh-squeezed lemon, honey and sparkling water. The perfect refreshing summer drink!

Steps:
- Add ginger, honey and lemon slice to the bottom of an 8 oz glass. Muddle with a muddler (or spoon) to release the juices from the lemon and ginger.
- Fill the glass with ice, add sparkling water, and top with a slice of lemon, if desired. Serve immediately and enjoy!

GINGER LEMONADE FIZZ

- Heat the sugar and 1 cup water in a small pot until the sugar has dissolved and the liquid just comes to a boil. Turn off the heat and add the ginger. Let cool, then strain the syrup into a large mason jar and discard the ginger. Add the lemon juice to the syrup and refrigerate until ready to use.
- Fill 4 large glasses with ice, pour 1/4 cup of the syrup into each glass and top up with some club soda. Add a slice of lemon to each glass and serve.
SALTED LEMON-GINGER SPRITZER
A little sweet, lightly sour and a touch briny: This spritz is inspired by the salty lemonade found in Vietnam as a way to beat the heat. Without ice and ginger beer, this mix keeps well in the fridge, so consider making a large batch to help get you through the summer. If adding ginger kombucha, bear in mind that, though most brands are not legally considered alcoholic by the Alcohol and Tobacco Tax and Trade Bureau, they do contain trace amounts (up to 0.5 percent). If you're strictly abstaining, opt for something like non-alcoholic ginger beer or ginger ale.

- Place the lemon and salt in a large wine glass and using the back of a spoon, lightly muddle to break up and release some of the oils and juices. Add lemon juice and ginger (if using) and top with lots of ice and ginger beer. Garnish with lemon wedge or fresh ginger.

REFRESHING LEMON-GINGER DRESSING
This dressing is wonderfully light and tangy; serve over salad. It goes perfect with my squished kale salad (see my recipe box for this). Made as directed, this recipe is gluten free, wheat free, soy free, dairy free, and corn free. I use my Vitamix® to blend the dressing together. Enjoy!

- In a small saucepan combine sugar with 1 cup water, and place over medium heat; cook, stirring, until sugar dissolves.
- In another pan bring 6 cups water to a boil; remove from heat, and add rinds and pulp. Cover, let steep for 10 minutes and then strain.
- Combine strained liquid in a pitcher with lime or lemon juice and salt, if using. Refrigerate until ready to serve. (Fruit mixture and sugar syrup can be refrigerated separately for a couple of days, until needed.) Add syrup to taste, and serve over ice.

- For the sipping vinegar:.
- Mash the blackberries and sugar together in a bowl, cover and refrigerate for 2 days, stirring occasionally. Add the vinegar to the macerated blackberries and refrigerate for another day. Press the mixture through a fine mesh strainer, discarding the solids. Transfer your sipping vinegar to a container.
- For the herbal tea:.
- Combine the ginger and 2 1/2 cups water in a small saucepan. Bring to a boil and simmer for 10 minutes. Add the tea bags and turn off the heat. Let the mixture steep for 5 minutes, then strain and cool.
- For the spritzer:.
- Fill a cocktail shaker with ice. Add 2 ounces blackberry sipping vinegar, 2 ounces cooled herbal tea, 1/2 ounce lemon juice and 1/2 ounce elderflower syrup. Shake vigorously and pour over a glass filled with ice. Top off with some seltzer and garnish with 3 cucumber slices, 1 ginger coin and a mint sprig. Repeat.

GINGER TEA SPRITZER
This cool, refreshing drink tastes wonderful, and can also help combat nausea.
Yield makes 1 cup of syrup

- Put the tea bags in a small saucepan, pour the boiling water over them, and steep for 15 minutes.
- Put the saucepan over medium heat and cook until the tea is reduced by half. Stir in the honey and lemon juice, then let cool to room temperature. To serve, put 2 tablespoons of the ginger syrup in a glass and add sparkling water.
- For a change, try making this recipe with both chamomile and ginger tea bags, or a chamomile ginger blend, if you can find that.
- Store the syrup, covered, in the refrigerator for 5 days.
