An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 (2 pound) beef round steak, 1 inch thick
2 tablespoons vegetable shortening
¼ cup water, or as needed
1 (8 ounce) can diced tomatoes
1 onion, minced
½ green bell pepper, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
  • Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.
  • Turn steak pieces over and add tomatoes, onion, and green bell pepper to the skillet. Season with salt and black pepper. Simmer until vegetables are tender, about 30 more minutes.

1 teaspoon salt
1/2 teaspoon pepper
2 pounds boneless beef round steak, cut into serving-size portions
2 tablespoons butter
1/2 cup chopped onion
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 cup water
Hot cooked noodles

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add beef, a few pieces at a time, and shake to coat., In a large skillet, brown beef in butter on both sides. Transfer to a 3-qt. slow cooker; top with onion. Combine soup and water; pour over onion. Cover and cook on low for 8-10 hours or until meat is tender. Serve with noodles.

½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
  • Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

1 tablespoon canola oil
1 medium onion, chopped
1 celery rib with leaves, chopped
1 garlic clove, minced
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 can (8 ounces) tomato sauce
1 teaspoon beef bouillon granules
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a large nonstick skillet, brown cube steaks on both sides in oil over medium-high heat; remove and set aside. 2 pounds cube steaks, pounded thin and cut into bite-sized pieces
1 ½ tablespoons all-purpose flour
1 medium onion, chopped
1 pound mushrooms, sliced

1 (1.2 ounce) package brown gravy mix
2 (14.5 ounce) cans stewed tomatoes
1 (12 ounce) package egg noodles

Steps:

  • Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch oven, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.

1/3 cup plus 3 tablespoons all-purpose flour, divided
1-1/2 teaspoons each salt, pepper, paprika and ground mustard
3 pounds beef top round steak, cut into serving-size pieces

1-1/2 cups sour cream
1 cup finely chopped onion

This is the recipe my mom made and I always looked forward to. It is different than most I have seen posted and is very easy to make. The gravy is delicious on mashed potatoes.

1 -2 lb boneless round steak
salt and pepper
1 -2 tablespoon vegetable oil
1/2 medium onion, chopped
1/2 cup catsup
1/2 cup water
1 tablespoon Worcestershire sauce
2 tablespoons wine
1 clove garlic, minced
1 teaspoon sugar
1 (10 1/2 ounce) can cream of mushroom soup, undiluted

Steps:

  • Beat flour into steak.
  • Sprinkle with salt& pepper.
  • Place oil in large pan and heat; brown steak on both sides in pan.
  • Remove steak from pan.

1 thick chuck steak (about 4 pounds), bone in, or a 2- to 3-pound piece of round steak
1 clove garlic
Flour seasoned with salt and pepper (1/2 teaspoon salt and 1/4 teaspoon pepper per half-cup of flour)
1/4 cup olive oil or bacon fat
1 large Spanish onion, chopped
1 12-ounce package fresh mushrooms, sliced thick
1/2 cup tomato puree
1/4 cup Cognac
1 cup red wine
1 cup chicken (or other) stock
1/2 teaspoon thyme
1/2 teaspoon savory
1/2 teaspoon marjoram
1 bay leaf
Salt and pepper as desired

Steps:

  • Rub the steak all over with the garlic clove. Using a tenderizing mallet, the back edge of a cleaver or the edge of a heavy plate, pound into both sides of the steak as much of the seasoned flour as it will hold.
  • Heat the oil in a large skillet, brown the steak on both sides and remove to a suitable covered baking dish. Pre-heat oven to 300 degrees.
  • Add onion to the skillet and cook, stirring often, until lightly browned. Add mushrooms and cook, stirring, until lightly browned. Add tomato puree, Cognac, wine, stock, thyme, savory, marjoram, bay leaf, salt and pepper, and bring to a boil. Pour mixture over steak, cover and bake 2 hours or until very tender.
  • Carefully remove steak to a deep serving platter. Skim surface fat from the sauce in the baking dish, check seasonings and pour around steak. Pass any extra sauce at the table. Serve with mashed potatoes.

I got this recipe a few years back, and it has become one of my family's absolute favorites. This meal is great for Sunday dinners, as it takes a good 8 hours to cook, which gives you the most tender Swiss Steak you will ever eat. My husband, whom does not like anything "meat" tasting loves this one. The thing that makes it so different is the use of burgandy wine. Also, I have only made it with a crock pot, but I am sure that if you don't have one you could cook it in the oven at at low temp. for the 6 hours. I hope you all enjoy this as much as I do.

2 lbs beef round steak, cut 1 inch thick
2 tablespoons all-purpose flour
2 teaspoons salt

Place onion, carrot, and green pepper in crock pot. Place meat atop. Combine UNDRAINED tomatoes, Burgundy, garlic and sugar. Pour over meat. Cover and cook on low heat setting for 8 to 10 hours. Transfer meat and vegetables to serving platter. Reserve 1 1/2 cups of the cooking liquid for Wine Sauce.
  • Wine Sauce:.
  • Pour reserved liquid into saucepan. Blend 1/4 cup cold water slowly into 2 tablespoons all-purpose flour; stir into liquid. Cook and stir until thickened and bubbly. Season to taste.
  • ****I usually double the ingredients to make the wine sauce (only because I have a family of 6) and it makes just enough to spoon over everybody's meal. You should get just about 3 cups of liquid when it is done cooking.
  • Spoon some sauce over meat; pass remaining sauce.

SAVORY SWISS STEAK

Have you ever had cube steak (or round steak) sitting in your freezer and had absolutely no idea how you were going to prepare it differently than usual? This was my dilemma until I came across this recipe by Marilyn Moll of Urban Homemaker in a cookbook my friend Shannon kindly printed off for me. Marilyn describes it best: "Vegetables thicken the sauce-like gravy which smothers fork-tender steak." It is important to peel and grate your carrots and finely chop your onion and celery for the gravy to form properly. I also tend to double the amount of flour/mustard mixture that I dredge my round or cube steaks in to be sure that they are well coated. I serve this with cheddar and roasted garlic mashed potatoes.

2 carrots, peeled and grated
2 celery ribs, finely chopped

2 tablespoons Worcestershire sauce
2 tablespoons butter
2 tablespoons oil

Steps:

  • Cut round steak or cube steak into 6 or more serving size pieces.
  • Salt and pepper steak pieces.
  • Combine flour and dried mustard; then coat steak pieces with flour mixture.
  • Using a large frying pan, brown the meat in 1 tablespoon of oil and 1 tablespoon of butter.
  • Transfer to a crock pot.
  • Heat remaining oil and butter in the same frying pan.
  • Add onion, carrots, and celery. Saute until vegetables are glazed.
  • Add tomatoes, Worcestershire, and sugar. Heat, scraping up drippings from bottom of pan.
  • Pour vegetable mixture over the meat in the crock pot.
  • Cover and cook on low for 6-8 hours, or until tender.
  • Serve meat with vegetable sauce over top. Sprinkle with chopped parsley as garnish, if desired.
  • Note: I won't claim that this is the most beautiful looking dish in the world but even the kids loved it once they got past their initial wrinkled nose inspections. It sure does smell good while cooking though.

1 large yellow onion, sliced
1 1/2 lbs lean ground beef

1/3 cup Burgundy wine or 1/3 cup red wine
1/4 teaspoon dried thyme leaves, crumbled

Steps:

  • In a large skillet cook bacon over moderatly-high heat;cook until crisp and browned, about 5 minutes.
  • Transfer bacon to paper towels and set aside; reserve drippings in the skillet.
  • Core and seed the bell pepper; cut into strips, add mushrooms, onions and bell pepper to the drippings in the skillet; cook stirring frequently, until crisp tender, about 4 minutes.
  • Meanwhile, shape ground beef into 4 oval steaks about 3/4 inch thick; sprinkle on both sides with salt and pepper.
