VEGETARIAN POT PIE

1 tablespoon unsalted butter
2 small heads fennel, finely chopped (about 3 cups)
1/2 medium yellow onion, finely chopped
2 medium carrots, peeled and finely chopped (about 2/3 cup)
12 ounces white button mushrooms, sliced (about 5 cups)
1 small russet potato, peeled and diced small (about 2 1/2 cups)
1/4 cup all-purpose flour
1 cup low-sodium mushroom broth
1 cup whole milk
1 cup frozen baby green peas
1/4 cup thinly sliced fresh chives
1/4 cup parsley
1 tablespoon white vinegar
1 large egg yolk
7 ounces store-bought puff pastry or pie dough, defrosted if frozen

Steps:

  • Heat the oven to 400 degrees F and arrange a rack in the middle.
  • Melt butter over medium heat in a 3- to 4-quart Dutch oven or heavy bottomed saucepan. When it foams, add fennel, onions, and carrots, and cook until just soft and onions are translucent, about 2 minutes. Add mushrooms and potato, season well with salt and freshly ground black pepper, and stir to coat. Cook, stirring rarely, until mushrooms have let off water and are shrunken, about 6 minutes.
  • Sprinkle flour over vegetables, stir to coat, and cook until raw flavor is gone, about 1 to 2 minutes. Carefully add broth and milk, stirring constantly until mixture is smooth. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes.
  • Remove from heat, add peas, herbs, and vinegar, and stir to coat. Season well with salt and freshly ground black pepper. Turn filling into an 8 by 8-inch baking dish.
  • Whisk egg together with 2 teaspoons water and a pinch of salt until evenly mixed. Set aside.
  • With kitchen shears, cut dough to fit over the baking dish. Place dough over filling and tuck into the edges of the dish. Brush dough with egg wash and cut slits in the top to vent. Place on a baking sheet and bake until crust is golden brown and mixture is bubbling, about 25 to 30 minutes. Let sit at least 5 minutes before serving.

Steps:

  • Prepare the puff pastry: Thaw the puff pastry overnight in the fridge. If you forget, you can thaw it on the counter: Remove the frozen pastry from its packaging and defrost on a sheet tray until cool but pliable, about 40 minutes. Meanwhile, prepare the vegetable filling.
  • Preheat the oven and fill the ramekins: Heat your oven to 400°F. Evenly divide the filling among ramekins, about 3/4 cup of filling per serving.

2 tablespoons olive oil
1 onion, chopped
8 ounces mushrooms
1 clove garlic, minced
2 large carrots, diced
2 potatoes, peeled and diced
2 stalks celery, sliced 1/4 inch wide
2 cups cauliflower florets
1 cup fresh green beans, trimmed and snapped into 1/2 inch pieces
3 cups vegetable broth
1 teaspoon kosher salt
1 teaspoon ground black pepper
2 tablespoons cornstarch
2 tablespoons soy sauce
1 recipe pastry for double-crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat oil in a large skillet or saucepan. Cook onions, mushrooms, and garlic in oil for 3 to 5 minutes, stirring frequently. Stir in carrots, potatoes, and celery. Stir in cauliflower, green beans, and vegetable broth. Bring to a boil, then turn heat down to a simmer. Cook until vegetables are barely tender, about 5 minutes. Season with salt and pepper.
  • In a small bowl, mix the cornstarch, soy sauce, and 1/4 cup water until cornstarch is completely dissolved. Stir into vegetables, and cook until sauce thickens, about 3 minutes.
  • Roll out 1/2 of the dough to line an 11x7 inch baking dish. Pour the filling into the pastry lined dish. Roll out remaining dough, arrange over the filling, and seal and flute the edges.
  • Bake in preheated oven for 30 minutes, or until the crust is brown.

1 (10 3/4 ounce) can condensed cream of potato soup
2 cups mixed vegetables
1/2 cup milk
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
2 frozen prepared pie crusts, thawed (9 inch)
1 egg, lightly beaten (optional)

Steps:

  • Preheat oven to 375 degrees F.
  • In a medium bowl, combine potato soup, mixed vegetables, milk, thyme, and black pepper.
  • Spoon filling into bottom pie crust.
  • Cover with top crust, and crimp edges to seal.
  • Slit top crust, and brush with beaten egg if desired.
  • Bake for 35-50 minutes.
  • Remove from oven, and cool for 10 minutes before serving.
  • To freeze: Mix filling ingredients as directed. Remove both pie crust from pan. Brush first crust with beaten egg, lay second crust on top. Divide filling into 4 mini loaf pans. Trace crust and cut out. Place crust over pans and seal. Use a knife to make several vents for steam. Cover with plastic wrap and place into a zip-top bag.
  • To serve: From frozen, cover pies with foil and place on a baking sheet. Bake 40 minutes at 375. Remove foil and bake an additional 30 minutes. Allow to rest 10 minutes before serving.

12 tablespoons unsalted butter (1 1/2 sticks)
2 cups sliced yellow onions (2 onions)
1 fennel bulb, top and core removed, thinly sliced crosswise
1/2 cup all-purpose flour
2 1/2 cups good chicken stock
1 tablespoon Pernod
Pinch saffron threads
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons heavy cream
1 1/2 cups large-diced potatoes (1/2 pound)
1 1/2 cups asparagus tips
1 1/2 cups peeled, 3/4-inch-diced carrots (4 carrots)
1 1/2 cups peeled, 3/4-inch-diced butternut squash
1 1/2 cups frozen small whole onions (1/2 pound)
1/2 cup minced flat-leaf parsley
3 cups all-purpose flour
1 1/2 teaspoons kosher salt
1 teaspoon baking powder
1/2 cup vegetable shortening
1/4 pound cold unsalted butter, diced
1/2 to 2/3 cup ice water
1 egg beaten with 1 tablespoon water, for egg wash
Flaked sea salt and cracked black pepper

Steps:

  • Melt the butter in a large pot over medium heat. Add the onions and fennel and saute until translucent, 10 to 15 minutes. Add the flour, reduce the heat to low, and cook for 3 more minutes, stirring occasionally. Slowly add the stock, Pernod, saffron, salt, and pepper, and bring to a boil. Simmer for 5 more minutes, stirring occasionally. Add the heavy cream and season to taste. The sauce should be highly seasoned.
  • Cook the potatoes in boiling salted water for 10 minutes. Lift out with a sieve. Add the asparagus, carrots, and squash to the pot and cook in the boiling water for 5 minutes. Drain well. Add the potatoes, mixed vegetables, onions, and parsley to the sauce and mix well.
  • For the pastry, mix the flour, salt, and baking powder in the bowl of a food processor fitted with a metal blade. Add the shortening and butter and mix quickly with your fingers until each piece is coated with flour. Pulse 10 times, or until the fat is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough out onto a floured board and knead quickly into a ball. Wrap the dough in plastic and allow it to rest in the refrigerator for 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Divide the filling equally among 4 ovenproof bowls. Divide the dough into quarters and roll each piece into an 8-inch circle. Brush the outside edges of each bowl with the egg wash, then place the dough on top. Trim the circle to 1/2-inch larger than the top of the bowl. Crimp the dough to fold over the sides, pressing it to make it stick. Brush the dough with egg wash and make 3 slits in the top. Sprinkle with sea salt and cracked pepper. Place on a baking sheet and bake for 1 hour, or until the top is golden brown and the filling is bubbling hot.

1/2 cup celery, chopped
1 cup onion, chopped
1 cup carrot, chopped
1 cup sweet potato, peeled and diced
1/3 cup all-purpose flour
1 1/2 cups chicken stock
1/2 cup skim milk
2 cups skinless chicken breasts, cooked and diced
1/2 cup frozen peas
8 ounces reduced-fat crescent rolls, use 6 triangles

Steps:

  • In non stick skillet with cooking spray, saute celery, onions, carrots, and sweet potatoes over med. heat until tender, 7-10 minutes.
  • Add flour, stirring, and gradually stir in stock and milk, bringing to a boil. Reduce heat and stir until thickened.
  • Add chicken and peas.
  • Transfer to 9x9x2 baking pan sprayed with non stick spray. Lay crescent roll triangles on top, sealing the sides.
  • To eat now: Bake at 375F 10-15 minutes or until top is lightly browned.
  • To freeze: Do not bake before freezing. Cool to room temp., wrap, label, and freeze. The crust can be added before or after freezing. Freeze up to 3 months.
  • Finish after freezing: Remove and defrost. Preheat oven to 375°F Cover with crescent roll crust to seal. Bake for 20 minutes or until heated and crust is light brown. Cover top lightly with foil if crust starts getting too brown.

1 lb potato, peeled and diced
2 large carrots, peeled and thinly sliced
4 ounces mushrooms, sliced

1 cup milk
1 (13 3/4 ounce) can chicken broth or 1 (13 3/4 ounce) can vegetable broth

2 cups mashed potatoes
2 tablespoons butter or 2 tablespoons margarine
1 large egg, beaten

Steps:

  • In a 3 qt saucepan over medium heat, heat the olive oil, and in it cook the potatoes, carrots, mushrooms, green beans, and celery until tender, stirring occasionally.
  • Mix the flour and milk in a measuring cup.
  • Stir into the saucepan along with the chicken broth, salt, tarragon, and pepper.
  • Bring to a boil over high heat.
  • Reduce the heat to low; cover and simmer 15 minutes or until the vegetables are tender.
  • Spoon the vegetable mixture into four 2 cup aluminum pie plates or other ovenproof casseroles or containers.
  • Preheat the oven to 425°F.
  • In a medium bowl, combine the mashed potatoes, butter, egg, and parsley.
  • Top each container with some of the potato mixture, spreading it evenly to cover the surface.
  • Bake 20-25 minutes or until the tops are golden.
