EASY SWEET & SOUR BEETS

Steps:
- Place beets in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 25-30 minutes or until tender. Drain and cool slightly. Peel and quarter beets; keep warm. , Meanwhile, in another large saucepan, combine the sugar, cornstarch and salt; stir in vinegar. Bring to a boil over medium heat; cook and stir for 1 minute or until thickened. Stir in marmalade and butter until melted. Reduce heat to low. Add beets; heat through.

BEAN HOTPOT
This was done by Karen Martini on Better Homes and Gardens. Looks like it takes a long time but is very rich looking and worth a try. The chillies she used were long ones so not that hot I suppose; I have little birdseye ones and would probably only use one.

Steps:
- In a large stockpot, cook the chillies and capsicum in the olive oil over high heat for about 6-8 minutes, until the capsicum has blackened around the edges.
- Add the other vegetables (from onions to garlic inclusive), and stir another 5-6 minutes on high heat.
- Add the bay leaf and thyme and other spices and cook for another 5 minutes.
- Add the three tins of beans and the tomatoes and tomato paste and stir well to combine.
- Season well with salt and pepper, cover the whole mixture with water, then simmer for 30 minutes.
- Serve over rice with diced avocado mixed with lime juice, a dollop of yoghurt, and sprinkle with coriander.

SWEET & SOUR MIXED BEAN HOTPOT
A very hearty and tasty vegetarian main dish. Great with some crusty bread. You can vary the beans to suit your tastes.

- Preheat the oven to 400°F.
- Thinly slice the potatoes and parboil them for 4 minutes. Drain the potatoes thoroughly, toss them in the oil so they are lightly coated all over and set aside.
- Place the butter, flour, tomato puree, apple juice, brown sugar, ketchup, sherry, vinegar and soy sauce in a saucepan. Heat gently, whisking constantly until the sauce comes to a boil and thickens. Simmer gently for 3 minutes, stirring.
- Rinse and drain the beans and chickpeas and add to the sauce with all the remaining ingredients. Mix well.
- Spoon the bean mixture into the casserole.
- Arrange the potato slices over the top of the bean mixture, overlapping them slightly and completely covering.
- Cover the casserole with foil and bake for about 1 hour, until the potatoes are cooked and tender. Remove the foil for the last 20 minutes of cooking time to lightly brown the potatoes.

THE BEST SWEET & SOUR BAKED BEANS
This is my absolute favorite baked beans recipe - I didn't like them until I tasted this. It is my aunt's - a family favorite! When I can't find limas in a can, I use a frozen package. We also make this vegetarian by omitting the bacon.

- Fry bacon until crisp. Remove and crumble.
- Add onions to grease and add sugar, mustard, salt, and vinegar.
- Cover and cook on stovetop for 20 minutes.
- Drain all beans except pork and beans.
- Add beans to cooked mixture and pour into a 3 quart casserole dish.
- Bake at 350°F for one hour.
- Remove from oven and top with crumbled bacon.

Vegetable Hotpot is one of those recipes that allows you to take nearly any vegetable in your fridge, mix it together with a few others, throw it in the oven, and come out with something divine in about an hour. Lovely!

- Boil potatoes just lightly until about cooked.
- Place chopped veggies and garlic in a casserole dish or saucepan with 1 tablespoon oil and sweat veggies for 5 minutes. (This means to put them (preferably) in a covered frying pan and let cook on low for about 5 minutes -- just long enough to take a bit of the crunch off, but not enough to cook them entirely.)
- Do not overcook.
- Add the herbs and seasonings to the vegetables.
- Mix mustard powder, flour and tomato paste with water and stock until smooth.
- Pour mixture onto the vegetables and bring to a boil, stirring constantly.
- Season with salt and pepper.
- Transfer to an ovenproof dish if necessary.
- Place the potato in a bowl with the remaining 2 tablespoons of oil and toss until coated.
- Season with salt and pepper.
- Pile the potatoes on top of the veggies and bake in a preheated oven at 400 F for 45 minutes.
- The potatoes should be brown, but if they're not you can grill them for another 5 minutes.
- Serve with a salad or on top of rice.
SPICY SAUSAGE AND BEAN HOTPOT
I love hearty, robust and flavoursome dishes in winter. And this is one of them! Even better is how easy it is to prepare. The degree of spiciness will depend on the pasta sauce you use. Serve with potatoes, baked or mashed, or even some polenta. From Delicious magazine. Australian measurements used.

- Preheat oven to 180 deg C/350 deg F/Gas 4.
- Heat a large flameproof casserole or dutch oven over medium-high heat. If using oil heat and then brown sausages, in 2 batches, about 10 minutes. Drain excess oil/fat if desired.
- Lower heat to medium-low then add onions and cook for 5-6 minutes or until soft.
- While onions are cooking mix all liquid ingredients and sugar in a jug. When onions are ready add contents of jug and bay leaves. Raise heat and bring to the boil. Reduce heat to medium, then add sausages and beans. Place in oven for 40 minutes until thick.
- Stir in chopped parsley to serve.

MEXICAN BEAN HOTPOT
A hearty Mexican vegetable dish made with red kidney beans. To vary the dish, vary the beans. And to make it vegetarian, omit the bacon or replace it with vegetarian sausage. I have posted this recipe, adapted from an International Masters '1001 recipes for Pan or Wok' for the 2005 Zaar World Tour.

- Peel and crush the garlic; peel and slice the onion and carrot; deseed and dice the red capsicum; coarsely chop the bacon by cutting with kitchen scissors.
- Heat the oil in a large, deep pan, preferably non-stick; add the onion and bacon and sauté for 5 minutes; add the carrot, garlic and red capsicum and sauté for a further 5 minutes.
- Add the kidney beans and the can juices to the pan, stir in the tomatoes, cumin and chilli sauce, and season to taste with salt and black pepper; and bring the mixture to the boil.
- Reduce the heat and simmer for about 40 minutes, or until the liquid has thickened; garnish with chopped fresh coriander and serve hot. if the liquid starts to thicken too quickly, reduce the heat slightly and stir in a little boiling water or a little wine (at room temperature).

- Heat a dash of oil in a large saucepan, and add the onion, garlic, carrot, pepper and mushrooms. Cook over a medium heat for 5-10 minutes, stirring regularly, until the vegetables are mostly soft (the carrots will still have some crunch to them).
- Add the two kinds of beans and the tin of chopped tomatoes, along with the hot sauce and spices. Mix well, and bring to a simmer. Allow to cook for another 5-10 minutes, until the mixture has thickened and reached your desired consistency (you can add a dash of water back in if it's thickened too much).
- Add the chopped parsley and plenty of salt and pepper, and transfer the bean stew to a suitable casserole dish.
- Add the sliced potatoes in a single layer on top of the bean stew. Drizzle lightly with olive oil, and sprinkle with a little grated cheese.
