LAYERED CHOCOLATE-PEANUT BUTTER PIE
This is a new recipe that I made for my wife because she was could not find one she liked. Everyone who has tasted it loved it. I hope that I have documented enough of it for other people to try it.

Steps:
- Place chocolate chips in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
- Take 2/3 cup of the chocolate and place between wax or parchment paper. Roll it very thin until it is the size of a 9-inch pie; cool for 2 minutes in the refrigerator (it should still be flexible). Take off one side of paper and press into the pie crust. Cool further in the refrigerator, about 10 minutes; remove the other side of the parchment/wax paper.
- Whip cream cheese, sugar, and vanilla extract together in a bowl; split into 2. Take the first mixture and add peanut butter and 1 cup whipped topping. Place this into the prepared pie crust and cool in the freezer until set, about 1 hour.
- Add 2/3 cup of the chocolate mixture and 1 cup whipped topping to the second cream cheese mixture. Place this into the prepared pie crust and cool in the freezer until set, about 1 hour.
- Take another 2/3 cup chocolate mixture and place in wax or parchment paper. Roll it thin until it is the size of the pie. Cool for 2 minutes, until solid but flexible. Remove 1 side of the parchment paper and place this over. Shape and place it back into the freezer until firm, about 30 minutes. Remove the other paper.
- Top with the remaining whipped topping. Add a little water to any remaining chocolate mixture until you can drizzle it onto the pie; drizzle and serve.

- In a large mixing bowl, mix cream cheese, sugar, 1 tablespoon milk and peanut butter until smooth.
- Gently stir in 1 1/2 cups of whipped topping.

- Peanut Butter Filling: with a hand mixer or food processor, mix peanut butter, cream cheese and butter, and salt. Slowly add the sugar and then the 1 tsp vanilla until well blended. Add peanut butter mixture to the pie plate (or plates if making 2 small pies), pressing down on all sides to make flat.
- Chocolate Mousse topping: Melt the unsweetened chocolate squares in a sauce pan on low. (Do not overheat or boil!) When the chocolate is completely melted, add sweetened condensed milk and remove from heat. Add remaining tsp vanilla and mix quickly. Cool to room temperature.

- For the crust, melt butter and mix with almond meal. You need enough to cover the bottom of your pan. This is gorgeous in a spring form. I add melted butter and almond meal back and forth until I have enough to cover it. You want the meal to stick together easily and press into shape, without being overly wet.
- Bake at 350 until it begins to brown, about 20 minutes in Colorado. Please let me know if it's a lot faster at sea level! Let cool completely.
- For the peanut butter layer, soften the butter to room temperature. Beat all ingredients together. Pour over the crust and spread even. Refrigerate until solid, about 1 hour.
- For the chocolate, finely chop the chocolate and set aside. I usually use Green & Black's brand, one bar of 60% and one bar of 85%.
- Heat the cream on medium low until almost boiling. While the cream heats, separate the eggs and beat the yolks together in a small bowl let come to room temperature. If you set it on the stove to warm, be careful the eggs do not cook at all.
- Once the cream is steaming, pour 2 T of it into eggs to temper. Beat together and pour egg mix into the cream, stirring constantly. Cook until it is back to a simmer. Add the chocolate and stir until it is fully melted. Set aside to cool.
- Once cool enough to touch, pour over the peanut butter layer. Place plastic wrap against the chocolate to prevent a crust. Refrigerate until solid. Takes about 4 hours. I usually let it sit overnight.
- Remove plastic wrap. With a plastic blade or spatula, separate the edge of the pie from the pan and remove, if using a spring form. Whip the cream until it forms stiff peaks. Dollop onto the pie. Sprinkle cacao nibs over the peaks of whipped cream. You can sweeten the cream if you like, but this is so rich I think a sweetened cream takes away from the flavor and decadence.
- As an alternative, you can put them in mini muffin tins and serve as peanut butter cups. If you do this, do not use egg yolks, and use equal volume of chocolate and cream (so less cream).

- Filler Layer 1: Add 2/3 cup dry milk powder to the vanilla pudding mix.
- Stir in 1 1/2 cup cold water until smooth.
- Beat in the peanut butter.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and line two 9-inch round cake pans with parchment paper.
- Beat butter and peanut butter for cake together with an electric mixer at medium speed until blended; gradually add brown sugar, beating well. Add eggs, one at a time, beating after each egg.
- Combine flour, baking powder, and salt in a bowl; add to peanut butter mixture alternately with milk, beginning and ending with flour mixture. Mix at low speed after each addition until blended. Stir in vanilla extract. Pour batter evenly between the prepared cake pans.
- Bake in the preheated oven until a toothpick inserted into the center of each cake comes out clean, 30 to 35 minutes. Remove from the oven and cool completely on a wire rack.
- While cakes cool, place unsweetened and semisweet chocolate in the top of a double boiler; bring water to a simmer and cook until chocolate melts, stirring often, 3 to 5 minutes. Remove from heat.
- Beat 1 cup butter with an electric mixer at medium speed until creamy. Add melted chocolate, powdered sugar, cocoa powder, milk, and vanilla extract; beat until spreading consistency.
- Place peanut butter and 1/2 cup butter in a small bowl. Beat with electric mixer at medium speed until creamy. Add powdered sugar gradually, alternately with milk, until frosting is thick and spreadable. Beat an additional 3 minutes.
- Remove 1 cooled cake layer from its pan and frost with chocolate buttercream frosting. Place second cake on top and complete frosting with chocolate buttercream.
- Frost a thick line on the top and bottom edges of the cake with peanut butter frosting using a frosting pouch fitted with a cake decorating tip. Place 16 dollops of peanut butter frosting around the perimeter of the cake. Place mini peanut butter cups on each dollop. Serve immediately.

PEANUT BUTTER AND CHOCOLATE PIE
Steps:
- For crust:
- Preheat oven to 400°F. Transfer crust to 9-inch-diameter pie dish. Trim edges of crust and pierce all over with fork. Bake pie crust until golden brown, about 15 minutes. Cool crust completely on rack.
- For filling:
- Place yolks in medium bowl. Combine sugar and cornstarch in heavy medium saucepan. Whisk in half and half. Bring mixture to boil over medium-high heat, whisking constantly. Boil 1 minute. Whisk half of mixture into yolks. Return yolk mixture to saucepan. Boil 1 minute, whisking constantly. Remove from heat. Stir in butter and vanilla. Place chocolate chips in medium bowl. Add 1 cup hot custard and stir until chocolate chips melt and mixture is smooth. Add peanut butter chips to remaining custard in saucepan and stir until peanut butter chips melt and mixture is smooth.
- Spread chocolate mixture evenly into prepared crust. Gently spoon peanut butter mixture over chocolate, spreading to edge of crust. Place plastic wrap atop pie to prevent skin from forming. Cool pie on rack 1 hour. Refrigerate until set, about 2 hours. (Can be prepared 1 day ahead.)
- For topping:
- Using electric mixer, beat whipping cream in medium bowl to soft peaks. Add sugar and beat until stiff peaks form. Spoon topping into pastry bag fitted with large star tip. Pipe cream decoratively atop pie. Sprinkle with grated semisweet chocolate.
