1-1/2 pounds smoked sausage, cut into 1-inch pieces
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 cup chopped onion
1 cup water
1 can (8 ounces) tomato sauce
2/3 cup chopped celery
1 teaspoon chicken bouillon granules
1 teaspoon minced garlic
1 bay leaf
1/2 teaspoon pepper
1/4 teaspoon dried oregano, optional
1/4 teaspoon dried thyme, optional
Hot cooked rice

Steps:

  • In a 5-qt. slow cooker, combine the first 12 ingredients. Sprinkle with oregano and thyme if desired. Cover and cook on low for 4-5 hours or until heated through. Discard bay leaf. Serve with rice.

  • In a Dutch oven, cook sausage and onion in oil over medium heat until onion is tender. Add the beans, water, tomatoes and salad dressing mix. Bring to a boil; stir in rice. Reduce heat; cover and simmer for 5 minutes or until rice is tender.

4 garlic cloves, peeled, crushed

6 cups cooked white beans with 1/2 cup reserved cooking liquid (see Cannellini Beans with Garlic and Sage )
1 14-to 15-ounce can plum tomatoes in juice; tomatoes chopped, juice reserved
2 large fresh sage sprigs
1 cup (or more) water

Steps:

  • Heat oil in large skillet over medium heat. Add garlic. Sautégarlic until golden, about 2 minutes. Add sausages; sauté until browned, about 5 minutes. Add 1/2 cup reserved bean cooking liquid, tomatoes with juice, and sage. Simmer 5 minutes. Add beans and 1 cup water. Cover and simmer until sausages are cooked through, adding more water by 1/4 cupfuls if dry, about 30 minutes. Uncover and simmer until sauce thickens, if desired. Season with salt and pepper.

1 (22 1/2 ounce) can cannellini beans, drained
2 tablespoons extra virgin olive oil
3 cloves garlic, lightly crushed and peeled
1 tablespoon fresh sage leaf
1 1/4 cups canned whole peeled tomatoes, coarsely chopped (with their juice)
salt
freshly ground black pepper
1 lb sweet Italian sausage link, thickly sliced

Steps:

  • Put the olive oil and garlic in a heavy saucepan that will hold the sausage in a single layer.
  • Place it over medium-high heat and saute the garlic cloves until lightly browned on all sides.
  • While garlic is browning, coarsely chop the fresh sage.
  • When the garlic has browned, discard it.
  • Add the sage to the pan and cook, stirring, for about 1 minute.
  • Add the tomatoes and beans.
  • Season with salt and pepper.
  • Add the sausage.
  • When tomatoes begin to bubble, turn the heat down to medium-low.
  • Cover the pan and cook at a gentle simmer until the sausages feel tender when pricked with a fork, about 20 minutes.
  • Check the pan occasionally and add a little water if all the liquid evaporates before the sausages are done.

1/4 pound breakfast sausage or bacon, crumbled
1/4 cup diced onion
1/4 pound pulled or chopped Bar-B-Q'd pork shoulder or smoked pork butt
Four 16-ounce cans store-bought pork and beans
1/4 cup Sweet Bar-B-Q sauce or Willingham's W'ham Sweet'n Sassy Sauce
1/2 cup molasses
1 1/2 tablespoons mild seasoning mix or Willingham's W'ham Mild Seasoning
1/2 teaspoon liquid smoke (optional)

Steps:

  • Start the grill, allowing it to reach a temperature of 250 degrees, or pre heat the oven to 350 degrees.
  • In a large skillet, cook the sausage and onion over medium-high heat for 5 to 6 minutes until the sausage is browned and the onion softened. Add the pork and cook for 2 to 3 minutes longer until the meat is just heated through. Set aside. In a large bowl, combine the pork and beans, sauce, molasses, seasoning mix, and liquid smoke, if using. Stir well and transfer to a deep casserole. The casserole should be large enough to hold the mixture so that it is no deeper than 4 inches and no shallower than 2 inches. Add the sausage-pork mixture and stir well.
  • Cook on the grill, uncovered, for 3 1/2-hours, or in the oven, covered, for 2 1/2-hours until hot and bubbling and the flavors are well blended.

2 tablespoons extra-virgin olive oil
1 pound hot and/or sweet Italian sausage, cut into 1-inch pieces
6 cloves garlic, chopped
2 carrots, chopped
1/2 fennel bulb, cored and chopped
1/2 onion, chopped
1 tablespoon fresh thyme
Kosher salt and freshly ground pepper
1/2 cup panko breadcrumbs
1 15.5-ounce can navy beans (do not drain)
1 15-ounce can cherry tomatoes

Steps:

  • Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat; add the sausage and cook, stirring occasionally, until browned, about 5 minutes. Transfer to a plate using a slotted spoon. Reduce the heat to medium low and add the garlic to the skillet. Cook, stirring often, until lightly browned, about 2 minutes. Add the carrots, fennel, onion, 2 tablespoons water, 1/2 tablespoon thyme and 1/2 teaspoon each salt and pepper. Cook, stirring occasionally, until the vegetables soften, 15 minutes.
  • Preheat the broiler. Combine the panko with the remaining 1 tablespoon olive oil, 1/2 tablespoon thyme and 1/4 teaspoon each salt and pepper; set aside. Return the sausage to the skillet along with the beans and their liquid, the tomatoes and 1/2 cup water. Bring to a boil, then reduce the heat to medium and gently simmer until the liquid is slightly reduced, about 5 minutes. Sprinkle the panko mixture evenly over the stew and broil until golden, about 4 minutes.

3 tablespoons olive oil, plus more for cooking
1/2 small onion, finely chopped
8 ounces mushrooms, finely chopped
Kosher salt
1 tablespoon low-sodium soy sauce
Two 15-ounce cans pinto beans, drained and rinsed
1/3 cup chickpea flour
2 tablespoons finely chopped fresh sage
2 teaspoons finely chopped fresh thyme
1 1/2 teaspoons pure maple syrup
1 teaspoon finely chopped fresh rosemary
1/2 teaspoon freshly ground nutmeg
Pinch red pepper flakes
Freshly ground black pepper
Serving suggestions: whole-grain avocado toast, sliced tomato and fried polenta rounds with maple syrup

Steps:

  • Heat 2 tablespoons of oil in a large skillet over medium-high heat, then add the onions, mushrooms and 1/4 teaspoon salt and cook, stirring, until the onions and mushrooms are soft and thick almost like a paste, about 6 minutes. Stir in the soy sauce and remove from the heat. Let cool.
  • Put the drained beans, chickpea flour, onion-mushroom mixture and 1 tablespoon oil in a food processor and pulse until the beans are finely chopped and hold together when squeezed, but not a smooth paste. Add the sage, thyme, maple syrup, rosemary, nutmeg, red pepper flakes, 1 teaspoon salt and 1/4 teaspoon pepper and pulse until combined.
  • Divide the bean mixture into 12 even portions. Roll each out into a cylinder about 4 inches long, then roll up tightly in plastic wrap and twist the ends to secure.
  • Set up a steamer and arrange the rolled up sausages in it (you may have to do this in batches). Heat the steamer over medium heat and once steaming, cover and steam until the sausages have plumped up, about 20 minutes. Remove from heat, uncover and refrigerate the steamed sausages until firm, about 2 hours or up to overnight.
  • Preheat the oven to 350 degrees F. Unwrap the sausages and heat the remaining 2 tablespoons oil in a large ovenproof nonstick skillet over medium-high heat. Add the sausages and cook, turning them as needed, until browned and crisp all over, about 5 minutes. Transfer the skillet to the oven and bake until heated all the way through, about 5 minutes.

2 tbsp olive or rapeseed oil
1 onion, finely chopped
2 medium sticks celery, finely chopped
1 yellow pepper, chopped
1 red pepper, chopped
6 cooking chorizo sausages (about 400g)
6 pork sausages (about 400g)
3 fat garlic cloves, chopped
1 ½ tsp sweet smoked paprika
½ tsp ground cumin
1 tbsp dried thyme
125ml white wine
2 x 400g cans cherry tomatoes or chopped tomatoes
2 sprigs fresh thyme
1 chicken stock cube
1 x 400g can aduki beans, drained and rinsed
1 bunch chives, snipped (optional)

Steps:

  • Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
  • Add 1 finely chopped onion and cook gently for 5 minutes.
  • Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
  • Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
  • Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
  • Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
  • Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
  • Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
  • Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

This is a -"What do I have in the cupboard and freezer to eat?" kind of recipe. I used Turkey Italian sausage - but I think any kind will do- Also-- this is way easy with just a few ingredients. P.S. I really used just one can of baked beans and one can of canellini beans but the site wouldn't let me type it in the ingredient slot-- too much control!!!

1 1/2 lbs sausage
2 (16 ounce) cans baked beans
1 (16 ounce) can potatoes (sliced)
1 (16 ounce) can tomatoes and green chilies (like very hot ro*tel)
brown sugar
ketchup
garlic powder
black pepper
salt

Steps:

  • grill/broil/pan fry- sausage. Pick whichever method is best for you. Cook sausage until nice and brown. When done- let stand till cool enough to handle and slice into 1/2 inch discs. Place into bowl and set aside.
  • Place beans and Ro*tel into pot. Add a heavy squeeze of ketchup and a small handful of brown sugar. Crank a few turns of the ole pepper mill- add a heavy pinch of salt and a dash or two of the garlic powder. Heat through.
  • Use an immersion blender if you can or use a potato masher and blend beans half way--just to make it a little creamy. Kinda like real bbq beans or refried pintos--ya know?.
  • Add potatoes and sausage and warm through. Oh -just get it all hot and good.
  • When done--put it in a bow and stuff your face. Enjoy!

Here's a meaty, cold-weather stew laden with white beans, sweet Italian sausage, rosemary, thyme, cumin and garlic. It is deeply flavored and complex, but quite easy to make. Pan-fry the sausages in a bit of olive oil, then sauté the vegetables with cumin and tomato paste in the drippings. Add plenty of water and the dried beans that, wait for it, you did not have to soak. Simmer until the house is fragrant and the windows fog up (about 2 hours).

Steps:

  • Heat oil in a large stockpot over medium-high. Add the sausage and brown until cooked through, about 7 minutes. Using a slotted spoon, transfer to a plate lined with a paper towel.
  • Add the tomato paste and cumin to the pot. Cook, stirring, until dark golden, about 2 minutes. Add the carrots, celery, onion and garlic. Cook, stirring, until the vegetables have softened, about 5 minutes. Stir in the beans, 8 cups water, salt, thyme, rosemary and bay leaf. Turn the heat up to high and bring to a boil. Then reduce heat to low and simmer gently until the beans are tender, about 2 hours, adding more water if needed to make sure the beans remain submerged.
  • When beans are tender, return the sausage to the pot. Simmer for 5 minutes. Stir in the vinegar and pepper. Taste and adjust seasoning. Ladle into warm bowls and serve drizzled with more vinegar and olive oil.
