4 medium sweet potatoes (about 2 1/2 pounds), scrubbed well
2 tablespoons extra-virgin olive oil
2 teaspoons ground cumin
1 teaspoon hot paprika
1 teaspoon ground ginger
Coarse salt and freshly ground white pepper
Lime wedges, for serving
Yogurt Dipping Sauce for Spicy Sweet Potatoes with Lime, for serving

Steps:

  • Preheat oven to 400 degrees. Heat a baking sheet in the oven until hot, about 15 minutes. Meanwhile, slice sweet potatoes in half lengthwise; slice each half into 3 wedges. Place in a medium bowl, and toss with oil, cumin, paprika, and ginger. Season with salt and pepper.
  • When baking sheet is hot, remove from oven. Arrange sweet potatoes in a single layer on sheet. Return to oven; cook until potatoes are crisp and golden on the bottom, about 15 minutes. Turn, and continue cooking until golden all over, about 15 minutes more.
  • Remove from oven; season with salt and pepper. Serve with limes and sauce.

Roasted Sweet Potatoes with Sriracha and Lime image

These roasted sweet potatoes with Sriracha and lime are an easy side dish that requires only 10 minutes of effort. You're welcome.

Juice and finely grated zest from 1 lime (preferably organic)
2 to 4 tablespoons refined coconut oil (melted)
1 to 2 teaspoons kosher salt
2 teaspoons store-bought or homemade Sriracha
1 1/2 pounds sweet potatoes (scrubbed but unpeeled (1 large or 2 smallish))
Handful cilantro leaves (coarsely chopped)

Steps:

  • Preheat the oven to 425°F (218°C). Line 2 rimmed baking sheets with parchment paper or aluminum foil.
  • In a large bowl, whisk together the lime juice (reserve the zest for later), coconut oil, salt, and Sriracha.
  • Cut the sweet potatoes into 1-inch (25-mm) slices, either circles or half circles. Dump them in the bowl and toss to coat with the lime Sriracha elixir.
  • Arrange the sweet potatoes in a single layer on the baking sheets. Roast, stirring at least once or twice, until fork tender, 30 to 40 minutes.☞TESTER TIP: The sweet potatoes will be unevenly spotted with brown patches, sorta like a leopard, when done.
  • Transfer to a platter. Taste and, if desired, add more salt and Sriracha. Sprinkle with the lime zest and cilantro and commence the devouring.

1/2 stick (1/4 cup) unsalted butter, melted
3/4 teaspoon salt
1/2 teaspoon black pepper
1/4 cup water
2 tablespoons sugar
1 tablespoon fresh lime juice
1/2 teaspoon finely grated fresh lime zest
2 tablespoons finely chopped fresh chives

Steps:

  • Put oven racks in upper and lower thirds of oven and preheat oven to 450°F.
  • Toss potatoes with butter, salt, and pepper in a bowl until coated well, then spread in 1 layer in 2 shallow baking pans (15 by 10 by 1 inch) and roast, uncovered, switching position of pans halfway through roasting, until potatoes are tender and undersides are browned, 15 to 20 minutes total.
  • While potatoes roast, bring water, sugar, and lime juice to a boil in a very small saucepan, stirring until sugar is dissolved, then simmer until reduced to about 3 tablespoons, 3 to 4 minutes. Toss potatoes with syrup and zest in a large bowl, then sprinkle with chives.

Kosher salt
2 teaspoons finely grated lime zest
Pinch of cayenne pepper
1/4 cup canola oil
Freshly ground pepper
1/4 cup finely chopped fresh cilantro

Steps:

  • Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Slice each potato lengthwise into eighths.
  • Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix 1 tablespoon salt, the lime zest and cayenne in a small bowl.
  • Brush the potato wedges with the oil and season with salt and pepper. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter; immediately season with the salt mixture and sprinkle with cilantro.

Sweet potatoes and yams are virtually inter-changeable in the kitchen. Sweet potatoes have pale-yellow, dry, nutty-flavored flesh. Jewel and garnet are the two most common kinds of yam; both have reddish to purple-colored skin and brilliant orange, sweet, moist flesh. Look for firm, unblemished sweet potatoes or yams. They continue to sweeten after harvest, but they don't store well and they tend to spoil fairly quickly. Wash them and roast them whole in the skin or peel them to roast, steam, or fry.

  • The small, purple-fleshed Hawaiian sweet potatoes that are sometimes found in the market are especially good this way. Choose firm, fresh sweet potatoes. Wash and scrub them well. Bake in a 375°F oven until tender, about 1 hour. When they are done, split the potatoes open, dot with butter, sprinkle with salt, and squeeze lime juice over them. Scatter a handful of coarsely chopped cilantro over them, if you like.

This recipe first appeared in The Times in 1992, with an article by Molly O'Neill, when Edna Lewis, many years after writing her seminal cookbook "The Taste of Country Cooking," was the chef at the Brooklyn restaurant Gage & Tollner. The addition of lemon zest and juice make this brighter and less sweet than typical sweet potato dishes.

6 medium sweet potatoes
2 cups light brown sugar (or a mixture of light and dark)
1 teaspoon freshly grated nutmeg
A (6-inch) strip of lemon zest (yellow part only)
1/2 teaspoon salt
6 tablespoons unsalted butter
1/4 cup lemon juice

Steps:

  • Rinse the potatoes under warm water. Place in a large pot, cover with cold water, and bring to a boil. Reduce the heat and simmer until the potatoes are just tender, 25 to 30 minutes. Drain and let cool.
  • Combine the sugar, ½ cup water, nutmeg, lemon zest and salt in a medium saucepan, bring to a simmer over medium heat and cook for 10 minutes. Add 5 tablespoons butter and stir well. When the butter has melted, remove from the heat and beat in the lemon juice. Set aside.
  • Heat oven to 425 degrees. Peel the sweet potatoes and slice into 1/2-inch disks. Use the remaining tablespoon of butter to grease a shallow baking dish. Lay the sweet potatoes in the dish in a single layer and pour the lemon syrup on top. Bake until bubbling hot, about 30 minutes.
