6 tbsp olive oil
4 onions , thinly sliced
2 tbsp finely chopped fresh root ginger
2kg boneless lamb shoulder, cut into 5cm chunks
4 tsp ground cumin
2 tsp each paprika and ground coriander
2 cinnamon sticks
850ml passata
700g sweet potato , cut into chunks
350g pitted date
100g blanched almond , toasted
good handful coriander , roughly chopped

Steps:

  • Heat the oil in a large, deep pan. Add the onions, then gently fry until softened, about 5 mins. Stir in the ginger, add the meat in batches, then fry on all sides until lightly coloured. Return all the meat to the pan, stir in the spices and cinnamon sticks, then cook for 1 min.
  • Add the passata and 800ml water, then bring to the boil, stirring. Season well, then cover and simmer for 1½ hrs, until the lamb is tender.
  • Add the sweet potatoes, stir well, cover again, then cook for 20 mins or until the potatoes are just tender. Stir in the dates and heat through for 5 mins. Taste and add more seasoning if necessary. To serve, spoon the tagine into a serving dish and scatter with the almonds and coriander.

1/4 teaspoon fresh ground black pepper
2 1/2 lbs sweet potatoes, peeled and cut into large chunks
1 (14 ounce) can chopped tomatoes
2 tablespoons honey
1/2 teaspoon saffron
7/8 cup water
1 1/2 ounces preserved lemons, finely chopped (optional)
4 1/2 ounces dried apricots, halved
4 ounces green olives, stones removed
1 1/2 ounces whole almonds
2 ounces cilantro

Steps:

  • Heat a large, deep frying pan with a lid until hot. Add the olive oil, onions and garlic and cook for 2-3 minutes.
  • Add all of the spices and fry for one minute.
  • Add the sweet potatoes and stir well.
  • Add all the remaining ingredients, except the cilantro, stir well and bring the mixture to a simmer.
  • Chop the cilantro stalks, reserving the leaves for later, and add the stalks to the pan.
  • Reduce the heat, cover with a lid, and simmer for 15-20 minutes, or until the sweet potato is just tender.

1 medium-sized yellow onion, diced
1 medium-sized sweet potato, chopped into 1/2" cubes (2 cups)
½ medium butternut squash, peeled and chopped into ½" cubes (3 cups)
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons garlic powder
¼ teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon red pepper flakes
1 teaspoon salt or to taste
¾ cup vegetable broth, separated
2 tablespoons lemon juice
1 cup dried apricots, chopped
1 can garbanzo beans, drained
1 cup brown rice, uncooked
2 cups water
½ cup chopped cilantro, optional

Steps:

  • Start by preparing your rice, as it takes longer than the vegetables. Follow instructions on the package of rice.
  • Add oil to a tagine or skillet and heat to medium-high.
  • Sauté onion and sweet potato for 3 minutes.
  • Add butternut squash, stir.
  • Add ¼ cup vegetable broth, all the spices and salt, stir, cover tagine and cook 5 minutes
  • Remove the cover, add remaining vegetable broth, garbanzo beans, lemon juice and dried apricots.
  • Continue to cook 5 to 8 minutes until butternut squash and sweet potato are soft but not mushy.

1 1/2-2 lbs stewing beef, cubed
2 tablespoons vegetable oil
1 pinch turmeric
1 onion, chopped
1 fresh chili pepper, seeded and chopped
1 1/2 teaspoons paprika
1 pinch cayenne pepper

1 lb sweet potato
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh cilantro
1 tablespoon butter

Steps:

  • Heat the oil in a flameproof casserole and fry the meat, together with the turmeric and seasoning, over medium heat for 3-4 minutes, until the meat is evenly browned, stirring frequently.
  • cover the pan tightly and cook for 15 minutes over a gentle heat, without lifting the lid.
  • preheat the oven to 350.
  • add the onion, chili, paprika, cayenne and cumin to the pan with just enough water to cover the meat.
  • cover tightly and cook in the oven for 1 - 1 1/2 hours, till the meat is very tender, checking occasionally and adding extra water if necessary, to keep the stew moist.
  • meanwhile, peel the sweet potatoes and slice them straight into a bowl of salted water to avoid discoloring.
  • transfer to a pan, bring to a boil, simmer for 2-3 minutes, drain.
  • stir the chopped herbs into the meat, adding a little extra water if the stew appears dry.
  • arrange the potato slices over the meat and dot with butter.
  • cover and cook in the oven for a further 10 minutes, till the potatoes feel very tender.
  • increase the oven temp to 400.
  • remove the lid of the casserole and cook in the oven or under the broiler for 5-10 minutes till the potatoes are golden.
  • serve at once.

2 tablespoons Ghee or 1 tablespoon extra virgin olive oil + 1 tablespoon unsalted butter
1 1/2 pounds pork tenderloin (cubed in about 1-inch pieces)
1 1 - inch piece of fresh ginger, peeled and finely chopped
1/2 cup onion (finely chopped (about 1 medium or 1/2 large))
2 teaspoons ras-el-hanout (or to taste)
1/4 to 1/2 teaspoon cayenne pepper
Water (as needed)
2 medium-small sweet potatoes (peeled and cubed)
1 15-ounce can diced tomatoes with juice
1 1/2 cups frozen peas
Salt and freshly ground pepper (to taste)
Garnishes
Preserved lemon (chopped)
1/4 cup toasted pistachio (coarsely chopped)
1/2 cup fresh cilantro leaves

Steps:

  • Heat the ghee (or oil and butter) in a stove-top approved tagine or heavy-bottomed casserole. Pat the pork dry with towels and season lightly with salt and freshly ground pepper. Saute in the ghee, stirring until lightly browned; add the ginger and onion and cook, stirring often, until the onion is tender. Add the ras-el-hanout and cayenne, stir in well, then add enough water to cover the meat; bring to a simmer, cover and simmer for 10 - 15 minutes.
  • Add the sweet potato and tomatoes with their juice, cover and simmer 10 minutes or until the potato is tender; stir in the peas; cook 5 minutes until done. Taste and adjust seasonings.
  • Top the tagine with the preserved lemon, pistachios, and cilantro. Serve with a side of rice or couscous.

For the Vegetable Tagine:
2 tablespoons extra virgin olive oil
1 small onion (peeled and chopped, about 1 cup/165 g)
4 large cloves garlic (peeled, smashed, and chopped)
1 1/2 teaspoons cumin
1 teaspoon ginger
1 teaspoon cinnamon
1 large sweet potato (peeled and cut into 1-inch chunks, about 2 cups/350 g)
2 cups/475 ml vegetable stock
4 cups/325 g cauliflower florets
1 (14 1/2-ounce/411 g) can diced tomatoes with juice (or canned whole plum tomatoes, chopped, with their juice)
1 (15-ounce/425 g) can chickpeas (drained)
Sea salt and freshly ground black pepper to taste
For the Couscous:
1 1/2 cups/355 ml water
1 tablespoon extra virgin olive oil
1 1/2 cups/260 g couscous (regular or whole wheat)
Garnish: harissa
Garnish: slivered almonds or whole cashews
Garnish: golden raisins
Garnish: finely chopped parsley

Steps:

  • Gather the ingredients.
  • Warm the olive oil in a large Dutch oven or heavy pot set over medium-high heat.
  • Add the onion and sauté for 5 to 7 minutes, or until it softens and turns translucent.
  • Add the garlic, cumin, ginger, and cinnamon, and sauté for 1 minute, or until the spices are fragrant.
  • Add the sweet potato and sauté to coat with the spices.
  • Pour in the vegetable stock.
  • Add the cauliflower florets, drained chickpeas, and tomatoes. Bring to a boil, then reduce the heat to low.
  • Simmer partially covered, stirring occasionally, until the sweet potatoes are tender, about 25 minutes.
  • Season to taste with salt and pepper.
  • Remove from the heat and allow the tagine to rest while you prepare the couscous.
  • Bring the water and oil to a boil in a medium saucepan.
  • Stir in the couscous.
  • Cover and remove from the heat. Allow the couscous to rest for 5 minutes, or until the water is absorbed.
  • Fluff with a fork.
  • Spoon a mound of couscous into shallow bowls.
  • Surround the couscous with the vegetable tagine, and spoon some of the brothy sauce over each serving.
  • Garnish as desired with harissa, slivered almonds, whole cashews, golden raisins, and parsley.
