This is my absolute very favorite macaroni and cheese recipe and I have a large collection of m/c recipes. Adapted from Southern Living. I don't make this very often because I could literally eat the whole thing and lick the dish clean.

1/2 cup butter or 1/2 cup margarine
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper, to taste
1/4 teaspoon cayenne pepper, to taste
1/4 teaspoon garlic granules
2 cups half-and-half
2 cups milk
2 (10 ounce) packages sharp cheddar cheese, shredded and divided (I use Cracker Barrel)
1 (10 ounce) package extra-sharp cheddar cheese, shredded (I use Cracker Barrel)
1 (16 ounce) package elbow macaroni, cooked

Steps:

  • In a big skillet, melt the butter over medium-high heat.
  • Whisk the flour in gradually until the mixture is smooth.
  • Cook and whisk continually for 2 minutes.
  • Add in salt, pepper, cayenne, and garlic; stir to combine.
  • Gradually whisk in half-and-half and milk.
  • Cook and whisk continually for 8-10 minutes or until mixture is thickened.
  • Add in half of the sharp cheddar cheese; stir.
  • Add in all of the extra-sharp cheddar cheese; stir until smooth.
  • Take skillet off stove burner.
  • Mix together the cooked macaroni and cheese mixture; transfer to a greased 13x9 inch casserole dish.
  • Sprinkle with the remaining sharp cheddar cheese.
  • Bake in a 350° oven for 20 minutes (may need to bake longer for a crispy top).

1 tablespoon salt
1 pound elbow, shell or other bite-size shaped pasta
2 (12 fluid ounce) cans evaporated milk
1 cup chicken broth
3 tablespoons butter
⅓ cup flour
1 ½ tablespoons Dijon mustard
½ cup grated Parmesan cheese
Freshly ground black pepper
1 pound grated extra-sharp cheddar cheese

Steps:

  • Bring 2 quarts of water to boil in large soup kettle. Add salt and pasta. Using package directions as a guide, cook until al dente. Drain. To prevent sticking, drain and immediately pour onto a large lipped baking sheet and let cool while preparing sauce.
  • Meanwhile, microwave the milk and chicken broth in a 4-cup Pyrex measuring cup or bowl until hot and steamy (not boiling). Melt butter in the empty pasta pot; whisk in flour, then hot milk mixture. Continue to whisk until thick and bubbly, 3 to 4 minutes. Whisk in mustard, Parmesan and pepper. Turn off heat, stir in cheddar until melted.
  • Add drained pasta (and optional flavoring ingredients, see notes) to sauce, and stir until everything is well combined over low heat. Stir to heat through, and thin with a little water if the sauce is too thick. Serve hot.

10 ounces macaroni
12 ounces Velveeta cheese
8 ounces cream cheese
1/2 cup parmesan cheese (canned is fine)
1 beaten egg
1 1/2 cups half-and-half
1/4 cup butter
1 tablespoon flour
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Boil noodles until done.
  • While noodles are cooking, grease a rectangular glass casserole dish.
  • After noodles are drained and have cooled for a few minutes, put them in casserole dish and mix with beaten egg.
  • Set aside.
  • In a medium saucepan, melt butter on medium-low heat and add flour to make a paste.
  • Add half and half and bring to a boil on medium-high heat.
  • Reduce heat and add velveeta and cream cheese in small chunks.
  • Stir and add seasonings (last four ingredients).
  • After all the cheese is melted and the sauce has a medium thick consistency (you may need to play around with the half and half or milk to get the consistency you prefer), pour it over the noodles.
  • Stir noodles with sauce until they are combined.
  • Sprinkle parmesan over the top.
  • Bake in a preheated oven at 375 degrees for 30-45 minutes (I wait until it's a little browned).

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Combine the evaporated milk, eggs, havarti, Colby jack, 1/2 teaspoon salt and the nutmeg in a large saucepan over medium heat. Cook, whisking constantly, until smooth and thickened, about 8 minutes. Remove from the heat.
  • Add the pasta and sour cream to the sauce; toss to coat, then let sit 5 minutes so the sauce thickens slightly. Add the reserved cooking water to loosen, if desired.

50g baguette, cut into small chunks
2 tbsp butter, plus 1 tbsp melted
350g spiral or other short pasta
1 garlic clove, finely chopped
1 tsp English mustard powder
3 tbsp plain flour
500ml whole milk
250g vegetarian mature cheddar, grated
50g parmesan (or vegetarian alternative), grated

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Spread the baguette chunks over a baking sheet, drizzle with the melted butter and season. Bake for 6 mins until crisp, then set aside.
  • Boil the pasta for 2 mins less than stated on the pack, then drain. Meanwhile, melt the butter in a saucepan. Add the garlic and English mustard powder, cook for 1 min, then stir in the plain flour.
  • Cook for 1 min more, then gradually whisk in the milk until you have a lump-free sauce. Simmer for 5 mins, whisking all the time until thickened. Take off the heat, then stir in the cheddar and half the parmesan.
  • Stir the pasta and some seasoning into the cheesy sauce. Tip into a large ovenproof dish, or four individual dishes.
  • Scatter over the bread and the remaining parmesan, then bake for 20 mins until crisp and golden. Can be frozen before baking - defrost thoroughly before cooking.

1 pound elbow macaroni
1/4 cup plus 3 tablespoons extra-virgin olive oil
12 ounces shiitake mushrooms, stems discarded, sliced 1/4 inch thick
1 large bunch of kale, stems discarded, roughly chopped (about 8 cups)
4 cloves garlic, minced
Freshly ground black pepper
2 1/2 cups half-and-half
1/8 to 1/4 teaspoon cayenne pepper
1 pound cream cheese, room temperature
8 ounces sharp Cheddar, shredded (about 3 cups)
3 ounces Gruyere, shredded (about 1 cup)
1 cup panko bread crumbs

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
  • Heat a large saucepan over medium-high heat. Add 3 tablespoons of the olive oil and the shiitake mushrooms and cook, stirring constantly, until the mushrooms are lightly browned in spots and softened, 4 to 6 minutes. Lower the heat to medium and add the kale, garlic and 1/2 cup of water, scraping up any browned bits at the bottom of the pan with the back of a wooden spoon. Add 3/4 teaspoon salt and 1/4 teaspoon pepper and stir to combine. Cook until the kale is wilted but still crisp-tender, about 3 minutes. Remove the vegetables to a bowl and set aside.
  • Carefully wipe out the saucepan (or give it a quick rinse if it is really dirty). Add the half-and-half and cayenne and bring to a simmer over medium heat. Cook until reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
  • Add the macaroni and reserved pasta water to the saucepan and stir to combine. (The mixture will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) Gently fold in the reserved vegetables. Season to taste with additional salt if needed. Pour into a 13-by-9-inch baking dish. Toss the bread crumbs, remaining 1/4 cup olive oil and a large pinch of salt and pepper in a medium bowl and sprinkle evenly over the macaroni and cheese. Bake until the cheese is bubbly and the bread crumbs are lightly browned and crispy, about 10 minutes.

1 tablespoon prepared mustard
1 lb sharp cheddar cheese, shredded
1 lb macaroni, cooked and drained

  • Mix cornsartch with a little of the milk till desolved.

4 slices white bread, torn into pieces
4 tablespoons unsalted butter plus 4 tablespoons melted unsalted butter
1/4 cup freshly grated parmesan cheese
1 tablespoon salt
1 lb elbow macaroni

2 teaspoons hot sauce
1 teaspoon red pepper flakes

Steps:

  • Preheat oven to 350 degrees and place oven rack in the middle.
  • Pulse bread, melted butter, and Parmesan in food processor until ground to coarse crumb.
  • Transfer to bowl.
  • Bring 4 quarts water to boil in large pot.
  • Add 1 tablespoon salt and macaroni to boiling water and cook 6 minutes-do not overcook.
  • Reserve 1/2 cup macaroni cooking water, then drain and rinse macaroni in colander under cold running water.

1 lb. dried elbow pasta
1/2 cup unsalted butter
1/2 cup all purpose flour
1 1/2 cups whole milk
2 1/2 cups half and half
4 cups shredded medium sharp cheddar cheese (divided (measured after shredding))
2 cups shredded Gruyere cheese (divided (measured after shredding))
1/2 Tbsp. salt
1/2 tsp. black pepper
1/4 tsp. paprika

Steps:

  • Preheat oven to 325 degrees F and grease a 3 qt baking dish (9x13"). Set aside.
  • Bring a large pot of salted water to a boil. When boiling, add dried pasta and cook 1 minute less than the package directs for al dente. Drain and drizzle with a little bit of olive oil to keep from sticking.
  • While water is coming up to a boil, shred cheeses and toss together to mix, then divide into three piles. Approximately 3 cups for the sauce, 1 1/2 cups for the inner layer, and 1 1/2 cups for the topping.
  • Melt butter in a large saucepan over MED heat. Sprinkle in flour and whisk to combine. Mixture will look like very wet sand. Cook for approximately 1 minute, whisking often. Slowly pour in about 2 cups or so of the milk/half and half, while whisking constantly, until smooth. Slowly pour in the remaining milk/half and half, while whisking constantly, until combined and smooth.
  • Continue to heat over MED heat, whisking very often, until thickened to a very thick consistency. It should almost be the consistency of a semi thinned out condensed soup.
  • Remove from the heat and stir in spices and 1 1/2 cups of the cheeses, stirring to melt and combine. Stir in another 1 1/2 cups of cheese, and stir until completely melted and smooth.
  • In a large mixing bowl, combine drained pasta with cheese sauce, stirring to combine fully. Pour half of the pasta mixture into the prepared baking dish. Top with 1 1/2 cups of shredded cheeses, then top that with the remaining pasta mixture.
  • Sprinkle the top with the last 1 1/2 cups of cheese and bake for 15 minutes, until cheesy is bubbly and lightly golden brown.

  • Heat olive oil in a large heavy-bottomed pot on the stovetop over medium heat. Add onion and cook, stirring often, until softened, about 5 minutes. Stir in garlic and cook an additional 1 minute. Add salt, pepper, paprika, mustard powder, cayenne pepper, nutmeg, and black pepper. Stir.
  • Add butter to onion mixture and melt. Add flour and stir to combine and cook for 2 to 3 minutes. Add half of beer, stirring until thickened slightly. Add remaining beer, stirring for a couple more minutes until thickened slightly.
  • About a cup at a time, add the warmed milk to the pot, stirring between each addition and letting thicken slightly. Add cream cheese and whisk until incorporated.
  • Turn off heat and add 2 cups of mozzarella and all of the cheddar and gouda. Stir in cooked pasta.
  • Pour pasta mixture into prepared baking dish. Top with bread crumbs, Parmesan and remaining 1.5 cups of mozzarella cheese. Bake for 25 to 30 minutes until top has browned slightly and mixture is bubbly.
  • Carefully remove from oven and let cool for 15 to 20 minutes.
  • While mac and cheese is cooling, place bacon on a sheet pan (in a 375 degree Fahrenheit oven) and bake for 15 to 20 minutes or until crispy. Steps:

  • Preheat the oven to 375 degrees.
  • Cook the elbow macaroni until al dente and drain well.
  • In a saucepan over medium heat, combine ½ cup of milk and velveeta until completely melted and combined.
  • Pour the cheese sauce over the macaroni and stir to combine.
  • In a mixing bowl, combine the eggs, butter, garlic powder, paprika, salt and pepper, and 1 cup of each of the shredded cheeses. Pour this mixture into the macaroni, and stir to combine well.

Steps:

This mac and cheese is best served fairly promptly. You can keep it in the instant pot on warm but remember sooner rather than later. Feel free to change the cheese up.
