SWEET POTATO OVEN FRIES WITH SPICY SOUR CREAM
Bake these crispy chipotle seasoning flavored sweet potato fries. Serve these warm appetizers with spicy sour cream.

Steps:
- Heat oven to 425°F. Spray large cookie sheet with cooking spray. Place 3/4 teaspoon of the seasoning in 1-gallon resealable food-storage plastic bag; add potatoes. Seal bag; shake until potatoes are evenly coated. Place potatoes in single layer on cookie sheet; spray lightly with cooking spray. Bake 20 minutes or until bottoms are golden brown. Turn potatoes; bake 10 to 15 minutes longer or until tender and bottoms are golden brown.
- Meanwhile, in small bowl, stir sour cream, sriracha sauce, cilantro and remaining 1/4 teaspoon seasoning; refrigerate until ready to serve.
- Serve fries warm with spicy sour cream.

- Toss 2 pounds sweet potatoes (cut into wedges) with 3 tablespoons olive oil, 1 1/2 teaspoons each brown sugar and salt, 1/4 teaspoon each cumin and chili powder, and a pinch of cayenne. Roast cut-side down on a baking sheet in a 425 oven until crisp, 30 minutes, turning once.

- Preheat the oven to 425 degrees F (220 degrees C).
- In a plastic bag, combine the sweet potatoes, canola oil, taco seasoning, and cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on two large baking sheets.
- Bake for 30 minutes, or until crispy and brown on one side. Turn the fries over using a spatula, and cook for another 30 minutes, or until they are all crispy on the outside and tender inside. Thinner fries may not take as long.

- Preheat oven to 350.
- Cut sweet potatoes in half and then slice into small strips that resemble standard french fries & place in large mixing bowl.
- Sprinkle potatoes with olive oil & all spices, toss until each potato is covered in oil and spices.
- Spread potatoes on boiling pans or wire racks over baking sheets (allows for excess oil to drip and not sit on fries).
- Bake for 45 minutes to 1 hour (until browned, they will still be pliable).
- Serve with sour cream or my spicy sour cream dip.

SPICED SWEET POTATO FRIES WITH CHILI-CILANTRO CREAM
Sweet potato french fries will surprise everyone at your holiday table - and nobody will miss the marshmallows. The potatoes are baked, not fried, so no need to feel guilty. Chili powder, cumin, cayenne and paprika complement the natural sweetness of the potatoes. It's probably a good idea to double this recipe, because they go fast.

- Heat oven to 425 degrees. Toss the sweet potatoes and olive oil in a large bowl.
- Combine the salt, cumin, chili powder, paprika, pepper and cayenne in a small bowl. Add to the potatoes and toss to coat.
- Arrange the potatoes in one layer on a large baking sheet. Bake on the lowest rack of the oven until the undersides are browned, 12 to 15 minutes. Turn the potatoes with a spatula and bake for 10 more minutes.
- While the potatoes are cooking, make the sour cream sauce. Combine all the ingredients except the cilantro in a medium bowl and whisk together. Stir in the cilantro.
- Remove the potatoes from the oven and cool for a few minutes. Serve with the sour cream.

- Place sweet potato fries into a large bowl, drizzle with 1/4 cup olive oil, and toss to coat. Mix steak seasoning, black pepper, garlic powder, salt, and paprika in a separate small bowl until thoroughly combined. Use your left hand to toss fries with olive oil as you sprinkle the seasoning mixture over them with your right hand.
- Heat 1 tablespoon olive oil in a large skillet over medium heat and place sweet potato pieces into the hot oil. Cover skillet, pan-fry for 5 minutes; uncover and turn fries. Place cover back over fries and cook 5 more minutes; continue turning fries and covering until sweet potatoes are tender, about 10 more minutes.

- Preheat oven to 450°F With aluminum foil or parchment paper, line a cookie sheet.
- In a medium bowl, combine sweet potatoes with olive oil and seasonings. Mix well to evenly coat potatoes. Place potato strips on the foil or parchment lined cookie sheet and leave space between strips for even baking.
