SWEET POTATO AND APPLE HOBO PACK
The hobo pack, a self-contained, foil-wrapped meal cooked in hot coals, is an easy option for outdoor cooking. Though this recipe includes a lot of fall flavors, it is great for summer cookouts, a change from the usual suspects. The key to success is to be sure the foil packet is tightly sealed so no juices leak out. Be aware that the intense heat of the coals will deeply char some of the food that's right up against the foil, but to us that's the best-tasting part.

Steps:
- Build a fire in the grill. Let the fire die down, until the coals are covered with gray ash.
- Put the golden raisins and Cognac in a small bowl and soak for 10 minutes.
- Tear off 8 sheets of heavy-duty foil, each about 2 feet long, and divide them into 2 stacks. Place half the sweet potato quarters, apple quarters, onion slices and sage in the center of the top sheet in each stack. Dot each with half the butter and half the raisins, plus the orange zest and salt and pepper to taste. Fold the top sheet in each stack over the vegetables, rotate each package one-quarter turn, and fold the second sheet over it. Repeat with remaining 2 sheets of foil.
- Place the packs in the coals around the periphery of the fire. Pile up the coals around the pack and cook 30 minutes.
- Remove the pack from the coals, unwrap and check: If the sweet potatoes need more time, put the pack back in the coals or in a 300-degree oven until the potatoes are easily pierced with a fork but give a bit of resistance.

PORK CHOP PACKS
Here's an easy dinner my Grandmother used to make. Pork chops are cooked with sweet potatoes, onions and apple in a little foil packet. Very simple and easy to make for one or for the whole crew. Serve with rice.

- Preheat oven to 350 degrees F (175 degrees C).
- Lay out a piece of aluminum foil large enough to hold the ingredients. Place the pork chops, on the foil, then place the sweet potato, onion and apple over the chops. Fold up and seal each package.
- Bake at 350 degrees F (175 degrees C) for 45 minutes, or until the potato is soft when pricked with a fork. (Note: Do not open packages while baking as this will allow the steam to escape and will dry out the pork chops. Also, be careful when opening as the steam can burn.)

- Preheat oven to 450 degrees F or grill to medium-high.
- Center sweet potatoes, apples and cranberries on sheet of Reynolds Wrap® Heavy Duty Aluminum Foil. Sprinkle with brown sugar. Combine butter and cinnamon; drizzle over brown sugar.
- Bring up foil sides. Double fold top and ends to seal making one large foil packet, leaving room for heat circulation inside.

- Prepare grill for cooking.
- Toss together sweet potatoes, oranges, onions, butter, oil, and salt and pepper to taste.
- Put a 2-foot-long double layer of foil on a work surface. Place half of sweet potato mixture in center and sprinkle with 1/2 cup raisins. Cover with a third sheet of foil and tightly roll up all sides to seal. Wrap packet in a fourth sheet of foil to ensure insulation. Make another packet with remaining vegetables and raisins.
- Put packets side by side directly on hot coals. Cover grill and open grill vents, then grill packets until vegetables are tender, about 30 minutes.
- While packets are grilling, stir together honey, lemon juice, and parsley. Remove packets from grill and carefully unwrap. Drizzle vegetables with honey mixture.
- Cooks' Notes
- Gas grill method: Put packets on grill rack and close lid. Roast with grill set to moderately low.
- Oven method: Toss potatoes, oranges, onions, raisins, butter, and oil together in a large shallow roasting pan. Cover tightly with foil and roast in a preheated 450°F oven until potatoes begin to soften, about 50 minutes. Uncover and roast until vegetables are browned in spots and tender, about 25 minutes more.

Steps:
- Pre-heat oven to 425 degrees.
- In a bowl toss sweet potato with olive oil (enough to thoroughly coat). Arrange in a single layer on a baking sheet and roast for 10 minutes or until they're just tender but not over-cooked.
- Coat a skillet with olive oil (just enough to cover the bottom), add onion and apples and sprinkle with salt. Cook over medium heat until the apples start to become tender, stirring occasionally (about 4-5min but this will depend on the type of apple you use).
- Add sweet potato and cook a few minutes longer to let everything get cooked through and let all those fall flavors come together! Remove from heat and serve.
- This is good just as it is but you could also garnish with nuts or add a protein to make it a complete meal.
KRYSTEN'S FAVORITE CHICKEN AND ROSEMARY HOBO PACK
This is a complete, delicious meal in a foil pack. Whenever my niece comes to town she requests this meal that I have been making for about 17 years. These packs can be pre-baked for an hour in a 375 degree oven and then taken camping or to a tail-gate, then thrown on a grill or right down in a campfire for 45 minutes for a quick, impressive meal. The original recipe came from the book The Thrill of the Grill by Chris Schlesinger and John Willoughby, but I have modified it to suit our family tastes. This recipe sounds like a lot of garlic, but it mellows as it cooks and is just the right amount. And - the garlic is even good peeled and popped right in your mouth, or spread over rolls or French bread.

- Lay 1/4 of the chicken pieces on a large piece of heavy duty tinfoil (I use a double layer on the bottom). I do season my chicken with salt, pepper and garlic salt before I start the rest of the process.
- Arrange 1/4 of the vegetables and garlic over and around and on top of the chicken.
- Add 1 sprig rosemary, salt and pepper to taste.
- Dot 2 tablespoons of butter all over.
- Repeat steps 1-4 above for until all ingredients are used and you have 4 foil packs.
- Add another large sheet of tinfoil on top and roll the edges of the sheets together, closing the pack. Fold the edges up making sure you remember which side is up. Cover the entire pack with one more layer of tin foil.
- Now - you can cook these two different ways. The original recipe says to "Cook on the BBQ grill for 45 minutes to 1 hour" but I found that the food did not cook well enough for me. So here is what I do:.
- Bake in the oven at 375 degrees for 60 minutes, anytime up to 3 days before serving and refrigerate them until use. Then place them on the BBQ for 45 minutes.
- Remove the foil packs from the grill, unroll the tin foil and be prepared for the FABULOUS smell that fills the area and for the fantastic meal you have created.

BREAKFAST FOIL PACKS WITH HASH BROWN POTATOES, SAUSAGE, AND SCALLIONS

- Cut 12 (12x16") pieces of heavy-duty foil. Layer 2 pieces of foil on top of each other to create 6 stacks. Line top pieces of foil with parchment paper cut to the same size.
- Toss scallions, potatoes, sausage, oil, salt, and pepper in a large bowl. Divide mixture among prepared packs, arranging in the center of each piece of parchment. Bring edges of foil together to enclose each pack, covering completely, then crimp to seal packs closed.
- Prepare a campfire or grill for medium, indirect heat, preferably with hardwood or hardwood charcoal. Let coals burn until covered with ash and glowing red with no black remaining.
- Place packs side by side directly onto hot coals or grill and cook, rotating with tongs occasionally, about 5 minutes. Carefully remove 1 pack from heat and check if ingredients are steaming hot. If necessary, return pack to coals and continue to cook, 5-10 minutes more.
- Transfer packs with tongs to a flat surface and carefully open them (they will be full of hot steam). Top each pack with spinach, then crack 1 egg into the center of each and season with salt and pepper. Reseal, return to coals, and cook until egg whites are opaque but yolks are still runny, 4-5 minutes.
- Carefully remove packs from coals, open, and sprinkle with cheddar, if using. Serve immediately.

- Packs can be assembled and chilled for up to 2 days or frozen for up to 1 month.
- Cooks' Note
- Packs can be prepared in an oven. Preheat to 450°F and place packs on rimmed baking sheets. Bake until steaming hot, about 15 minutes if packs were refrigerated and about 30 minutes if baking frozen packs (no need to defrost). Carefully open packs (they will be full of hot steam), top each pack with spinach, crack 1 egg into the center of each, season with salt and pepper, and reseal. Return to oven and cook until egg whites are opaque but yolks are still runny, 4-5 minutes more. Top with cheddar, if using. Serve immediately.
