12 oz 93/7 Ground Sirloin
1 medium (2-1/2" dia) Onions, raw
2 stalk, large (11"-12" long) Celery, raw
1 serving 1 Med. Green Bell Pepper
1 serving Eggland's Best Large Egg
0.05 cup Milk, 2%, with added nonfat milk solids, without added vit A
0.5 cup Bread, Progresso Bread Crumbs, Garlic and Italian Herb
16 tbsp BBQ Sauce- Sweet Baby Rays Original
0.5 cup Salsa
2.5 tsp Lea & Perrins, Worcestershire Sauce
0.25 tbsp Extra Virgin Olive Oil

Steps:

  • Preheat oven to 450 degrees F. Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes.

These are a great way to sneak in vegetables, and they are filling. You put them in muffin pans at 450 degrees for 20 minutes, and they're perfectly done. I serve two muffins with a baked potato and steamed veggies. It's a very satisfying meal.

1 lb. lean ground beef
1 onion
1 green bell pepper
2 carrots
2 stalks celery
1 egg
3/4 - 1 cup plain bread crumbs (nutrition is for 3/4 cup)
1/2 cup salsa
1 cup BBQ sauce
Ketchup to taste
1 T Worchestershire sauce
1-2 T grill seasoning (such as McCormick)

Steps:

  • Pre-heat oven to 450 degrees.
  • In a food processor, process onion, pepper, carrots, and celery until finely chopped. Put vegetables in large bowl with meat.
  • Whisk one egg, and add to bowl with meat along with breadcrumbs and grill seasoning (I use about 1.5 T, but feel free to add more if you like a lot of seasoning).
  • In small bowl, combine salsa, ketchup, BBQ sauce, and Worchestershire sauce. Stir. Add half of this into the bowl with the meat and mix with hands. Save the remaining sauce.
  • Spray muffin pan with non-stick cooking spray. Spoon meat mixture into each cup until level with top of pan. Spoon remaining sauce on top of each muffin. This should make approximately 18 muffins.
  • Bake on 450 degrees on middle rack for 20 minutes.

1 1/2 lbs ground beef
1 1/4 cups finely chopped onions
1 cup breadcrumbs
2/3 cup ketchup
1 dash hot sauce
1 dash Worcestershire sauce
2/3 cup finely chopped fresh parsley
3 large eggs, lightly beaten
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper
barbecue sauce, for glaze

Steps:

  • Combine all ingredients in a large bowl& mix until well blended- do not over mix.
  • Place a 2 inch wide parchment strip across each mould of the muffin tin, coming up from each side by about 2 inches.
  • This will be used for unmoulding after they are cooked.
  • Using an ice cream scoop or a large spoon, generously fill each section of the muffin tin with meat, rounding the top to obtain a muffin shape.
  • Brush with BBQ sauce& bake in a preheated 350F oven for 15- 20 mins (or until meat thermometer reaches 160F), brushing occasionally with more BBQ sauce.

1 tablespoon olive oil
1 medium onion
2 celery ribs
1 green pepper
1 large egg, beaten
1 cup plain breadcrumbs
1 tablespoon McCormick's Montreal Brand steak seasoning
1 cup ketchup
1/2 cup salsa
1 tablespoon Worcestershire sauce

Steps:

  • With food processor, chop onion, celery, and green pepper into small pieces.
  • In large bowl, mix meat, olive oil, chopped veggies, egg, bread crumbs, and grill seasoning.
  • In a separate bowl, mix ketchup, salsa, and Worcestershire sauce.
  • Pour half of the sauce into the meat mixture and combine.
  • Spray muffin tin with Pam. Use an ice cream scoop to put meat into cups.
  • Top each loaf with remaining sauce.
  • Bake about 20 minutes at 450 degrees or until done.

1 (10.5 ounce) can condensed vegetable soup
½ cup chopped onion
1 cup dry bread crumbs
2 eggs
1 teaspoon salt
1 pinch ground black pepper
¾ cup ketchup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 12 cup muffin pan.
  • Mix ground beef, soup, onion, bread crumbs, eggs, salt, and pepper in a bowl. Scoop mixture evenly into prepared muffin cups.
  • Bake 1 hour in the preheated oven to a minimum temperature of 160 degrees F (70 degrees C). If desired, remove from oven after 50 minutes, drizzle ketchup on the top of each muffin, and return to oven for an additional 10 minutes.
