This simple corn casserole is one of the most comforting dishes I know. Cornmeal gives this baked custard an unusual heartiness, but with plenty of milk and eggs, it's not bready at all.

1 large onion, diced (about 1 1/4 cups; 7 ounces; 200g)
1 small bell pepper, diced (about 3/4 cup; 4 ounces; 110g)
2 tablespoons sugar (1 1/2 ounces; 40g)
Scant 1/4 cup fresh sage (about 1/2 ounce; 15g), finely chopped
1 tablespoon Diamond Crystal kosher salt (1/4 ounce; 7g); for table salt, use half as much by volume or use the same weight
1 teaspoon sweet paprika
1/8 teaspoon cayenne
15 ounces fresh or frozen corn kernels (about 3 cups; 425g)
1/2 cup white or yellow cornmeal (2 1/2 ounces; 70g)
3 large eggs
1 1/4 cups milk, any percentage (10 ounces; 280g)
1/2 cup heavy cream (4 ounces; 115g)
1 cup finely shredded cheese (3 ounces; 85g), such as cheddar, Monterey Jack, or Parmesan

Steps:

  • Adjust oven rack to lower-middle position and preheat to 350°F (177°C). Melt butter in a 10-inch cast iron skillet over medium heat, then add onion, bell pepper, sugar, sage, salt, paprika, and cayenne. Cook, stirring, until onions are translucent and just beginning to brown, about 10 minutes, then add corn. Continue cooking, stirring frequently, until no water remains in skillet, another 8 to 10 minutes, then stir in cornmeal and remove from heat.
  • In a small bowl, whisk together eggs, milk, and cream, then pour into corn mixture. Stir well to combine, sprinkle with cheese, and bake until softly set, about 20 minutes. Turn on the broiler and broil only until lightly browned, just a minute or two more.

Steps:

  • Preheat oven to 275°. In a very large bowl, combine cereals and pretzels. In another bowl, mix the remaining ingredients until sugar is dissolved. Pour over cereal mixture; toss to coat. , Transfer to a large roasting pan. Bake, uncovered, 1-1/4 hours or until cereal is crisp, stirring every 15 minutes. Cool completely. Store in an airtight container.

This joyful, crunchy snack to share with friends (and enjoy with cocktails) relies on corn syrup, sugar and soy sauce for a balance of sweet and savory. The glaze in this recipe is a riff on the sweet-and-salty coating used in cereal-seaweed snack mixes found in Hawaii that bakes into an irresistible, super-crisp shell. A bit of Worcestershire sauce lend some tang, and cayenne adds a surprising touch of heat. Use the mix-in amounts as a guide, and feel free to use whatever cereals, crackers and nuts speak to you.

3 tablespoons vegetable oil, plus more for greasing the pans
1/2 cup/113 grams salted butter (1 stick)
1/3 cup/105 grams light corn syrup
1/3 cup/67 grams granulated sugar
2 tablespoons soy sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon kosher salt
1/4 to 1/2 teaspoon ground cayenne
4 cups/100 grams crunchy, salty snacks, such as cheese crackers, rice crackers, bagel chips, sesame sticks or a combination
3 cups/115 grams salted mini pretzels
6 cups/180 grams rice or corn Chex or Crispix cereal, or a combination
3 cups/29 grams store-bought or homemade salted popcorn
1 cup/125 grams roasted, salted cashews (or your favorite nut)
1/4 cup/35 grams hemp or sesame seeds

Steps:

  • Heat oven to 250 degrees. Lightly grease two rimmed baking sheets with vegetable oil. In a small saucepan, combine 3 tablespoons vegetable oil with the butter, corn syrup, sugar, soy sauce, Worcestershire, salt and cayenne. Cook, stirring occasionally, over medium heat until the mixture is smooth and syrupy, about 5 minutes. Set aside.
  • In a large bowl, combine all the ingredients for the snack mix, except the hemp seeds. Pour the syrup over the mix and toss with a wooden spoon to evenly coat all the pieces.
  • Divide the mix across the two prepared baking sheets. Sprinkle the hemp seeds evenly over the mixture on both baking sheets.
  • Bake until the mix is dry, about 1 hour and 15 minutes, tossing well every 15 minutes. The mixture will be dry but still sticky, and will set as it cools.
  • Let the mix cool completely before breaking it into pieces to serve. Store in an airtight container at room temperature for up to 1 week.

Yellowedge Grouper with Savory Sweet Corn Pudding, Oyster Mushroom Vinaigrette and Petite Greens image

Oyster Mushroom Vinaigrette:
2 cups oyster mushrooms, stems removed
2 1/2 ounces fine quality extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 sprigs fresh thyme, leaves picked
1 clove garlic, finely minced
1 shallot, finely minced
1 ounce fine quality sherry vinegar
1/4 ounce tupelo honey
Corn Pudding:
1 cup vegetable stock
3 ears corn, shucked, silk removed and kernels shaved off the cob
1 tablespoon unsalted butter, at room temperature
1/2 tablespoon creme fraiche, at room temperature
Yellowedge Gulf Grouper:
Four 6-ounce fillets Yellowedge gulf grouper, skin and bones removed
2 ounces blended vegetable and olive oil
1 ounce unsalted butter, at room temperature
4 sprigs fresh thyme
Petite greens, for serving

Steps:

  • For the vinaigrette: Heat a medium skillet, and then add the mushrooms and saute in the olive oil, sprinkling with salt and black pepper, until wilted, 1 to 2 minutes. Add the thyme, garlic and shallots and saute for 1 more minute. Reduce the heat and add the sherry vinegar and honey. Stir to combine. Taste and add more salt and pepper, if needed, and reserve for plating.
  • For the corn pudding: Puree the stock and corn in a high-speed blender. Strain the corn puree through a fine strainer, and then pour into a double boiler over moderate heat. Season with salt and pepper. Stir often; the mixture will begin to thicken from the natural starch in the corn. Cook until desired consistency, and then stir in the butter and creme fraiche. Taste and adjust the salt and pepper, if needed, and keep warm.
  • For the grouper: Preheat a large nonstick skillet over medium-high heat. Sprinkle the fillets with salt and pepper. Add the oil to the skillet, and then carefully add the grouper fillets; do not overcrowd the skillet. Sear the fish well, while adding the butter and fresh thyme. Cook until the grouper is well seared and just cooked through, 3 minutes per side. Remove from the skillet.
  • To serve, plate 4 ounces of corn pudding into each of four 12-inch shallow bowls. Place a warm grouper fillet in the center, and garnish with the mushroom vinaigrette and petite greens. Serve and enjoy!

Italian seasoning

1 boneless pork butt (approximately 7 pounds)
50 fluid ounces coconut milk (recommended: Chaokoh)
250 grams yellow curry paste (recommended: Mae Ploy)
5 tablespoons finely chopped ginger
5 tablespoons finely chopped garlic
1 tablespoon Chinese fermented black beans, rinsed and chopped
1/4 cup sesame oil
8 to 10 kaffir lime leaves
1/4 bunch fresh cilantro
1/4 jalapeno pepper
4 cloves garlic
2 cups basmati rice
3 tablespoons butter
Salt and pepper
1 jalapeno pepper
1 poblano pepper
1 tablespoon cumin seeds
1 red onion
6 to 8 tomatoes
1/2 bunch fresh cilantro
2 limes, juiced
Salt and pepper
Corn tortillas, for serving

Steps:

  • For the pork: Preheat the oven to 350 degrees F. Rub the spices into the pork and roast for about 8 hours. Let cool. Pull apart and discard any fat. Put the pork pieces in a large pot and add the coconut milk.
  • Meanwhile, for the curry sauce: Saute the curry paste, ginger, garlic, and black beans in sesame oil until fragrant, 3 to 4 minutes. Add this mixture to the pot with the pork and coconut milk. Add the lime leaves. Braise on low heat for 1 to 2 hours.
  • For the rice: Blend the cilantro, jalapeno, garlic, and 1 cup of water. Put this mixture in a pot on the stove. Add the basmati rice. Add 2 1/2 cups water. Bring to a boil, and then simmer, covered, until the rice absorbs the liquid, 20 to 25 minutes. When done, add the butter and salt and pepper, to taste.
  • For the salsa: Roast the jalapeno and poblano peppers, peel, and remove the seeds. Toast the cumin seeds and then grind. Dice the tomatoes and red onion and mix together in a bowl with the other salsa ingredients.
  • Heat the corn tortillas on a griddle. Plate the rice, put the pork with sauce on top, and finish with salsa and tortillas.

1/4 cup butter, at room temperature
1/2 teaspoon chopped fresh rosemary

0.5 (5 1/4 ounce) package garlic & herb spreadable cheese, at room temperature
2 tablespoons sour cream
2 tablespoons drained sun-dried tomatoes packed in oil, chopped

Steps:

  • Prepare grill for direct-heat cooking.
  • Gently pull back husk from each ear of corn without detaching; remove silk.
  • Replace husk strips, one piece at a time, over corn.
  • Tie kitchen string around each ear to secure husks.
  • Soak corn in cold water 15 minutes to prevent husks from burning on grill; drain well.

3/4 cup popcorn kernels
1 stick (8 tablespoons) unsalted butter, melted
3/4 cup finely grated Parmesan
1 tablespoon dried Italian seasoning
Pinch crushed red pepper flakes
Seasoned salt, such as Lawry's
1/2 cup sugar
1 teaspoon ground cinnamon
Kosher salt
2 tablespoons caramel syrup, such as Monin's

Steps:

  • Put the oil in a large pot and add the popcorn kernels. Cover the pot with a tight-fitting lid and heat over medium heat. Once the popping starts, shake the pot occasionally until the popping subsides. Transfer the popcorn to 2 large bowls, divide the melted butter between them and toss to coat.
  • For the Parmesan herb popcorn: Combine the Parmesan, Italian seasoning, red pepper flakes and a sprinkle of seasoned salt in a small bowl. Sprinkle on top of 1 of the bowls of buttered popcorn and toss to coat. Makes: 15 cups
