2 tablespoons Sriracha sauce ((more if you like it really spicy!))
2 tablespoons olive oil
1 1/2 tablespoons pure maple syrup
1 1/2 tablespoons lemon juice
½ teaspoon garlic salt
2 pounds fresh shrimp ((cleaned and deveined))

Steps:

  • In a large bowl, combine the first five ingredients and mix well.
  • Place the shrimp in the bowl and toss to coat.
  • Cover and refrigerate and let marinate for about an hour.
  • When ready to cook, preheat the grill to medium-high.
  • Skewer the shrimp or prepare a grill pan, however you prefer to grill smaller items.
  • Cook the shrimp 2-3 minutes on each side, until the shrimp become pink and opaque.
  • If desired, use the sauce left after marinating to baste the shrimp while cooking.

⅓ cup chili garlic sauce
⅓ cup honey
1 pound medium shrimp, peeled and deveined
½ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Preheat the grill to medium-high heat.
  • In a large bowl, combine the chili garlic sauce, honey, salt, and pepper. Reserve about ¼ of the mixture to brush onto the shrimp after cooking. Add the shrimp to the remaining marinade and toss to coat evenly.
  • Place the shrimp on the hot grill. Skewers or a grill basket may also be used for ease of cooking.
  • Cook the shrimp for 2 to 3 minutes per side, until opaque and cooked through.
  • Remove the shrimp from the grill and brush with the reserved marinade (that has not touched raw shrimp). Garnish with fresh cilantro.
  • Serve immediately with lime wedges for squeezing over the top.

1 cup guava jelly or 1 cup apple jelly
2 garlic cloves, finely chopped
2 limes, juice of
1 tablespoon Worcestershire sauce
1 jalapeno pepper, seeded and finely chopped
1/4 teaspoon red pepper flakes
2 lbs shrimp, raw, large, peeled and deveined
1/4 teaspoon salt
10 bamboo skewers

Steps:

  • Soak bamboo skewers in water for at least 30 minutes.
  • In a small saucepan combine jelly, garlic, lime juice, Worcestershire, jalapeno and chilies. Cook over medium heat until jelly melts.
  • Thread shrimp onto skewers, about 4 per skewer if using large shrimp.
  • Brush both sides of shrimp with jelly mixture and place on a tray to marinate for 30 minutes.
  • Preheat grill on high and sprinkle shrimp with salt on both sides.
  • Grill shrimp for 3 minutes per side, brushing with marinade again before turning. Reduce time for smaller shrimp.
  • Place remaining sauce in a serving dish for dipping.

1/4 cup brown sugar
1/4 cup rice wine vinegar
1/4 cup lime juice
1/2 cup canola oil
1 lime, zested
2 cloves garlic, smashed

1/4 cup freshly chopped basil leaves
Pinch salt
1 1/2 pounds large shrimp (16/20 per pound), peeled and deveined
2 limes, cut into wedges
Gina's Chili Cocktail Sauce, for dipping, recipe follows
1 teaspoon sweet chili sauce
1 cup peach preserves
4 tablespoons hot Chinese mustard

Steps:

  • Whisk all the marinade ingredients together in a small bowl. Add the shrimp to a large resealable plastic bag and pour in the marinade. Refrigerate for 20 minutes.
  • Preheat the grill to medium-high heat.
  • Oil the grill rack with a clean kitchen towel dipped in olive oil.
  • Skewer the shrimp, adding 1 or 2 wedges of lime onto each skewer. Grill for 1 1/2 minutes on each side. Remove from grill to a platter and serve with the Chili Cocktail Sauce.

10 raw tiger shrimp, shelled and deveined
2 limes, juice of
1/2 fresh jalapeno, seeded and finely chopped
2 garlic cloves, through a garlic press
1/3 cup extra virgin olive oil
4 Splenda sugar substitute
1 pinch salt
1 pinch pepper
1 pinch chili powder

Steps:

  • In a medium bowl, juice 2 limes, seed and finely mince 1/2 jalapeno and add to lime juice, add pressed garlic, 4 packets of Splenda, salt, pepper, chili powder and oil. Whisk until Splenda is dissolved.
  • Shell and rinse tiger shrimp, drop into bowl, mix so every shrimp is coated and then lightly press all shrimp into the marinade. cover tightly and refrigerate for 15-20 minutes.

This is so quick and easy, and makes a great family style dinner. For a dipping sauce, I don't think one is needed, but a few of my friends like it when I serve it with a garlic orange butter sauce. I simply melt some butter (1/2 cup), minced garlic (1 teaspoon), and some fresh orange juice (1 tablespoon). For my sides - a fresh creamy coleslaw and some chili fries. A few potatoes cut in wedges and mixed with some oil and seasoning makes for great healthy fries compared to fried or even store bought ones.

  • Marinade -- I just add all the ingredients to a large baggie, close and shake. Add your shrimp and marinade at least 1 hour, up to 2 but no more. The chili spice is very strong.
  • Grill -- A couple of options. You can can use a grill pan inside, or an outside grill, broiler, you can also pan saute. But if you pan saute, cook on a fairly high heat and quickly so they get a nice brown color. Just cook until they start to curl and begin to turn pink. They take only a couple of minutes, and remember, once you remove the shrimp from the heat, they will continue to cook for another minute. You don't want tough over cooked shrimp.
  • Serve -- Just serve on a big platter with your favorite sides. If you want the dipping sauce -- just heat up the butter, orange juice and garlic in the microwave and serve. That easy.
