2 medium butternut squash, peeled and cut into chunks
1/2 cup sugar
2 large eggs
1/4 cup milk
2 tablespoons butter
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Place squash in a large saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 12-16 minutes or until tender. Drain., In a small bowl, beat squash until smooth. Add the remaining ingredients; beat well. Spoon into a 1-1/2-qt. baking dish coated with cooking spray. Cover and bake at 350° for 30-35 minutes or until a thermometer inserted in the center reads 160°.

2 tbsp olive oil
1 onion, sliced
2 garlic cloves, crushed
1 tsp cumin seeds
1 tbsp paprika
225g sweet potato, cubed
1 red pepper, deseeded and chopped
1 butternut squash (about 550g/1lb 4oz), peeled and chopped
400g can chopped tomato
200ml red wine
300ml vegetable stock
75g bulgur wheat
4 spoonfuls Greek yogurt
a little grated vegetarian cheddar cheese

Steps:

  • In a large pan, heat the olive oil, then cook onion and garlic for 5-7 mins until the onion is softened. Add the cumin seeds and paprika, then cook for a further 2 mins. Stir in the sweet potato, red pepper and butternut squash and toss with the onion and spices for 2 mins.
  • Pour in the tomatoes, red wine and vegetable stock, season, then simmer gently for 15 mins. Stir in the bulgur wheat, cover with a lid, then simmer for 15 mins more until the vegetables are tender, the bulgur wheat is cooked and the liquid has been absorbed.
  • Serve in bowls topped with a spoonful of Greek-style yogurt and some grated vegetarian cheddar.

Steps:

  • Heat oven to 375ºF.
  • Cut squash in half; remove seeds. Place squash halves, cut sides down, in 15x10x1-inch pan. Add water. Bake 40 min. or until squash is tender.
  • Scoop squash flesh into medium bowl; mash well. Add cream cheese, sugar and pepper; mix well. Spoon into 3-qt. casserole sprayed with cooking spray.
  • Heat broiler. Top squash mixture with marshmallows; broil, 6 inches from heat, 1 to 2 min. or until golden brown.

2 tablespoons extra virgin olive oil (divided)
1 large (3 1/2 pound) butternut squash (peeled, seeded, and diced into 3/4-inch cubes, divided (about 9 1/2 cups))
2 teaspoons minced fresh thyme (divided (rosemary works as well))
2 cloves minced garlic (divided (about 2 tablespoons))
1/2 teaspoon kosher salt (divided)
1/4 teaspoon black pepper (divided)
12 ounces kale* (tough stems removed and chopped or torn into bite-sized pieces, divided (I used curly kale))
1 medium yellow onion (thinly sliced, divided)
1 cup low sodium vegetable stock or chicken stock (divided)
1 cup fresh breadcrumbs** (or 3/4 cup panko breadcrumbs)
1/2 cup freshly grated Parmesan cheese
1 tablespoon minced fresh sage
1/2 teaspoon kosher salt
1/4 teaspoon ground nutmeg
2 tablespoons melted unsalted butter

Steps:

  • Preheat the oven to 375 degrees F. Generously grease a shallow 9x13-inch casserole dish or similar 3-quart baking dish with non-stick cooking spray.
  • Prepare the filling in two batches: Heat 1 tablespoon of the olive oil in a large, deep skillet or Dutch oven over medium heat. Add half of the butternut squash, ½ tablespoon of the rosemary, ¼ teaspoon salt, and 1/8 teaspoon pepper. Sauté until the squash is beginning to brown, about 3 minutes. The squash will still be too firm to eat.
  • Next, add half of the kale, half of the onions, and half of the garlic. Cook until the kale and onions begin to soften, about 4 minutes.
  • Add the 1/2 cup of the chicken stock, stir, and let cook 1 minute so that the stock reduces slightly.
  • Transfer the mixture to the prepared baking dish and with a spoon, prod it into a relatively even layer.
  • Heat the remaining tablespoon olive oil in the skillet, then repeat the above steps with the remaining half of each of the ingredients. Transfer the rest of the filling to the casserole dish. Cover the dish with aluminum foil and bake for 30 to 35 minutes or until the squash is soft when pierced with a sharp knife.
  • While the squash bakes, prepare the topping: In a small bowl, combine the breadcrumbs, Parmesan, sage, nutmeg, and salt. Pour the melted butter over the top. Stir to combine.
  • Remove the casserole from the oven, remove the foil, then sprinkle the top evenly with the breadcrumb mixture.
  • Reduce the oven temperature to 350 degrees F, return the dish to the oven, then bake uncovered, until the bread crumbs are golden, about 20 minutes. Serve warm.

This favorite squash recipe came from a family friend. You can use acorn squash, but my family thinks it tastes best with fresh butternut squash from the garden! The only other way my kids will eat squash is when it is full of butter and brown sugar. This is a flavorful recipe with little prep once the squash is cooked.

1 tablespoon sugar (can substitute with Splenda)
1/2 cup mayonnaise
1/2 cup onion, chopped
1/4 cup green pepper, chopped

1 egg, beaten
1/2 cup grated cheddar cheese
1/4 cup melted margarine
salt & pepper
6 ounces of herb flavored croutons, set aside for topping

Steps:

  • Cook squash and drain. (I actually cut the butternut squash in half and bake it in the oven on a cookie sheet if time allows; cover with tinfoil to keep it moist.).
  • Mix other ingredients together and gently fold in cooked squash.
  • Pour into greased 9" x 13" casserole dish.
  • Top with crushed cracker crumbs or croutons which have been buttered with cooking oil (use Herbed or Italian seasoned croutons for more flavor).
  • Bake 45 minute @ 350 degrees.

3.5 pounds butternut squash (peeled and chopped into ¾ inch cubes)
2 tablespoons olive oil
5-6 slices thick-cut bacon (chopped)
1 large onion (diced)
4 cloves garlic (minced)
¾ cup chopped pecans
2 tablespoons fresh chopped sage
1 tablespoon fresh thyme leaves (1 tsp dried thyme)
1 sleeve saltine crackers (about 36 crackers)
1 cup half & half
2 large eggs
¼ cup grated parmesan cheese
Salt and pepper

Steps:

  • Preheat the oven to 400°F. Set out a large rimmed baking sheet, a 9 x 13 inch baking dish, and a large skillet. Grease the baking dish and set aside.
  • Place the chopped butternut squash onto the rimmed baking sheet. Drizzle with olive oil. Then salt and pepper liberally. (This is the only time salt is added to the recipe due to the use of bacon, saltine crackers, and Parmesan cheese, so be generous.)
  • Spread the cubed butternut squash out into a single layer. Roast in the oven for 30+ minutes until the squash is soft and toasted around the edges.
  • Meanwhile, place the skillet over medium heat. Brown the chopped bacon in the skillet. Once crispy, add in the onions and garlic. Sauté for 3 to 5 minutes to soften the onions. Then stir in the chopped pecans, sage, and thyme. Sauté another 1 to 2 minutes, then turn off the heat.
  • Crush the sleeve of saltine crackers with your hands. In a small mixing bowl whisk the half-and-half and eggs together.
  • Once the butternut squash comes out of the oven, move it to the greased baking dish. Add in the bacon and onion mixture, and the crushed crackers. Toss well to mix, then spread out and an even layer.
  • Pour the egg mixture evenly over the casserole. Sprinkle the Parmesan cheese evenly over the top.
  • Bake for 20 to 25 minutes until the top is crispy. Serve warm.
